Preheat the oil at 320F degrees while you make the churro batter. You can use a candy thermometer to check the temperature.

Place the water, vanilla extract, salt, and butter in a saucepan at medium- high heat.

Once it comes to a rolling boil, stir in the flour all at once. It is very important that the water is boiling to ensure that the dough will render crispy churros.

Mix the dough vigorously using a wooden spoon or spatula. You have to do this step very quickly.

Remove the saucepan from the heat, wait about a minute, then add the egg. Keep mixing until the egg is completely integrated into the dough (you can use a mixer for this step). In the beginning, the dough will want to separate after adding the egg, but keep mixing until the ingredients are well combined and you have a smooth and soft dough that separates from the bottom of the pot. This step will take a few minutes.

Place the dough in the pastry bag fitted with a star-shaped tip. Make sure there aren’t any bubbles of air in the dough while you place it inside the bag.

Pipe 6-inch strips of dough on a prepared tray and then fry them (see notes).  You can also pipe the strips of dough directly into the hot oil, cutting them with your kitchen scissors. The oil will start bubbling when you add the raw churro, and at this point you must not touch the oil or the churro, to avoid having an explosion.

Fry the churros for about 2 to 2.5 minutes in hot oil ( 320F)&nbsp; until golden brown (in total it should take 4-5 minutes&nbsp;to cook each churro), and then turn the churros to have an even crispiness and golden color.

Once they are golden, remove from the heat, place on the paper towel to drain for a few seconds, and then roll in the sugar.

Combine water, butter, salt, and ¼ teaspoon cinnamon in 1 ½-quart saucepan over medium heat. Bring pot to rolling boil. Reduce heat to low.

Add flour and stir vigorously until mix forms a ball. Remove from heat and let rest for 5-7 min.

Add eggs, one at a time, and stir until combined. Set aside.

Heat oil in medium skillet or 1-quart saucepan over medium-high heat or until temperature reaches 350˚F.

Spoon dough into piping bag fitted with large star tip. Pipe 1-inch strip of dough over saucepan, cut with knife, and drop into hot oil. Repeat until churro bites fill saucepan with room to fry.

Fry churro bites until golden brown. Remove with slotted spoon or mesh spider strainer.

Drain churro bites on paper towel.

Mix sugar and ½ teaspoon cinnamon in medium bowl. Toss in churro bites until coated. Place on serving plate and serve with favorite dipping sauce.

In a plate add the sugar and cinnamon and give a good mix. keep it aside.

To make the cinnamon sugar

In a large saucepan place butter, sugar, water, cinnamon on medium-high heat and bring it to a boil.

Once it comes to a boil reduce heat to medium-low and add the flour slowly and stir it constantly with a spatula.

Stir it until the pastry dough comes together and it is smooth with no lumps.

Now transfer it in a large bowl and let it cool for 5-6 minutes or until warm to touch.

Meanwhile heat oil for frying in skillet over medium heat. The oil is of right temperature when a small piece of churro dough when dropped into oil comes up immediately.

Then break in one egg at a time and with an electric hand whisk, mix it allowing to incorporate the egg before adding the next one.

Blend until mixture comes together and is smooth (it will separate at first but keep mixing it will come together).

Now spoon the dough into pastry bag fitted with star tip. (I used wilton 1M)

To make the star shaped churro, squeeze a heart shaped dough on a parchment paper.

Then slowly lift it with a flat spatula and drop it in the hot oil. or carefully pipe the mixture into preheated oil, into about 5 to 6inch lengths, cut end with scissors. DO not over crowd the pan.

Let them fry until golden brown, about 3-4 minutes. Transfer it to paper towels for a minute.

Then transfer them cinnamon sugar mixture and roll them so they are evenly coat.

Serve them hot with chocolate sauce or caramel.

TO make the churros

The topping possibilities for this churros recipe is endless. Instead of dropping the churros in cinnamon sugar, you can drop them in vanilla sugar, slather the churros with a couple spoonfuls of nutella, or dip the ends of each mini churro in melted chocolate. So heavenly!

Cinnamon sugar coating: Combine sugar and cinnamon in a shallow bowl, set aside.

Batter: Mix flour, baking powder and salt in a bowl. Add oil and water and mix until just combined - it should be a thick, gummy batter, like a wet sticky dough, not thin and watery.

Piping bag: Transfer dough into a piping bag with a 8mm / 1/3&quot; star tip nozzle. Set aside while oil heats.

Heat oil: Heat 5cm / 2&quot; oil over medium high in a small pot, wok or small but deep skillet (Note 3) to 170°C/340°F, or until it takes 20 seconds for a small cube of bread to turn golden.

Pipe &amp; snip: Pipe 15cm / 6&quot; lengths of dough into the oil, snipping with scissors (snip close to oil surface to avoid splash). Do 3 to 4 per batch, makes 10 to 12 in total.

Cook: Cook for 2-3 minutes or until golden and crisp, rolling occasionally.

Drain: Remove onto paper towel lined plate to drain. Then roll in sugar. Serve hot with Chocolate Sauce!

Add chocolate and let sit 3 minutes, then stir until melted and smooth (if desired, use an immersion blender to get it extra-smooth and silky).&nbsp;

Heat vegetable oil in a medium saucepan on medium to 350°F on a candy thermometer. Meanwhile, transfer hot churro batter to a large bowl. Using an electric mixer on low, beat 1 minute to cool slightly. Beat in egg (dough will be smooth and shiny). Transfer batter to a pastry bag fitted with a large star tip. Working in 4 batches, squeeze 3- to 4-inch lengths of batter into oil, using scissors to snip off ends. Fry until golden brown, about 4 minutes, then transfer to a wire rack set over a paper towel.&nbsp;

In a small bowl, combine ground cinnamon and remaining 1/2 cup sugar. When churros are cool enough to handle, coat in cinnamon sugar. Serve with chocolate-caramel sauce for dipping.
