This classic Hibachi restaurant favorite is a light and healthy soup to soothe the soul.

Japanese Clear Soup Recipe

sesame oil ((or peanut oil))

chicken broth

beef broth

water

onion,

garlic, (peeled and smashed)

carrots,

ginger, (sliced)

scallions, (chopped)

button mushrooms, (sliced thin)

salt

Place a large 8-quart stock pot over medium-high heat. Add the oil and place the onion, garlic, carrots, and ginger in the pot. Sear the veggies on all sides to caramelize, making sure not to burn the garlic.

Pour in the chicken broth, beef broth, and water. Bring to a boil. Lower the heat to a low boil and simmer for at least one hour.

Use a skimmer to remove the vegetables from the broth. Taste, then salt as needed.

To serve: ladle hot broth into bowls and sprinkle chopped scallion and sliced mushrooms over the top.

Root vegetables (*see Notes and Post)

Water

Bay Leaf (or 2 small)

Parsley

Teaspoon Nutmeg

Juniper Berries

Black Peppercorn

Lovage, Allspice or Celery Seeds (optional)

Salt (to taste)

prep vegetables

Rinse your root vegetables to get rid of impurities. Cut them into chunks and slice onion.

saute onion

Heat up a large soup pot with the oil and saute onion slices.

stir in veggies

Stir in the vegetables and saute for a short time to bring out the flavors.

add water

Add the water and season with bay leaves, nutmeg, black peppercorn, and juniper berries. You can also season with lovage, celery seeds, and allspice seeds if you have any.

bring to a boil

Bring the soup to a boil, and give it a quick stir. Keep on a steady medium heat setting.

cook and reduce

Cook and reduce soup, it will infuse all the more over time. This can take 60-80 mins.

season

Season with salt when it&#039;s done cooking.

strain

Strain soup with a fine sieve or cheesecloth. We use the veggies in another dish (vegetable mash, casserole dish,...)

heat up again

Bring the strained soup back to the heat. Keep it hot until serving time.

serve

Serve as is or with dumplings or noodles (see post for ideas).

Vegetable Clear Soup

Roasted Seaweed Soup (Nori Sui) is a clear soup with torn roasted seaweed and very finely julienned ginger (hairshōga). Roasted Seaweed Soup (Nori Sui)

yaki nori ((roasted seaweed sheets, note 1))

tbsp harishōga

dashi stock ((note 2))

soy sauce ((or normal soy sauce))

tsp cooking sake

Put all the Broth ingredients in a pot and bring it to a boil.

Take one yaki nori sheet at a time, put it through in a quick motion directly over the heat of an electric cooktop, or over a heated large frying pan on a gas cooktop that is set to high (note 3). Do this several times on both sides until the sheet becomes crisp.

Fold the nori sheets into quarters (so that you can handle them easily) and tear the sheets into small bite-size pieces - about 2.5cm/1” (note 4).

Put the nori pieces in a serving bowl and place harishōga on it.

Pour the hot broth over the nori pieces and serve immediately.

Prepare Ingredients

Begin by gathering, cleaning, and chopping all the vegetables needed for the soup.

Butter, Onion, Leeks and Carrots

Once you have finely chopped veggies ready, start the cooking process to saute butter, onions, leeks, and carrots, forming a flavorful base for the soup.

Zucchini, Broccoli, Peas and Water

Add the vegetables such as zucchini, broccoli, green peas, water, vegetable stock or broth to the pot, allowing the vegetables to simmer and infuse the liquid with their flavors.

Herbs and Salt

Enhance the taste by adding a pinch of salt and pepper or salt with dry herbs, seasoning the soup with a delightful blend of flavors. In the middle, you can also add some fresh herbs tight together. Cook for 15 minutes.
