In a large bowl combine confectioners sugar with coconut  and condensed milk.

Shape the mixture into 1-inch balls and place onto a pan lined with wax paper. Place in refrigerator until firm.

In a microwave-safe glass bowl, melt the chocolate chips with shortening, removing to stir once or twice until smooth.

Dip each ball into the chocolate allowing the excess chocolate to drip off. Place the chocolate balls onto the waxed paper; let stand until set. Store in refrigerator.

These Chocolate Coconut Balls are a delicious and easy no bake dessert made with sweetened condensed milk and shredded coconut dipped in a chocolate layer. They are a wonderful party dessert for any special occasion and a must-make for the holiday season.

Line a large baking sheet with parchment paper.

In a large mixing bowl, add the coconut and powdered sugar and mix together thoroughly.

Next, add the sweetened condensed milk and 2 teaspoons of the melted coconut oil and stir to combine well.

Using a cookie scoop or spoon, scoop 1 tablespoon sized portions and gently roll them into smooth balls and place them on the prepared baking sheet .

Once all the coconut balls are rolled, place the cookie sheet in the freezer for 30 minutes to allow them to set.

In a microwave safe bowl, add the chocolate chips, chocolate bark, and the remaining 2 teaspoons coconut oil and microwave for 30 seconds. Stir and repeat for another 30 seconds, remove and stir again. Repeat one more 30-second interval then remove and stir until chocolate is completely melted. Be very careful not to overheat the chocolate or it will seize and be unusable.

Dip each coconut truffle into the melted chocolate with a fork. Hold it over the bowl and allow any excess chocolate to drip back into the bowl.

Place the truffle back on lined baking sheet and continue dipping the remaining truffles.

Place the sheet back into the refrigerator and allow them to chill for at least 15 minutes until the chocolate has set completely.

These little toasty coconut balls are the perfect addition to any cookie platter, especially at the holidays. OR are great for gifting!

Toasted Coconut Balls

16-ounces unsweetened desiccated coconut, divided

(14- ounce) can sweetened condensed milk

Divide the coconut in half. Working in batches add half the coconut into a large nonstick skillet. Heat over medium-low heat until golden and toasted, stirring frequently. Once the coconut is toasted, transfer it to a large baking sheet to cool. Repeat with the remaining coconut.

When the coconut is cooled, reserve 1/3 cup of the coconut and place in a small bowl for rolling. Set aside.

In a large bowl combine the remaining coconut, sweetened condensed milk, and brown sugar and stir to combine evenly.

Using a small cookie scoop (1 tablespoon) sized cookie scoop, portion out the mixture and form into a tight ball. Roll the coconut ball in the reserved toasted coconut and set on a parchment lined sheet to set. Repeat with the remaining mixture.

Allow the balls to set up at room temperature for an hour and then transfer to an airtight container to store.

Bala Baiana (Brazilian Coconut Bon Bons)

In a medium saucepan, combine condensed milk, desiccated coconut, and butter. Cook over medium heat, stirring continuously for 10 minutes, until the mixture thickens and begins to pull away from the sides of the pan.

Transfer the mixture to a bowl and refrigerate for 30 minutes. Once chilled, use a ½ tablespoon measure to form uniform balls. Lightly oil your hands to prevent sticking while rolling.

Prepare the caramel by combining sugar, water, and lemon juice in a small saucepan. Heat over medium heat until the mixture begins to simmer and turns a golden amber color.

Reduce heat to low to prevent burning. Test the caramel&#8217;s readiness by dropping a small amount into cold water &#8211; it should form delicate, glass-like threads.

Carefully dip each coconut ball into the caramel, allowing excess to drip off. Let the candies set for 2-3 minutes on parchment paper. Once cooled, the Bala Baiana are ready to serve and enjoy!
