These juicy Thai Coconut Mussels are quickly cooked in coconut milk and flavorful Thai spices. Dinner doesn't get any easier than this delicious recipe. I love to serve some crispy baked fries on the side for a Thai-fusion Moules Frites.

Ridiculously Delicious Thai Coconut Mussels

coconut oil

ginger,

garlic cloves, sliced

lemongrass stalks, sliced

coconut milk

fish sauce

Thai red chilis

juice from 1 lime

Heat the coconut oil in a large pot over medium-high heat. Add the ginger, garlic, and lemongrass and cook for 1 minute. Add the coconut milk, fish sauce, chilis, and lime juice and bring the pot to a boil.

When the coconut milk is boiling, add the mussels. Cover the pot for 1 minute. After a minute, remove the lid and take out any shells that have opened. Continue to remove the mussels as they open. If any of the mussels are still closed after 6 or 7 minutes, discard them.

Pour the sauce over the cooked mussels and serve right away.

Coconut Curry Mussels

mussels

tbsp flour (for cleaning mussels)

shallot

garlic (chopped finely)

tsp ginger

tbsp red curry paste

brown sugar

cilantro (for garnish)

lime

Begin by cleaning your mussels and Scrub each mussel and rinse well.

Pull the beard off the mussel and place all cleaned mussels in a bowl filled with cold water.

When all mussels are cleaned, sprinkle flour and toss gently.

Then rinse the mussels and place in cold water or in a large bowl of ice until you're ready to cook them.

In a medium sized pot, on medium heat, add coconut oil and shallot. Saute until softened, then add ginger and garlic and cook for another minute.

Stir in curry paste and pour in coconut milk and stir everything together. Add brown sugar and fish sauce and give one more stir.

Add in the mussels and stir one more time. Place a lid on the pot and cook until the mussels just open up, about 5 minutes.

Once done, plate mussels and all its broth into large bowls and garnish with fresh herbs and lime.
