Easy, delicious and healthy, these coconut snowballs are packed full of nutritious ingredients. They’re also nut free making them perfect for school lunch boxes. I love to make these at Christmas time as they look a bit like little snowballs but they’re equally as delicious all year round.

Nut Free Coconut Snowballs

200 g dates* (chopped)

g cranberries

g pumpkin and sunflower seeds

cinnamon

ginger

g desiccated coconut

Nut free coconut snowballs

Place 200g chopped dates*, 75g dried cranberries, 100g mixed seeds, 1 tsp ground ginger and 1 tsp ground cinnamon in a high speed blender or food processor.

Pulse until the mixture breaks down and comes together.

Use your hands to roll into balls - you may wish to lightly oil your hands to stop it from sticking.

Roll each ball in 30g desiccated coconut until covered.

Chill for at least 30 minutes then store in the fridge or freezer.

Easy, no bake coconut snowballs recipe made with only 3 ingredients: raw coconut, coconut cream and nectar (the nuts are optional).&nbsp;

No Bake Coconut Snowballs

coconut (-unsweetened)

tbsp coconut nectar

tbsp coconut cream

almonds

In a small bowl combine 1 cup of coconut, maple syrup and coconut cream until a soft dough forms. Use your hands and shape the dough into 9 golf ball size balls. (If you feel the dough is too dry feel free to add an extra drizzle of coconut cream)

Push an almond or hazelnut into the center of each coconut ball and shape it back into a round sphere. Toss into the remaining coconut until coated all over. Set on a plate and refrigerate for a couple of hours before serving.&nbsp;
