Coffee Cookies

All purpose flour

Cocoa powder

Cornstarch / cornflour

Instant coffee powder

ml Hot water

unsalted butter

Combine the hot water and coffee together. Mix well and set aside

In another bowl, combine the flour, cocoa powder and corn starch. Mix well and set aside

Next, take a bigger bowl, add the butter and sugar, whisk until smooth. Add the egg yolk and continue whisking. Add the coffee mixture to it and whisk

Now, fold in the flour mixture. It should form a smooth dough. If not, you may have to add in a few more tablespoons of flour (only if needed) Cling wrap the bowl and refrigerate for 30 mins

Once chilled, take small portions of the dough and form coffee bean-like shapes just like demonstrated in the video. Place the cookies on a baking tray lined with parchment paper and freeze for 5 mins

Lastly, bake the cookies in a preheated oven at 160 degrees C for 10 to 15 mins

I made a mocha margaret with a soft texture with a subtle coffee scent. Almond powder and peanut butter are added to the flavor, and the minced peanuts are chewy in the middle, so the texture is good. The texture is really crispy on the outside and very moist on the inside, just like margaritas. When making a pattern on the upper side, I think that the center line first and then the pattern on both sides can make a good balance. If you put it in the freezer for about 10 minutes before baking and then bake it, it doesn't spread too much and comes out better in a pretty shape. Enjoy watching~♬~

Our cream cheese coffee cookies made with real freeze dried coffee is your excuse to eat some cookies 1st thing in the morning!

Cream Cheese Coffee Cookies

Cup Almond Flour

Cup Sweetener (monkfruit erythritol blend

Cup Butter

tsp Hot Water

tbsp Instant Coffee (we used Starbucks Premium Instant Coffee)

oz Cream Cheese (softened)

tsp Vanilla Extract

Gather all the ingredients.

Preheat oven to 325F.

In a small Teflon fry pan, add butter on medium-low heat.  Melt and continuously mix the butter until color turns amber/light brown, about 3-4 minutes.  Once browned, remove from heat and let it cool down.

In a small mixing bowl, combine 2 tsp of hot water (MUST be hot) with 2 tbsp of Instant Coffee and mix well until most of the coffee crystals are dissolved.   Run liquid through a strainer and set aside.

In a large mixing bowl, combine Almond Flour, concentrated coffee from 4), sweetener, cream cheese, vanilla extract and browned butter.  Mix well for about 1 minute with a hand/stand mixer.  Note - make sure browned butter is at room temperature when pouring otherwise it will &#39;cook&#39; the batter.

Roll the dough into 1 inch size balls and place on a silicone baking mat or greased baking sheet.

Press down the dough balls using your palm of your hand to roughly 1/4 inch thickness.

Bake at 325 F for 16-20 minutes (ours took 16 minutes) or until bottom edges start to slightly brown. Once done, wait at least 10 minutes for cookie to cool down prior to handling. We prefer enjoying the cookies once they have completely cooled down and hardened, which takes about 1 hour, but it's up to you!

These coffee cookies are warmly spiced, gooey and delicious!  The espresso powder adds such a rich, deep flavor.  This recipe is quick, easy, and incredibly flavorful!

First, preheat oven to 375 degrees Fahrenheit.  Line a baking pan with parchment paper.

In the bowl of a stand mixer, add cold butter, white sugar and brown sugar.  Beat for 2 minutes or until no clumps of butter remain.

Then, add in egg and vanilla extract.  Beat to combine.

Add in flour, baking soda, sea salt and espresso powder.  Stir until a thick dough is formed.

Fold in chocolate chips.

Use an ice cream scooper to scoop large balls of dough onto lined pan.  Leave at least 3 inches of space between each ball of dough.

Bake for 9 to 10 minutes or until cookies are just barely set in the middle.

Finally, remove from oven.  Allow cookies to cool on pan for 10 minutes.  Then, carefully remove to a cooling rack.  Sprinkle with sea salt if desired.

Preheat your oven to 350°F (175°C). Line cookie sheets with parchment paper.

Preheat the Oven:

Prepare the Flax Egg:

In a large bowl, whisk together the flour, coconut sugar, instant espresso powder, cornstarch, baking soda, and sea salt.

Combine Dry Ingredients:

Pour in the melted coconut butter, prepared flax egg, and vanilla extract into the flour mixture. Mix until a soft dough forms.

Add Wet Ingredients:

Use a cookie scoop to scoop out portions of dough onto the prepared baking sheets, leaving space between each cookie.

Shape the Cookies:

Bake in the preheated oven for approximately 13-15 minutes or until the edges are golden brown. Keep a close eye to prevent over-baking for a chewy texture.

Allow the cookies to cool at room temperature on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Are you a coffee lover then these South African coffee biscuits or cookies filled with coffee fudge filling will be your new favorite sweet

South African Coffee Biscuits

all-purpose flour

+1 tbsp (125 grams) golden syrup or honey

bicarbonate of soda

¼ cup strong brewed black coffee

vanilla extract

In a medium pan over medium heat, add butter, sugar, and golden syrup or honey if that is what you are using, and stir until the sugar dissolv. Take the mixture off the heat. When the syrup is cool to the touch, stir in the vanilla extract and allow it to cool completely.

In a separate bowl, combine half of the coffee and the bicarbonate of soda, add the this mixture and the remaining coffee to the syrup. Mix to combine. Then add in the flour and mix to form a soft dough. Cover the dough and leave it overnight to develop the flavor.

Follow the cookie press manufacturer’s directions to fit your cookie press with a disc like the one shown in the recipe or any disc of your choice. Scrape some of the dough into your cookie press. Hold the cookie press perpendicular to the lined baking sheet and press out the biscuit or cookies 2 inches apart. You can roll the dough and use a rectangle cookie cutter to cut the biscuit or use free-hand cutting.

Bake the biscuit or cookies in a 350 F or 180 C preheated oven for 15 minutes or until lightly browned on the edges

Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Making the Coffee Biscuits

In a medium saucepan, dissolve the instant coffee in the boiling water, and add white granulated sugar, butter, and milk. Whisk to combine.

Bring the mixture to boil on medium heat for about 8 minutes uncovered. After 8 minutes remove from the heat and stir with a wooden spoon or silicone mixing spoon until the mixture becomes thick. Cover the fudge with cling film or food wrap to prevent skin from forming on top. Allow it to cool completely before using.

How to Make Coffee Fudge Filling

Transfer the fudge filling into a piping bag, cut the tip of the bag, and pipe a small amount onto one-half of the cookies.

Cover with the other half of the cookies to make a sandwich. Serve and enjoy. Cookies stay fresh in an airtight container at room temperature for up to 1 week.
