<p>Tip the cream and sugar into a pan. Bring to the boil, stir until the sugar has dissolved, then turn off the heat. Tip the melon into a food processor with the lemon juice, blitz until smooth, then pour the cream onto the melon and blitz again.</p>

<p>Pour the mix into an ice-cream machine and churn until thick and semi-frozen, then transfer to a freezerproof container and freeze. Serve the ice cream scooped into a bowl with fresh raspberries.</p>

This strawberry mousse requires the least amount of work, is uncomplicated, unchallenging, trouble-free and is very versatile. Strawberry Yogurt Mousse

200 ml full-fat yoghurt

strawberries

ml milk

Bloom the gelatin by sprinkling it over the cold water in a small container. Set aside. After 5 minutes of rest, microwave it for 1 minute. Be sure to dissolve the gelatine in the milk, by warming and stirring them together.

Add sugar to the fresh strawberries and blend them together. Whisk the yoghurt and strawberry puree together and mix in dissolved gelatine.

 Whip the cream until soft peaks form. Fold in the yoghurt mix. Stir until fully combined, and ladle into individual containers. Cool in the fridge for at least a couple of hours.

For the cookie crust, add the chocolate cookies and melted butter to a food processor. Pulse for 30 seconds, or until the mixture reaches a sandy consistency. Set aside.

In a heat-safe bowl, dissolve the gelatin powder in boiling water. Mix until fully dissolved, ensuring there are no clumps.

For the filling, add the cream cheese, cream, sugar, coffee liqueur, instant coffee, melted chocolate, and gelatin mixture to a blender. Blend for 60 seconds, or until smooth.

Divide the cookie crust among 4 martini glasses. Press the crust against the sides of each glass with a spoon.

Pour the cheesecake filling into each glass and refrigerate for 3-4 hours, or until the cheesecake is set.

Decorate the cheesecakes with dark chocolate shavings and coffee beans.
