Cold Spaghetti Salad

spaghetti

black olives, sliced

grape tomatoes, sliced

zucchini,

red onion, thinly sliced

green bell pepper, chopped

fresh parsley, chopped or minced

freshly-grated Parmesan cheese (plus more for garnishing)

Sea salt,

Freshly-ground black pepper

Boil the pasta in heavily salted water until it&#8217;s al dente. Drain the spaghetti in a colander. Do not rinse it under cold water. Instead, drizzle olive oil over the noodles. Toss the spaghetti, and then spread it in an even layer on a cookie sheet to cool. This is a food styling trick that keeps your pasta looking picture perfect!

Transfer the cooled pasta to a large mixing bowl. Add the veggies and parsley and mix well. Add the Parmesan cheese and the cold Italian dressing and fold them in. Do a taste test and add salt and pepper as needed. If your salad needs just a touch of brightening, you can sprinkle a bit of red wine vinegar on top and mix it in.

Garnish your spaghetti salad with a couple more twists of freshly-ground black pepper, more grated Parmesan cheese, and a lovely fresh sprig of Parsley. Your delicious summer salad is ready to enjoy!

We tripled the recipe for my niece’s baby shower!  (Having never tried it!). It was a hit!  Had so many guests request the recipe!!!!!   The only modification we made was adding a heaping spoonful of red pepper flakes, because that’s how the family rolls.

Coming out of California, this recipe is a perfect dish that is light, tasty and easy to make. It is a perfect dish for any day of the week or time of year. Although it is called Spaghetti Salad, it is a cold dish that tastes great and is so easy to make, anyone could do it. This is a great choice for picnics, potlucks and parties. You can switch it up and customize the salad to your liking.

California Spaghetti Salad

noodles

½ C. Cherry tomatoes

Cucumber diced

Zucchini diced

Red bell pepper diced

Green bell pepper diced

onion

Can Black olives sliced or diced

Bottle Italian dressing

½ C. Parmesan cheese grated

Sesame seeds

Paprika

Celery seed

Garlic powder

Cook the spaghetti to your liking, rinse under cold water and drain well.

In a large mixing bowl, combine the spaghetti, red bell pepper, green bell pepper, cucumber, zucchini, tomatoes, red onion and black olives.

In a small mixing bowl, whisk together the Italian dressing, parmesan cheese, sesame seeds, paprika, celery seed and garlic powder.

Pour the dressing mixture over the spaghetti salad and toss to coat well.

Chill for 2-3 hours before serving.

This turned out AMAZING! It's one of the best pasta salad recipes I've ever made.  I could not even wait for it to cool before I tried it. I omitted the green bell pepper, used 1 large zucchini, and used some sesame oil and celery salt, since I could not find either of those in my cabinets.  I also used about 3/4 of the bottle of Italian dressing and refrigerated shredded parmesan cheese (in the tub).  And lastly, I used Chitarra pasta, which held up marvelously well.
