Classic Southern Vegan Collard Greens, so flavorful you&#039;ll want to eat the whole pot! They are slow simmered to perfection in a rich broth. 

Vegan Collard Greens

olive oil

yellow onion, diced

garlic,

water

smoked paprika

red pepper flakes

collard greens, cleaned and cut (2 large bunches)

white vinegar

sun dried tomatoes, chopped, optional

sauce,

In a large deep pot, sauté the onion in the olive oil for 5-6 minutes over medium heat. Add the garlic and cook for 1 more minute until fragrant.

To the pot, add the water, smoked paprika, salt and red pepper flakes. Stir and bring to a boil, then reduce heat so it&#039;s simmering gently.

Add in the chopped greens. Cover the pot and simmer for about an hour. They shouldn&#039;t be boiling too hard, just gently simmering on low heat. Give the greens a stir every now and then.

About halfway through cooking, add the vinegar and sun dried tomatoes, if using.

After an hour, taste and add more salt, hot sauce or any other seasonings as desired. Enjoy!

VEGAN COLLARD GREENS

onion

– 3 garlic cloves, minced

(14 ounces.) diced tomatoes

(14 ounces.) beans (chickpeas, cannellini

lemon juice (1 large or 2 small lemons)

salt & pepper,

red pepper flakes, to taste (optional)

Heat oil in a large wok over medium heat, add shallots and sauté 4 minutes or so, just until softened. Add the garlic, saute 1 minute more.

Add collards, lemon juice and salt &amp; pepper, cook another 4 minutes.

Add tomatoes and beans, cook, stirring occasionally, until collards are lightly wilted or until beans and tomatoes are heated through. I like my collards al dente if you will and cooked for about 5 extra minutes. Ending cooking time will vary depending on how soft you like your collards.

Serve in individual bowls with a squeeze of lemon. Pair with warmed corn tortillas, naan or crusty bread and a tall glass of lemon water.

This Southern Collard Greens recipe is a classic easy side dish! Flavored with smoky bacon and sweet onion, the greens are a crowd-pleasing option for your next Sunday supper or holiday meal.

Southern Collard Greens Recipe

hickory smoked bacon, chopped

sweet onion, diced

chicken broth

lbs. fresh collard greens, trimmed and washed

apple cider vinegar

sugar

Optional garnish: crushed red pepper flakes

Cook bacon in a large stockpot or Dutch oven over medium heat for 10-12 minutes, or until almost crisp. Add onion, and sauté until translucent, about 7-8 minutes.

Stir in garlic and sauté 1 more minute. Add broth, collard greens, vinegar, sugar, salt, and pepper. Use a wooden spoon to stir, scraping up any browned bits from the bottom of the pot.

Simmer (uncovered) over low heat for about 1 ½ hours, stirring occasionally (or until collards reach desired level of tenderness).

Taste and season with additional salt and pepper, if necessary. Garnish with crushed red pepper flakes or hot sauce.

Easy Southern Collard Greens with Smoked Turkey

Creole Seasoning (Adjust to taste.)

Fill a large bowl or your sink with water. Use your hands and scrub the veins of the leaves to remove any dirty or sand. Wash the greens thoroughly until the water runs clear.

Remove the stems from the greens and slice the greens into smaller pieces.

Heat a large pot or Dutch oven on medium-high heat. Add the olive oil to the pot along with the onions and garlic. I like to use a Dutch oven because you can saute the vegetables and cook the greens all in one pot.

Saute the onions and garlic until translucent and fragrant.

Deglaze the pan by adding the chicken broth.

Begin to layer in the greens and add them in batches. Greens will need to wilt down a lot in order to fit in the pot. Add in the greens and then stir and allow them to cook down.

Add in the Creole Seasoning and turkey. Bring the pot to a boil.

Place the lid on the pot and adjust the heat to medium. Allow the greens to cook for 2 hours or until the greens are soft and the turkey is tender. Check in and stir the greens when necessary.

Open the pot and remove the turkey leg. Shred the meat from the leg using forks and return it to the pot.

Serve.
