A stunning homemade cordial to capture the taste of summer. Use whatever berries you have to hand (even frozen will work well), but raspberries are particularly good here.

A stunning homemade cordial to capture the taste of spring. Dilute with plain or sparkling water, cava or Prosecco, or use as a drizzle for freshly baked cakes.

Nothing says summer quite like a glass of fresh, homemade elderflower cordial. Top this recipe off with sparkling water or Champagne for special occasions.

Put the sugar in a bucket or basin with the boiling water and stir to dissolve. Add the citric acid or lemon juice and the lemon zest.

Shake the elderflowers to remove any insects and add the flowers to the sugar syrup. Cover and leave to stand for 1-2 days, stirring morning and night.

Strain the elderflower cordial through muslin and decant into sterilised bottles. It’s now ready to use.

Add to water and ice for a refreshing, long drink or top up with Prosecco or Champagne for a summer fizz.&nbsp;

How to make Elderflower Cordial at home: THE GOOD LIFE  Part Two

Diluted with sparkling water, this makes a refreshing drink to enjoy throughout the summer, or use a dash neat in recipes like gooseberry fool

Elderflower & lemon cordial

citric acid (available from the chemist)

Dissolve sugar in water over a gentle heat, then bring to a simmer. Pour over the elderflower heads with the zest from the lemons – use a potato peeler to get nice wide strips. Slice the rest of the lemons and add to the syrup with citric acid. Stir well, cover and leave for 24 hours in a cool place to infuse. Strain through muslin and pour into sterilised bottles. Once open, refrigerate.

A refreshing cordial that takes 10 minutes to prep. Use up a glut of fresh rhubarb and make the most of summer

Put the sugar in a large saucepan with 300ml water. Bring to a simmer then add the zest and juice of both the orange and the lemon along with the rhubarb and the ginger.

Cook the mixture over a medium heat until the rhubarb is falling apart.

Pour the mixture through a sieve lined with muslin into a clean heatproof jug then transfer to sterilised bottles. Keeps in the fridge for up to 1 month.

Serve approx. 25ml of cordial per 100ml sparkling water, or to taste.

Elderberry cordial cordial is made using dried berries and honey - a perfect fruity, pick-me-up in the winter months.

Place elderberries, water, ginger, cinnamon and cloves in a large pot. Bring to a boil, then reduce the heat to low and simmer for 45 minutes o until the mixture has reduced in volume by half.

Remove from heat and allow to cool to room temperature.

When cooled use a mesh strainer or cheesecloth to strain the berries. Use a spatula or the back of a spoon to press all the juice out. Discard the elderberries.

Add honey to the mixture and stir until well combined. Store in an airtight bottle or container in the refrigerator.
