A fresh take on your traditional waffle, these savory Crispy Cheddar Cornbread Waffles are the perfect vehicle for chili, and so much fun to eat!

Crispy Cheddar Cornbread Waffles

all purpose flour

yellow cornmeal

tsp sugar

tsp baking powder

tsp baking soda

salt

buttermilk

eggs

butter

cheddar cheese (shredded)

chunky chili

sour cream

extra cheddar

cilantro

Whisk together the dry ingredients.

In a smaller bowl, whisk together the buttermilk and eggs.&nbsp;

Add the wet ingredients to the dry, folding together until just combined. Don't over mix -the batter should be shaggy, vs smooth.

Add in the melted butter, and cheese, folding together gently. Again - don't over mix!!

Heat your waffle maker. I like to use a high setting (but yours may be different - keep an eye on it!)

Grease the waffle maker, then add around 3/4 cup of batter for large Belgian style waffles. Use 1/2 cup for the flatter, less deep waffle irons.

Cook until browned and crispy.

Top with hot chili, sour cream, extra cheese and a little cilantro.

Devour!

Cornbread waffles have a nice crunch on the outside with a soft, slightly crumbly inside, and they are a fun remix of the traditional savory bread that goes great with chili, barbecue, or just a swipe of simple honey butter.

Cornbread Waffles

1 1/2 cups all-purpose flour

1 cup yellow cornmeal

granulated sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

2 cups buttermilk

2 eggs

Plug in your waffle iron, and get it heating (I have found that the deep wells of a Belgian-style waffle maker work great for this recipe).

In a large bowl, add the flour, cornmeal, sugar, baking powder, baking soda, and salt. Whisk to combine.

Make a well in the center of the dry mixture, and add the buttermilk, eggs, and oil. Whisk to combine well.

Cook the batter according to the manufacture&#8217;s directions of your waffle iron.

When one waffle is done, let it rest on a wire wrack, taking care not to stack the waffles (the steam they produce makes them soggy if you stack them on a plate).

Serve hot with your favorite chili and cheese, pulled pork with coleslaw and beans, or taco toppings on top. It also makes a great option to go with a bowl of chili for a fun change. You can serve them as sweet waffles, too, and they are great with honey butter on top.

Cornbread Waffles with Chili

Tablespoon baking powder

milk

Tablespoons oil ((vegetable or canola oil))

Your favorite chili

Optional chili toppings: shredded cheese, sour cream, chopped green onion

Preheat waffle iron.

In a large bowl combine the flour, cornmeal, baking powder, sugar, and salt.

Add milk, oil, and eggs and stir until smooth, but don&#x27;t over-mix.

Spray waffle iron with non-stick cooking spray. Pour batter onto hot waffle iron and bake in batches.

Serve with chili over top, if desired, garnished with shredded Cheddar, sour cream and chopped green onion.

These savory but slightly sweet cornbread waffles get a spicy kick from chopped jalapeños. The spicy strawberry butter provides provides an unexpected extra punch of flavor!

Jalapeño Cornbread Waffles with Hot Strawberry Butter

butter (melted)

cornmeal

baking powder

baking soda

corn kernels

jalapeños

cooking spray

butter (room temperature)

strawberries

red pepper

Preheat oven waffle iron

Shuck one ear of corn and remove kernels from cob. Set aside.

Meanwhile, whisk together buttermilk, butter, sugar and eggs. In a separate large bowl, combine flour, cornmeal, baking powder and soda, and salt. Pour wet mixture over dry ingredients and stir using a rubber spatula until moist.

Fold in  corn and jalapeños with wooden spoon or spatula.

Spray waffle grates with nonstick cooking spray. Spoon about 1/4 cup batter into waffle iron with large ladle. Cook until golden brown and cooked through, 2 to 3 minutes per waffle.

Repeat until all the remaining batter is used.

Cream stick of butter with hand mixer until fluffy

Beat in strawberries, salt, red pepper and honey with hand mixer. Mix until smooth and bright pink.

Serve each waffle with a small scoop of butter and top with a drizzle of honey
