This Reuben casserole has all the flavors of your favorite Reuben sandwich in a casserole. Layers of corned beef, sauerkraut, Swiss cheese, Thousand Island dressing and bow tie noodles make this Reuben delicious.

A clever twist on the traditional deli Reuben Sandwich. Turn it into a casserole and feed a crowd.

Reuben Casserole

½ Cups Bowtie Pasta (Dried, cooked)

Cups Corned Beef (Sliced Thin and Diced)

Cups Sauerkraut

Tablespoon Caraway Seeds

Tablespoons Thousand Island Salad Dressing

Cups Swiss Cheese

Preheat oven to 400 degrees Fahrenheit. Cook the pasta according to the package directions. Drain.

Pan fry the corned beef 5 minutes stirring occasionally.

Drain the sauerkraut and set aside.

In a 9 X 13-inch baking pan, layer cooked pasta, corned beef, sauerkraut, and thousand island dressing. Sprinkle on the caraway seeds. Top with the Swiss cheese. Bake for about 30 minutes or until cheese is hot and bubbly.

Corned Beef Casserole With Cabbage combines all the flavors of your St. Patrick&#39;s Day dinner in one dish. Cabbage, carrots and sweet onions sauteed in a Guinness reduction are layered with cheddar and potato filled pierogies, corned beef and aged Irish cheddar cheese.

Corned Beef Casserole With Cabbage Recipe

package. (12.84 ounces) frozen mini classic cheddar pierogies

Tablespoons butter

carrots

sweet onion, (such as Vidalia)

cabbage, (about 6 ounces)

salt

garlic powder

pepper

Guinness stout beer (or beef broth)

(8 ounces) deli-sliced corned beef, (chopped)

package. (7 ounces) aged Irish cheddar (, shredded,

parsley

Preheat oven to 375F. Coat a  1 1/2-quart baking dish with non-stick cooking spray.

Bring a pot of water to a boil over high heat and cook piergoies for 3 minutes. Drain and run under cold water to cool; reserve.

In large non-stick skillet melt butter over medium-high heat.

Cook carrots, onion, kosher salt, pepper and garlic powder until tender-crisp, about 5 minutes, stirring occasionally.

Stir in cabbage and cook until wilted and golden on edges, about 4 minutes, stirring occasionally.

Add Guinness and cook 2 minutes. Remove from heat and cool slightly.

Arrange half of reserved peirogies on bottom of prepared baking dish. Top with half of corned beef, half of cabbage mixture and 1 cup shredded cheese. Repeat with remaining ingredients ending with remaining shredded cheese.

Bake 25 minute or until heated through and cheese is melted.

Sprinkle with chopped parsley.
