These quick and easy homemade cornflake chicken nuggets are shallow fried to crispy perfection.  Made using a handful of ingredients they are fantastic for entertaining as well as a family meal idea.

Crispy Cornflake Chicken Nuggets Recipe

chicken breast (skinless, boneless)

cornflakes

breadcrumbs

eggs

flour

Sea salt and pepper

Olive oil

Cut the chicken into similar size chunks, season and set aside.

To make the cornflake mixture place the cornflakes in a blender and briefly whizz up until they have the consistency of very coarse breadcrumbs. Combine with the regular breadcrumbs and place in a bowl.  Put the flour in another bowl.

Beat the eggs using a fork, season and set aside.

Dip each nugget in the flour, then egg, then cornflake mixtures – in that order.

In a large frying pan heat up approx. 3 tablespoons of the oil and fry the nuggets on a medium heat until golden brown for about 2 minutes on each side. Add a little more oil after you’ve turned them over.  Do not overcrowd the pan.

Place the chicken nuggets on top of a large plate lined with a paper towel (to absorb excess oil) for 1 minute. Discard the paper towel and serve the nuggets with your favourite dip and a sprinkle of lemon/lime juice (optional).

Cornflake Chicken Nuggets

chicken

eggs, (beaten)

cornstarch

½ cups plain cornflakes, (crushed)

Parmesan cheese

salt

Italian seasoning

paprika

black pepper

Preheat the oven to 400F degrees and set a cooling rack on top of a large baking sheet.

In a wide, shallow bowl, stir together crushed cornflakes, Parmesan cheese, salt, garlic powder, Italian seasoning, and paprika.

Place cornstarch in a second bowl and beaten eggs in a third bowl.

Coat chicken piece in cornstarch.

Next, dip them in the eggs.

Lastly coat in the cornflake mixture. Repeat with remaining chicken.

Transfer to the cooling rack atop the baking sheet. Lightly spray the top of the nuggets with canola oil spray.

Bake at 400F for 15-20 minutes, until golden brown and cooked through, and an internal temperature of 165F degrees.
