These Crunchy Chocolate Chip &amp; Sultana Cornflake Cookies are the perfect lunchbox recipe. They&#039;re quick, easy and kid-approved!

Crunchy Chocolate Chip &amp; Sultana Cornflake Cookies

butter

150 g (2/3 cup) caster sugar (superfine sugar)

tsp vanilla extract

165 g (1 1/4 cups) self raising flour

tbs milk

55 g (1/3 cup) sultanas (optional)

55 g (1/3 cup) chocolate chips (optional)

cornflakes

extra cornflakes (to coat)

Preheat oven to 180 degrees celsius (fan-forced). Grease and line two flat trays with baking paper and set aside.&nbsp;

Cream the butter, sugar and vanilla extract until pale and creamy.&nbsp;

Add the self raising flour and mix together.&nbsp;

Add the milk and mix until the mixture comes together.&nbsp;

Add the sultanas, chocolate chips and cornflakes and mix together.&nbsp;

Scoop up tablespoonfuls of the mixture and roll into balls. Press into the extra cornflakes to coat.&nbsp;

Place onto the prepared trays and press down to flatten slightly (allow space between each cookie as they will spread).&nbsp;

Bake for 13 minutes or until golden (check halfway and turn the trays around).&nbsp;

Allow to cool for 10 minutes on the baking trays before transferring to a wire rack to cool completely.&nbsp;

Store in an airtight container at room temperature for up to 1 week.&nbsp;

Conventional Method

Preheat oven to 180 degrees celsius (fan-forced). Grease and line two flat trays with baking paper and set aside. 

Cream butter, sugar and vanilla extract on Speed 4, 30 seconds. Scrape and repeat 2 more times or until pale and creamy.

Add the self raising flour and milk and mix on Interval (kneading function) for 20 seconds. Scrape down the sides and repeat.

Add the sultanas, chocolate chips and cornflakes and mix on Reverse, Speed 3, 5 seconds (use the spatula to help mix).

Scoop up tablespoonfuls of the mixture and roll into balls.

Press into the extra cornflakes to coat. 

Place onto the prepared trays and press down to flatten slightly (allow space between each cookie as they will spread). 

Bake for 13 minutes or until golden (check halfway and turn the trays around).

Crunchy Chocolate Chip & Sultana Cornflake Cookies

Preheat the oven to 300°F/150°C. Line a cookie sheet with baking paper.

Beat the egg whites with an electric mixer or stand mixer, slowly adding the sugar, until stiff peaks form.

Gently fold in the chocolate chunks, cornflakes and vanilla.

Drop tablespoonfuls of the mixture onto the prepared baking sheet, spaced 1” apart.

Bake for 15-20 minutes or until the outside is crispy.

Melt the remaining dark chocolates and drizzle or splatter over the cooled cookies, then sprinkle each one with a few flakes of sea salt.

In a large saucepan, combine the sugar, corn syrup, and peanut butter. Cook over medium high heat until center starts to boil, make sure to stir constantly so the sugar doesn't burn.

As soon as the sugar mixture comes to a boil, remove from heat and stir in the vanilla extract and corn flakes, mix until corn flakes are evenly coated in sugar mixture.

Use an ice cream scoop to drop cookies onto parchment or wax paper as quickly as possible before mixture starts to cool and harden.

Let cool on wax paper for 20 to 30 minutes before enjoying.

Cornflake Cookies

(1/2 cup / 1 stick) butter, room temperature

(1/2 cup) brown sugar

(1/4 cup) caster sugar or granulated sugar

(1 and 1/2 cups) plain flour or all purpose flour

baking soda

(1/2 cup) chocolate chips

(1 and 1/2 cups) Cornflakes

Line two baking trays with baking or parchment paper. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.

In a large mixing bowl, beat butter and sugars using an electric beater for 1-2 minutes or until pale and creamy.

Add vanilla and egg and beat until combined. Sift in flour and baking soda and mix to combine. Add chocolate chips and stir. In a separate bowl, add Cornflakes and crush them slightly using your hands.

Scoop balls of dough (roughly 1.5 tablespoons each) and then roll them in the Cornflakes, pressing the Cornflakes into the cookie dough using your hands.

Place cookie dough balls onto your prepared trays, leaving room for the cookies to spread out.

Bake for approximately 12-13 minutes or until golden brown. Carefully transfer to a wire rack to cool completely.

Fantastic cookies I substitute the 1/2 of flour for shredded coconut not desiccated 
Makes it more chewy and delicious 
Also instead of choc I substitute it for sultanas

Made some to take into work and they disappeared so quickly everybody loved them
