Don&#x27;t let their small size fool you, Cornish game hens have a lot of meat. Known for their high proportion of breast meat, they make for a delicious meal and typically served whole. These little birds make a big statement on the dinner table and they are easy to cook in the air fryer. Coat these with a barbecue dry rub or use your favorite seasoning blend. This is my favorite way to cook Cornish game hens because of how crispy the skin gets in the air fryer!

These air fryer Cornish game hens are juicy and packed with flavor, and best of all, they are incredibly easy to prepare. The air fryer works its magic on this chicken, along with the barbecue dry rub, to build up a deliciously crispy skin.

Cornish hens are so dainty, they immediately feel like a fancy way to serve roast chicken for company. But these hens are just as lovely for a weeknight meal. The buttermilk brine infuses flavor and moisture to the hens, and can be done the night before.

Buttermilk Brined Cornish Hens

Cornish hens (1 1/2 to 1 3/4 pounds each)

buttermilk

salt

cayenne pepper

garlic powder

cumin

lime

lemon (halved)

butter (melted)

kosher salt

pepper

thyme

Rinse the Cornish hens under cool water, including the cavity. Pat dry with paper towels, set aside.

In a large bowl, whisk together the buttermilk, salt, cayenne pepper, garlic powder, cumin and lime juice. Place the hens breast side down and cover with plastic wrap. Place in the refrigerator. Let the hens brine for at least 3 hours, or overnight.

Preheat the oven to 425°F. Take the hens out of the brine and lightly pat dry with paper towels. Season the cavities with a little salt and pepper, and insert half a lemon and a sprig of thyme. Tie the legs together with kitchen twine. Brush the hens with melted butter, and season generously with salt and pepper. Place in a roasting pan. If you wish, you can surround the hens with red potatoes, brushed with butter and seasoned with salt and pepper.

Place in the middle rack of the oven. Roast the hens for 50 minutes to 1 hour; until the skin is bronzed and the internal temperature in thickest part of the thigh is about 180°F.

Mix the rosemary, salt, pepper, thyme and garlic powder together in a small bowl. Sprinkle the seasoning all over both sides of the game hen and in the cavity. Place, breast side up in the prepared baking dish, tucking the point of the wings down.

Bake 55-65 minutes or until the internal temperature...

Bake 55-65 minutes or until the internal temperature inserted in the center of the breast reaches 165°F with checked with an instant read digital food thermometer.

Roasted Cornish Game Hen

Cornish game hens (,patted dry with paper towels)

butter

garlic (,peeled)

Extra virgin olive oil

Salt and black pepper

dry white wine

chicken broth

Preheat oven to 450 degrees F.

Pat the hens dry with a paper towel. Use your index finger to loosen the skin on the top of the hen and slip a thin slice of butter under the skin on top of each breast. Add a few rosemary and thyme leaves (or herb of choice). Repeat for each hen. Put a quarter of a lemon in the cavity of each hen along with a clove of garlic and a sprig of fresh rosemary and thyme (or herb of choice). Truss the hens by tying the wings and legs.

Rub each hen all over with some extra virgin olive oil, then sprinkle with salt and freshly ground black pepper. Place then hens on the rack of a roasting pan lined with aluminum foil, spacing them out so they are as far apart from each other as possible. This will enable their skins to get browned and crispy.

Place the hens in the preheated oven and roast for 25 minutes.

While the hens are roasting, combine the chicken broth and wine in a bowl.

After the hens have been roasting for 25 minutes, reduce the oven temperature to 350 degrees F. Pour the broth/wine mixture over the hens and continue to roast for 30 minutes, basting the hens with the juices at the bottom of the pan every 10 minutes or less. The hens are done when an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. If you prefer darker skins, turn up the temperature to broil for a couple more minutes, watching closely to prevent burning.

Carefully remove the hens and pour the juices from their cavities into the roasting pan. Transfer the hens to a warmed platter, remove the trussing string, and tent with aluminum foil to keep warm. Pour the juices from the roasting pan into a saucepan and boil for about 5 minutes until the liquid is a thin sauce-like consistency. Serve the hens whole per guest or cut in half lengthwise and place cavity-down on each serving plate. Drizzle the sauce over the hens and garnish with fresh herb sprigs and a slice of lemon. Serve immediately.

Cornish Game Hen with Whiskey and Cream Sauce

Cornish hen (2 large Cornish hen)

unsalted butter (2 tablespoons unsalted butter)

shallots (2 mediun finely sliced shallots)

whiskey (1/4 to 1/2 cup whiskey)

Worcestershire sauce (1 teaspoon Worcestershire sauce)

Dijon mustard (1 tablespoon Dijon mustard)

heavy cream (1/2 cup heavy cream)

lemon juice (2 teaspoons fresh lemon juice)

Herbs de Province (a big pinch of herbs of Provence)

Preheat the oven at 450º and position the rack in the middle of the oven.

Place a hen, breast side down on a cutting board. Remove the backbone by cutting along both sides with shears or a large sharp knife.

Flip the hen and flatten it by pressing down on the breastbone with your palm. Split the hen in two along the breastbone. Repeat with the remaining hen.

Place on a heavy roasting pan and spread on each half, ¼ of a teaspoon of butter, Herbs de Provence, salt and pepper, and a drop of olive oil.  Place in the hot oven and cook for 30 to 45 minutes. Poke the hen while cooking to release any juices.

When done, remove from the oven, place the hen in a dish and cover with aluminum foil and let rest.

FOR THE CORNISH GAME HEN

Place the unwashed cooking pan over the stove and add the remaining 2 tablespoons of butter and let it melt. Lower the heat and add the whiskey, very slowly. With a wooden spoon scrape up any bit on the pan.

Add the shallots and cook until tender, 1 minute.  Add the Worcestershire sauce, mustard and raise the heat to medium-high. Bring to a boil stirring constantly

Add the heavy cream and the lemon juice. Taste the sauce and season with salt and pepper.

Serve hot over the Cornish hen.

Easy Cornish Game Hen Recipe with Whiskey Sauce

This roasted Cornish hen recipe is an easy and elegant way to make a meal that&#039;s quick enough for a busy weeknight, yet fancy enough for a special occasion. The hens are coated in butter, garlic and herbs, then cooked in the oven for perfectly tender and juicy results every time.

Roasted Cornish Hen

Cornish hens (1.5 - 2 pounds each)

onion

butter (softened)

garlic (minced)

thyme leaves (minced)

rosemary leaves (minced)

parsley leaves (minced)

salt and pepper

cooking spray

herb sprigs and lemon wedges

Preheat the oven to 400 degrees F. Coat a baking dish with cooking spray.

Tuck the wings underneath the breast of each hen. Stuff each hen cavity with the rosemary and thyme sprigs, onion and lemon.

Tie the legs of the hens together with kitchen twine.

Place the butter, garlic, minced thyme, rosemary and parsley, and salt and pepper to taste in a bowl. Stir to combine.

Rub the butter mixture all over the hens, both on the outside of the hens and underneath the skin.

Place the hens in the prepared dish.

Bake for approximately 50-60 minutes or until a thermometer inserted into the thickest part of the thigh registers 165 degrees F. The cook time may vary a bit depending on the size of your birds.

If the skin is getting overly dark as the hens cook, them with foil.

Let the hens rest for 5 minutes. Remove the lemon, onion and herbs from the hen cavities. Cut in half, then serve with pan drippings. Garnish with lemon and herbs if desired.
