This delicious Jamaican cornmeal porridge makes a healthy hearty breakfast. This porridge is warming, tasty and filling.

Cornmeal Porridge

cornmeal

coconut milk

water

In a medium pot, add the cornmeal along with the milk, water, salt and cinnamon stalk.

Turn on the heat to medium, and keep stirring (I use a whisk).

Cook the cornmeal until it thickens and has a porridge consistency (for around 10 minutes). Add the sugar, nutmeg, and vanilla extract and cook for 30 seconds more. Remove from heat, and serve in bowls topped with fruit and a sprinkle of ground cinnamon.

Jamaican Cornmeal Porridge Recipe

¼ teaspoon ground all-spice

sweetened condensed milk (or to taste)

Add 2 1/2 cups water, 1 can coconut milk to a 4 QT heavy bottomed pot. Bring to a boil over medium-high heat.

Meanwhile, add 1 cup cornmeal and 1 1/2 cup water to a large mixing cup and whisk until smooth.

Once the pot begins to boil, whisk in cornmeal mixture and continue to whisk for about 1 minute, ensuring there are no lumps. Reduce heat to low and cover with a tight fitting lid.

Cook over low heat for 15-20 minutes, stirring occasionally. When there is about 5 minutes left, stir in vanilla extract, cinnamon, nutmeg,  and all-spice. Remove from heat and sweeten with condensed milk.

Serve and enjoy.

In a medium-sized pot over high heat, bring the 4 cups of water to a boil.

Add the salt and then reduce the heat to medium-low.

While stirring constantly with a whisk, slowly sprinkle the cornmeal into the simmering water. This prevents lumps from forming.

Reduce the heat to low and continue stirring for about 10 minutes until the mixture starts to thicken.

Cover the pot and let the mamaliga simmer gently for another 10 minutes, stirring every couple of minutes to prevent sticking.

Turn off the heat and then stir in the butter or olive oil.

Let it cool for a minute or two to set slightly.

Optionally sprinkle with cheese before serving.
