Protein packed, fruity and filling, we&#039;ve given the classic Coronation Chicken a vegetarian twist while keeping it light and slimming friendly!

Coronation Chickpeas | Slimming &amp; Weight Watchers Friendly

tin chickpeas

red onion (finely chopped)

½ red pepper (finely diced)

mango

100 g fat free Greek yoghurt

tsp red wine vinegar

tsp mild curry powder

granulated sweetener (or sugar)

½ tsp garlic granules

coriander (chopped)

salt and black pepper

Place

Place the mango in a small saucepan with 2-3 tbsp water and the red wine vinegar. Cover and bring to a simmer over a low heat for 10 minutes or until the mango becomes soft and begins to fall. Riper mangoes will need less cooking than unripe ones.

Remove

When soft, remove from the heat and set aside for 10 minutes to cool, before blending to a puree.

In a large bowl, mix the mango puree with the yoghurt, curry powder, garlic granules and sweetener.

Stir

Stir in the chickpeas, peppers, onions and coriander.

Season

Season to taste with salt and pepper and serve with your choice of accompaniment.

A true party starter, this chicken salad platter tastes just as good as it looks. And doesn't it look amazing?!

Coronation chicken salad with coconut dressing recipe

(1 ⁄2 cup) natural coconut yoghurt

20.00 gm mango & ginger chutney

⁄2.50 gm curry powder

lime,

organic living lettuce, leaves

barbecue chicken,

avocados, halved, thickly sliced

mango,

coriander

Step 1

Place the yoghurt, chutney and curry powder in a small bowl. Squeeze over the juice of 1 lime half. Season well. Stir to combine then stir through 2 tsp water.

Step 2

Arrange the lettuce, chicken, avocado, mango and pappadums on a serving platter. Cut the remaining lime half into wedges.

Step 3

Drizzle over a little of the coconut dressing. Sprinkle with coriander and coconut flakes. Serve with the lime wedges and remaining dressing on the side.
