Grilled Country-Style Pork Ribs

Rinse the ribs gently under cool running water in the sink and pat dry with paper towels. (See Notes)

Rub the country-style ribs with a dry rub of your choice, using your hands to press it onto the meat so it will adhere. Let them sit out on the counter while preheating the grill or for best results, cover the ribs with plastic wrap refrigerate for two hours or overnight.

Prepare the Ribs for Grilling

Light a chimney full of charcoal. When the coals are lit and gray with ash, pour out the coal into the grill and set up the coals for a two-zone fire for indirect heat. Preheat to 350 degrees F.

Fire Up The Grill

Place the ribs over direct heat on a clean and oiled grate. Grill until golden brown with a slight char on them, about 3 to 5 minutes (depending on size), then flip the ribs and char the other side for an additional 3 to 5 minutes.

When both sides of the ribs are charred, move them over to the cooler (indirect) side of the grill. Close the lid and allow the ribs to cook for about 20 to 30 minutes at 350 degrees F. Add charcoal and adjust the vents of the grill to maintain temperature.

After 20 minutes, check the temperature of the ribs with an instant-read thermometer. The thickest part of the ribs should read somewhere around 135 to 140 degrees F.

At this point, move the ribs back over direct heat and baste with warm barbecue sauce to caramelize the sauce. It&#039;s important to pay close attention not to let the ribs get to charred and black.

Grill The Country-Style Ribs

Double-check the temperature which should be at  145 to 150 degrees F before removing from the grill. Remove them and allow the ribs to rest at least 10 minutes before serving.

Grilled Country Style Pork Ribs

Tender hamburger patties simmered in savory brown onion gravy! Classic southern meal served over rice or mashed potatoes!

Country Hamburger Steak w/ Onion Gravy

ground beef (80/20 chuck

olive oil

Worcestershire sauce

garlic powder

onion powder

black pepper

salt (see note)

Tablespoons butter (optional.If you're not using the leftover fat from beef)

Tablespoons flour

beef broth broth

parsley (garnish)

Add ground beef, olive oil, Worcestershire sauce, garlic powder, onion powder, black pepper, &amp; salt into a large bowl.

Use your hands to combine the spices with the beef.

Shape the mixture into 4-6 large patties. (they will puff a little and shrink so make them large)

Heat a large stainless steel skillet over medium-high heat.

Sear the burgers on both sides to create a nice "crust" on the burgers.

Remove burgers from skillet and place on a plate. Set aside. (The burgers may be a little undone and that's ok)

Leave 3 Tablespoons of fat in the skillet or add 3 tablespoons of butter if you prefer not to use beef fat.

Add onions and saute until tender and golden.

Sprinkle in flour and cook until flour is golden, stirring constantly.

Slowly pour in broth.

Stir.

Bring to a simmer and then add hamburgers back to the skillet.

Simmer until gravy has thickened and hamburgers are cooked through.

If needed, season with salt and black pepper. (I never need to)

Serve over mashed potatoes or rice.

Garnish with parsley.

Kori Rotti, also known as Kori gassi, is an aromatic and flavorful Mangalorean, Udupi, or Tulu Nadu style chicken recipe where the spicy chicken curry is served with crispy rice wafers.Kori means Chicken in Tulu, and Rotti means Rice crisps or wafers.

KORI ROTTI RECIPE | MANGALOREAN SPICY CHICKEN CURRY | KORI GASSI

Garlic cloves, finely chopped

Tamarind, small ball

Black peppercorns

Coriander seeds

Cumin seeds

Fenugreek seeds

Dry red chilies

Curry leaves

Coconut,

Coconut, grated

Chicken thighs

Green chilies, slit

Salt,

tbsp Garam masala powder

In a pan on medium heat, add 2 tbsp oil. To this, add onion and garlic with a pinch of salt and saute on a medium flame for 6 to 8 minutes until light golden in color.

Use 2/3 portion of this mixture while grinding the masala, and we will use the remaining 1/3 portion directly in the gravy.

Step I

In another pan on medium heat, add black peppercorns, coriander seeds, cumin seeds, fenugreek seeds, and saute ion medium flame for 2 minutes.

To this, add tamarind, red chilies, curry leaves, chopped coconut, and saute until the coconut becomes golden in color.

In a blender, add the roasted spices and 2/3 portion of sauteed onion mixture reserved in step 1, coconut, and 1 cup of water and grind it to a thick, smooth paste. Keep this aside. Check out the video here

Step II

In a large pan on medium flame, heat 1 tbsp of oil. To this, add marinated chicken in a single layer. After 2 to 3 minutes, flip and cook on another side.

Add ground masala, green chilies, salt to taste, 1/3 portion of onion mixture from step I, 2 to 4 cups of water for the desired consistency—cover and cook for 20 minutes on medium flame.

Give the gassi a good stir about halfway through the cooking time, around the 10-minute mark. Continue cooking for another 10 minutes.

Finally, add garam masala powder and mix. Cook uncovered for 1 minute and switch off the flame.

Finger licking kori gassi is ready. Serve hot and enjoy.

Step III

SOUTHERN STONE-GROUND GRITS MADE THE OLD-FASHIONED. CREAMY, BUTTER GRITS SEASONED WITH SALT AND PEPPER.

Creamy Southern Stone-Ground Grits

unsalted butter (plus more for individual bowls if desired)

Place grits in a large bowl and cover with water.

Stir and allow the chaff to float to the top.

Use a mesh strainer to remove and discard the chaff.

Drain off the water. Set aside.

In a large pot add half-n-half, water, butter, salt, and pepper. (make sure the liquid tastes well-salted)

Bring to a medium boil. (Watch it carefully, it can bubble over quick)

Gradually add grits into the pot, whisking constantly.

Let boil for two minutes, whisking constantly.

Reduce heat, cover, and simmer until grits are creamy being sure to whisk frequently during cooking. (see note for cooking time)

If grits are too thick, stir in more half n half or water. If grits are too thin let them cook uncovered until thickened or remove from heat and allow to thicken.

When grits are done, taste and adjust salt and pepper if needed or add in more butter.

Serve immediately.
