Preheat oven to 350 degrees.  Spray casserole dish with a non-stick spray and place sourdough bread on the bottom of casserole dish. Beat eggs; add salt, pepper and evaporated milk and mix thoroughly. Pour egg mixture over bread. Sprinkle diced ham and shredded cheese over egg mixture and cover with plastic wrap or another type of lid. Place casserole in the refrigerator overnight or in refrigerator for at least five hours.
Bake for 20 to 22 minutes, depending on the depth of the casserole dish. You will know this is completely done when you shake the dish slightly and the eggs do not wiggle.

Every fall Cracker Barrel serves up this amazing pumpkin custard with gingersnap crust and pumpkin pie spice flavored whipped cream. You can make it at home with this copycat recipe.

Cracker Barrel Pumpkin Custard N Ginger Snaps

Preheat oven to 350 degrees.&nbsp;&nbsp;

Crack open 8 eggs, and separate the whites from the yolks.

In a medium-sized glass bowl, add egg yolks and whisk until they are creamy.

Add pumpkin,1/2 cup sugar, vanilla, 1 3/4 cups of heavy cream, and pumpkin pie spice and combine until all are incorporated. 

Cook custard mixture in a double boiler. Stir until the custard has thickened and a spoon remains coated when inserted into the custard.

Pour custard into either 8 custard dishes or an 8 x 8 baking dish. Bake custard for about 20-25 minutes for custard dishes or 30-35 minutes for baking dish, until a spoon is inserted comes out clean. 

Halfway through the baking process combine the 1 cup gingersnaps and 1 tablespoon melted butter, and

Sprinkle the crumb mixture over the custard while it is baking by removing the dishes from the oven, adding gingersnap crumb mixture, and returning the dishes to the oven to finish baking.

Allow the custard to cool to room temperature. 

Just before serving, whisk or beat together 1 cup whipping cream, 1 tablespoon granulated sugar, and 1/4 teaspoon pumpkin pie spice until the whipped cream is thickened.

Serve pumpkin custard with pumpkin spice flavored whipped cream.

Mix all cornbread topping ingredients together in a mixing bowl until smooth.

Pour into greased 8 x 8-inch baking pan.

Bake at 375 degrees for 20 - 25 minutes until done. Remove from oven and let cool completely.

Crumble cooled cornbread and place 3 cups of cornbread crumbs in a mixing bowl.

Add 1/2 cup melted butter to crumbs and mix well, set aside.

Cornbread Topping

Melt butter in a saucepan on medium-low heat.

Add onions and celery and saute until transparent, stirring occasionally. 

Add chicken broth, cream of chicken soup, salt, and pepper. Stir until well blended and soup is dissolved completely.

Add chicken; stir and blend until the mixture reaches a low simmer.

Cook for 5 minutes then remove from the heat.

Chicken Casserole Filling

Place chicken mixture in 2 1/2 quart buttered the casserole dish or individual casserole dishes (about four).

Spoon cornbread crumb topping on top of chicken mixture. Do not stir crumbs into the chicken filling.

Bake at 350 degrees for 35 to 40 minutes. The crumbs will turn golden brown.

Dumplings
Mix the flour, baking powder, salt, milk, and oil, blending well, and turn out onto a floured surface. Knead four or five times. Divide the dough into two pieces. Roll out one piece to 1/8-inch thick and cut into 1 x 1 1/2-inch dumplings.

In a large saucepan, combine the water and bouillon cubes/soup base.&nbsp;

Boil until the bouillon cubes/soup base dissolve. Cook half of the dumplings until just about done; dumplings are done when they float up towards the top of the pot. Use a strainer to remove them to a bowl and set aside. Finish the other half of the dumplings in the same way. Reserve the cooking liquid. Sauce While the dumplings are cooking, you can start to prepare the sauce. Melt the butter in medium saucepan. Add salt and flour; stir until thick. Mix the sugar with the milk and add to flour mixture a little at a time, stirring constantly with a whisk until thick and smooth.&nbsp;

Remove from heat. Add the cooked dumplings to the sauce. Dissolve the crumbled bouillon cubes in 1/2 cup of the cooking liquid and stir gently into the sauce and dumplings. Return to low heat and simmer until blended. If the sauce seems too thick, gently stir in a little more cooking liquid.

Heat a non-stick skillet over medium heat. Use one small biscuit cutter or a small juice jar to press into the sourdough bread. Twist slightly so the bread "cuts" and you can remove the cut out circle. Spread the margarine or butter on both sides of the bread and place the bread into the pan. Place the cracked egg into the hole. When the bread is toasted on the bottom side (it takes about a minute), flip the bread over and allow to toast on the other side.  Season with salt and pepper to taste.

Cracker Barrel Sunday Homestyle Chicken

boneless, skinless chicken breasts

Pour 3 to 4 inches of oil into a deep fryer or large pot and preheat the oil to 350 degrees. 

Prepare seasoned flour by combining the flour, salt, and pepper in a bowl.  Stir to combine well.  In another bowl mix together the buttermilk and water.  If your chicken breasts are not fairly uniform in size place them between two pieces of wax paper and gently pound them out with a meat pounder until they are more uniform in size.  This will help with even cooking times.  Pat chicken breasts dry with a paper towel. 

Season the chicken with salt and pepper and then dredge into the flour, dip in buttermilk, and then dredge again in the seasoned flour and deep-fry the chicken pieces in the hot oil.  Turn the chicken breasts during the cooking to make sure that both sides of the chicken are golden brown. This should take 7 to 8 minutes for each one to cook.  When the chicken is done drain in a wire wrack.

Hi. This is Stephanie Manley with Copykat.com. Many of you have requested
the Cracker Barrel Sunday fried chicken, and here is my recipe for the
Cracker Barrel Sunday fried chicken. It's really, really easy. Very simple
to do. So now, you can have this one any night of the week. We just need
some flour, some buttermilk, a couple of chicken breasts, and salt and
pepper. So, please click on the link below in the description box for the
exact measurements. This recipe's also in my second book, but I'm just
making a half a batch right now. So, we are adding salt and pepper to our
flour, and we're going to stir this through. Be careful when working with
raw chicken. Make sure you wash your hands after every time you actually
touch the raw chicken, because no one wants any form of cross
contamination. Alright.

So, the first thing we're going to do is take our chicken breast, and
we're going to dredge it in the flour. Just cut it with flour, shake off
the excess, dip it in the buttermilk. Then, we go back to the flour, dredge
it in the flour again, and then we're going to set it aside. Now, it's
important that you let this rest for a good 7-8 minutes before you actually
begin cooking it. This gives the flour a chance to expand. That way, that
crust stays on. It doesn't take any chances on falling off. So again,
dredge in the flour, buttermilk and the flour again, wait a few minutes,
and then the next thing we're going to do is we're going to go ahead and
deep fry this. So, I have a pot behind me at about 350 degrees. I'm using
peanut oil. We will cook those up in just a few seconds.

So, now we're ready to go ahead and fry up our chicken. Now, just one
note. You cannot reuse the flour or the buttermilk. Just go ahead and drop
this in. Let it cook 5-7 minutes, and it will be nice and golden brown.
After about 6 or 7 minutes, these are perfectly brown. If your oil doesn't
come up all the way up over the top, you maybe need to flip these over
about half way through cooking to make sure they're perfectly brown on both

The Cracker Barrel Broccoli Cheddar Chicken is only served one night a week at the restaurant, but you can enjoy this chicken dish any night of the week at home.

Cracker Barrel Broccoli Cheddar Chicken

chicken breasts (4 portions, boneless and skinless)

cheddar cheese soup

Ritz Crackers (crushed)

broccoli (frozen)

Preheat your oven to 350 degrees. Make can of Cheddar cheese soup mix according to package directions (one can of soup mix to one can of milk). Place chicken breasts in a 9 by 13-inch baking dish. Season the chicken with seasoned salt. Pour 3/4 of the prepared soup over the chicken breasts.&nbsp;

Add broccoli to chicken that has been covered with the cheddar soup. Melt butter and combine with Ritz crackers, sprinkle buttered crackers over the broccoli. Add remaining soup mix, and bake for approximately 45 minutes or until the chicken is done. (Check chicken by cutting the thickest part and look to see that the chicken is uniform in color). When the chicken has been removed from oven sprinkle with shredded cheddar cheese.

chicken tenderloins (thawed)

chicken bouillon granules (divided (or you can use chicken base))

water (divided)

all-purpose flour (plus more for dusting)

heavy cream (optional)

parsley (for garnish)

In a medium saucepan or Dutch oven, melt butter over medium heat. Add diced vegetables and a sprinkle of parsley to the butter and saute until vegetables are softened and onion is translucent (about 4-5 minutes)..

Add a pinch of salt and pepper, 1 teaspoon of bouillon granules, and ½ cup water to the saucepan.

Add chicken to the pan and bring liquid to a simmer over medium heat. Cover with a lid and simmer for 10-15 minutes longer until meat is cooked through.

While chicken is simmering, prepare the dumpling dough. Combine flour, baking powder, and a pinch of salt and pepper in a medium bowl.

Add buttermilk and stir the dough until it comes together (dough will be shaggy.)

Heavily dust your work surface with flour. Scrape the dough onto the work surface and pat or roll out into a rectangle that is about ¼” thick.

Use a pizza cutter or knife to slice the dough into 1” x 1” squares (or slightly larger rectangles). Dust the pieces with more flour and set aside.

When chicken is cooked through, remove the chicken from the broth and set aside.

Strain the vegetables from the broth and return the broth to the saucepan.

Add remaining 4 cups of water, 4 teaspoons of chicken bouillon, and a ½ teaspoon pepper to the strained broth.

Bring full broth mixture to a low boil.

Add dumplings to the boiling broth - drop dumplings into the broth separately to prevent them from sticking together.

Reduce heat to a simmer, and cook the dumplings, uncovered, until done (about 10-15 minutes). Dumplings are done when they are soft and doughy like a noodle, all the way through.

Meanwhile, chop or shred chicken into bite sized pieces.

When dumplings are done, add the chicken back into the saucepan. Stir and cook the mixture a few minutes longer to heat the chicken through and thicken the broth with the starches from the dough.

Stir in a drizzle of heavy cream, if desired, to add some creaminess to the dish. Serve with freshly cracked pepper and a bit of chopped parsley.

Preheat the oven to 350 degrees. Place in a saucepan butter, coke, semi-sweet baking square and bring to a boil remove from heat and add marshmallows and stir until all is blended and the marshmallows are disappear. Set aside to cool enough to tepid or room temperature.&nbsp;

In mixing bowl blend the shortening, oil, vanilla, and sugar until fluffy. Add eggs and buttermilk and beat until smooth. In another bowl mix flour with baking soda, cocoa, baking powder and salt, add half of the flour mixture to shortening, egg mixture, and beat. Scrape bowl time to time to clean the sides off so ingredients are blended in the batter. Add cooled coca-cola mixture and beat. Add remainder of flour and beat until completely smooth about 3 - 4 minutes. The batter will be thick. Place batter into a 13" x 9" x " 2 greased and floured baking pan. Set pan on top shelf in a preheated 350 degrees oven for 35 - 40 minutes. Check for completed baking time with a toothpick. If the toothpick comes out clean by sticking in the middle of the cake its time to come out of the oven and cool.

&nbsp;Frosting In a bowl cream together margarine, cocoa, confectioners' sugar. Slowly add the 6 tablespoons of cream or milk. Add in vanilla. Frost warm cake. Serve with natural vanilla bean ice cream and enjoy.

Preheat the oven to 350 degrees F.

Grease a 9 x 13-inch baking pan.

Pour 3 to 4 inches of oil into a deep fryer or large pot and heat the oil to 350 degrees.

Prepare seasoned flour by combining the flour, salt, and pepper in a bowl. Stir to combine well.

In another bowl mix together the buttermilk and water.

Pat the chicken pieces dry and season them with salt and pepper.

Dip chicken pieces into the flour and shake off the excess flour.

Dip flour-coated chicken pieces into the buttermilk and shake off the excess.

Dredge the chicken again in the seasoned flour.

Place the breaded chicken on a wire rack resting on a baking sheet.

Allow the breading to set up for at least 5 minutes. This helps to set the breaded chicken.

Cook the chicken in two or three batches. The chicken will take about 15 to 18 minutes to cook for the breasts and thighs. The wings and legs will take about 12 to 13 minutes to cook.

Drain the fried chicken on a clean wire rack on top of a baking sheet.
