Easy Creamed Corn

unsalted butter

Melt butter in a medium saucepan over medium heat.  Add corn, heavy cream, salt, pepper, sugar, cayenne pepper and nutmeg.  Stir to combine.

In a small bowl or large measuring cup, whisk together the milk and flour.  Pour into corn mixture and stir to combine.

Cook, stirring constantly for 4-5 minutes, or until thickened and corn is cooked.

Season with additional salt, pepper, sugar, cayenne pepper and/or nutmeg if desired.

This is fabulous. I substitute drained southwest corn with pablano and bell peppers for the frozen corn.

Melt the butter in a pot over medium-high heat. Add the flour and cook it for a minute or so, stirring nearly constantly.&nbsp;

Whisk in the half-and-half, garlic powder, and cayenne pepper. Make sure that there&#039;s no lumps.

Stir in the corn. After about 10 minutes, it should start to bubble. Once it&#039;s bubbling, turn the heat down so it&#039;s simmering gently.  

Cook the corn for another 15-20 minutes or until the sauce has reduced and the corn is nice and plump. Keep an eye on it, and stir it occasionally.

Add salt &amp; pepper as needed (I&#039;m pretty generous with the salt).

In a large nonstick skillet, melt butter over medium-high heat. Add onion and sauté until softened and translucent, stirring frequently, about 2-3 minutes.

Add garlic and cook for 30 seconds until fragrant.

Add corn, heavy cream, sugar, salt, pepper, cayenne pepper, and nutmeg. Stir to combine and cook for about 1 minute.

In a measuring cup or bowl, thoroughly whisk together the milk and flour until flour is fully incorporated; slowly pour into the corn mixture and stir to combine. Cook, stirring constantly for 4-5 minutes, or until thickened and corn is cooked through.

Remove from heat and stir in the Parmesan cheese until melted.

Taste and adjust seasonings, if desired. Serve immediately while hot and still shiny with a little cracked black pepper and fresh chopped parsley.
