These old fashioned creamed peas are an easy side dish. Made in under 30 minutes, tender potatoes &amp; rich sauce are perfect for a weeknight!

Creamed Potatoes

In a large pot with salted water, boil...

In a large pot with salted water, boil the potatoes for 8-10 minutes or until fork tender. Don’t overcook like mashed potatoes as you want the potatoes to retain some shape. Much like potato salad.

Drain and set aside.

Return empty pot to cooktop and melt 3...

Return empty pot to cooktop and melt 3 tablespoons butter.

Stir in the flour and whisk while cooking...

Stir in the flour and whisk while cooking for 2-3 minutes to remove the raw flour flavor.

Whisk in milk and cook for 5-6 minutes...

Whisk in milk and cook for 5-6 minutes or until thickened.

Stir in salt, pepper, and garlic powder.

Gently stir in the cooked potatoes and toss...

Gently stir in the cooked potatoes and toss to coat with the creamy sauce.

Add remaining 2 tablespoons of butter and stir...

Cream Cheese Mashed Potatoes

Russet potatoes

unsalted butter

cream cheese (room temperature)

Wash, peel, and cut the potatoes into 1-inch cubes. Add the cut potatoes to a large pot and just cover with water. Add the salt and stir well. Bring to a boil, reduce to a simmer, and cook for 15 to 20 minutes or until the potatoes are tender when pierced with a fork.

Drain the potatoes and return them to the pot. Add the butter, cream cheese, and milk. Use a potato masher to mash the potatoes to your liking. (You can also use a hand mixer to mash the poatotes, just be cautious not to over mix or they may become paste-like.) Mix well. Add more milk if necessary to get them to a smooth consistency. Add salt and pepper to taste. Serve with melted butter on top, if desired.
