Horseradish Sauce Recipe

sour cream

Tbsp horseradish

Tbsp mayo

apple cider vinegar

tsp salt

tsp black pepper

Tbsp chives (finely chopped)

In a small mixing bowl, stir all of the ingredients together. Serve right away or cover and refrigerate for about 2 weeks.

Sauce for Beef Tenderloin (2 ways)

leftover pan juices

1 garlic clove, smashed

tablespoon black peppercorns, crushed

thyme

tablespoons shallot, minced

tablespoons brandy

cup beef broth (low-sodium)

cup heavy cream or dairy-free cream (see Notes*)

grated lemon zest

horseradish

mayo

garlic,

lemon juice

salt

black pepper

Place a cast iron skillet on the stove over medium-high heat and bring pan juices to a simmer. Add the smashed garlic, crushed peppercorns, fresh thyme, shallot, brandy, beef broth, cream, and lemon zest. Let simmer and reduce, uncovered, 10-15 minutes &#8211; whisking fairly often.

Once it has reduced and it is thick enough to coat the back of a spoon &#8211; remove from heat. Taste and add any salt or pepper, as desired. 

Pan Sauce:

Combine ingredients in a small bowl. Stir to combine.

Taste and add additional prepared horseradish, as desired.

Robust Whipped Horseradish Cream

heavy cream

horseradish ((more to taste))

chives (fresh; chopped fine)

lemon juice (fresh)

Kosher salt (to taste)

black pepper (to taste)

Combine

In a large bowl, whisk together sour cream, prepared horseradish, chives, lemon juice, salt, and pepper.

Whip

In a separate medium-sized bowl, beat heavy cream with a handheld electric mixer until thickened, but not yet at stiff peaks.

Fold

Using a rubber spatula, fold the whipped cream in gently a third at a time. After each pass of the spatula, rotate the bowl and make another pass. Continue in this fashion until the cream is incorporated. Taste the mixture. If required, add additional horseradish to taste.

Refrigerate

Refrigerate at least 2 hours for flavor to develop, and up to 12 hours before serving.

This was excellent.  Easy recipe to follow and make.  Perfect complement to the beef tenderloin.

Polish White Sausage in Horseradish Sauce

lb Polish white sausage (biała kiełbasa)

butter

onion,

flour

Salt and pepper

Fresh parsley, chopped (optional for garnish)

Cook Sausage

 In a large skillet, cook the white sausages over medium heat until browned and cooked through, about 10-15 minutes. Remove sausages from the skillet and set aside.

Sauté Onion

 In the same skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes.

Make Sauce

 Sprinkle the flour over the onions and stir well to combine. Cook for 1-2 minutes to eliminate the raw flour taste.

Add Cream and Horseradish

 Gradually whisk in the heavy cream, followed by the horseradish. Bring the mixture to a simmer, stirring constantly until the sauce thickens, about 5 minutes.

Season and Combine

 Season the sauce with salt and pepper to taste. Return the cooked sausages to the skillet, spooning the sauce over them to coat. Simmer for an additional 5 minutes to allow the flavors to meld.

Serve

Garnish with fresh parsley if desired. Serve hot with mashed potatoes, boiled potatoes, or crusty bread

Grab a hold of this juicy grilled Tri Tip Sandwich, topped with creamy Havarti cheese, zesty horseradish aioli, and tangy pickled red onions. This bold combination of flavors is held together with a toasty bun, the perfect vehicle to go full speed toward your mouth. All you’ll need is an ice-cold beer to wash it down.

Grilled Tri Tip Sandwich &amp; Horseradish Aioli

2–3 pound Tri Tip Roast

tablespoons Canyon Crust Beef Seasoning (more as needed)

Tangy Horseradish Aioli

unsalted butter, room temperature

Season the tri-tip steak. Season all sides of the steak generously and allow it to sit at room temperature for about 20 minutes prior to grilling. 

Prepare the grill for 2-zone cooking at around 250°F. Light the coals and set them on one side of the grill, leaving the other side without direct heat. Add chunks of hardwood if using to the coals.

Smoke the tri-tip steak. Place the steak on the cool side of the grill away from the coals. Make sure the thickest part is the closest to the fire so that the thinner side doesn’t overcook. Allow the steak to cook with the lid closed for about 40-60 minutes until it reaches around 115-118°F (for medium-rare).

Lift the lid and sear the steak. Allow the coals to start burning hotter by lifting the lid off the grill. Move the steak to the hot side of the grill and allow it to sear for 1 minute. Flip the steak and continue to repeat this process until the steak reaches your target temperature, about 128-130°F for medium rare. NOTE: If the steak is searing too quickly, move it to the cooler side for a minute to slow down the cooking. It’s best to take your time rather than burn the outside. Move it back over the heat and continue searing when ready.

Allow the steak to rest before slicing. Give it about 10-15 minutes to rest at room temperature. This will allow the juices to be redistributed. Slice against the grain.

Toast the bread on the grill

Butter up the slices of bread and grill them for 2-3 minutes, until it&#8217;s lightly toasted.

Assemble the sandwich

Slather the horseradish aioli on each side of the bread and pile on the tri-tip to one half of the sandwich. Melt the cheese by placing the sandwich half with cheese on the cooler side of the grill, or use an oven broiler with a baking sheet. Top with onions and assemble the sandwich. Enjoy!
