Here is a dressing that combines the irresistible creaminess of Caesar (without the anchovies) with the zing and herbaceousness of Italian dressing. 

Creamy Italian Dressing Recipe

mayonnaise

white wine vinegar

olive oil

garlic

Parmesan cheese (about 3/4 ounce)

sugar

basil

oregano

parsley

salt

black pepper

thyme

Place 1/4 cup mayonnaise and 3 tablespoons white wine vinegar in a medium bowl and whisk to combine. While whisking, slowly add 6 tablespoons extra-virgin olive oil and whisk until fully combined. 

Using a Microplane, grate 1 small garlic clove into the dressing. Add 1/3 cup finely grated Parmesan cheese, 1 teaspoon granulated sugar, 1 teaspoon dried basil, 1/2 teaspoon dried oregano, 1/2 teaspoon dried parsley, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper, and 1/4 teaspoon dried thyme. Stir to combine. Taste and season with more salt and pepper as needed.

Garlic powder is ground, dehydrated garlic. It is a very common seasoning. Applications include pasta, pizza, and grilled chicken. Garlic salt is simply salt plus garlic powder. (Pre-made products usually include an anti-caking agent.) Garlic powder is a common component of spice mix. It is also a common component of seasoned salt.

Place ½ cup mayonnaise, ⅓ cup white distilled vinegar, 1 tablespoon sugar, 4 tablespoons parmesan cheese, ½ teaspoon garlic powder, 2 teaspoons Italian seasoning, ½ teaspoon kosher salt, and 1 tablespoon fresh lemon juice into a blender and blend until smooth.

To Prepare the Dressing

In a large mixing or serving bowl combine the salad mix, sliced Roma tomatoes, pepperoncini peppers, thinly sliced red onion, and black olives together.

Drizzle the salad mixture with ½ cup of the salad dressing and toss to combine.

Top with croutons and parmesan cheese. Serve immediately with the dressing remaining dressing on the side.

Antipasto Chopped Salad combines romaine lettuce with fresh veggies, chickpeas, olives, mozzarella cheese, salami, and a creamy Italian Dressing. This vibrant salad is full of flavor and can be served as a first course for an Italian meal or as a main dish!

Antipasto Chopped Salad Recipe

salad greens (or more) (- cleaned and chopped)

red onion (- sliced thin)

grape tomatoes (- halved)

mushrooms

garbanzo beans (-

black olives (- sliced)

mozzarella cheese (- cubed)

red wine vinegar

Tablespoon dijon mustard

red pepper flakes

kosher salt and black pepper (- to taste)

Make dressing. Measure all salad dressing ingredients into a mason jar, and shake vigorously. Store in the refrigerator until ready to dress individual servings or the entire salad.

Prep ingredients. Clean and chop the fresh greens, slice the onion and tomatoes, cube the cheese, slice the salami into strips, and strain the chickpeas and olives.

Combine. Add all salad ingredients to a large salad bowl - the lettuce, mushrooms, tomatoes, red onion, chickpeas, olives, mozzarella and parmesan cheese, and hard salami. Toss salad to combine.

Serve salad. Add the dressing to individual salads if serving a small group. Otherwise, pour dressing over the entire salad and toss.

Hi Sue, I make a similar dressing for my Italian salads.
I often use anchovy paste or the fish itself instead of salt and I use other vinegar like raspberry vinegar. Also, I add shallots, finely chopped too.
And for those of us watching our carb intake, no sugar.

An awesome salad and the dressing is top notch.   Love this healthy option to get my meal on track.
