These Vegan Creamy Mushroom Spaghetti Squash Boats are a hearty and comforting plant-based meal, perfect for a weeknight dinner! The spaghetti squash is roasted in the oven, and the creamy mushroom mixture is made on the stovetop with a handful of super flavorful ingredients. You&#x27;d never ever know the mushrooms were dairy free and vegan - they&#x27;re SO incredibly rich and creamy!

Vegan Creamy Mushroom Spaghetti Squash Boats

spaghetti squash,

olive oil

salt and pepper

shallot,

garlic,

coconut cream*

nutritional yeast

miso paste

tahini

apple cider vinegar

dijon mustard

soy sauce

salt, plus more to taste

pepper, plus more to taste

flat-leaf parsley

chives

Begin by making the spaghetti squash. Preheat oven to 400℉. Line a large rimmed baking sheet with parchment paper. Rub the cavities of the spaghetti squash with olive oil and season with salt and freshly cracked pepper. Place cut side down on the baking sheet and bake for 45 minutes, or until the squash starts to cave in on itself, and the threads easily pull away from the skin. Scrape the threads away from the skin, suign a fork, keeping them inside the squash for serving.

While the spaghetti squash is baking, make the creamy mushrooms. Heat a large skillet over medium heat and add the olive oil. Once hot, add the shallot and garlic and sauté for 30 seconds - 1 minute or until fragrant. Increase heat to medium-high, add the mushrooms and sauté, stirring frequently, for 10-15 minutes, until the mushrooms have released their moisture and are starting to turn golden brown on the edges.

While the mushrooms are cooking, whisk together the sauce. In a medium bowl, combine the coconut cream, nutritional yeast, miso paste, tahini, apple cider vinegar, dijon mustard, soy sauce, salt, and pepper and whisk until smooth and creamy. Once mushrooms are finished cooking, add the sauce and continue to cook for another 1-2 minutes, stirring frequently, to thicken the sauce and heat it through. Season to taste with additional salt and pepper if desired.

To serve, spoon the creamy mushroom mixture into the spaghetti squash boats and top with fresh parsley and chives. Season generously with freshly cracked black pepper and serve!

Easy creamy mushroom toast

500 g (+- 1lb) mushrooms

garlic

tsp chilli/red pepper flakes

tsp dried oregano/thyme

tbsp butter

lemon

parsley (for serving)

bread

cream cheese ((optional))

Heat a large frying pan over high heat then add a tablespoon or two of olive oil.&nbsp;

Fry the mushrooms in batches, until well-browned all over.&nbsp;

Add all the mushrooms back to the pan with their resting juices and add the garlic, herbs and chilli flakes. Cook for 1-2 minutes.&nbsp;

Add the butter and lemon juice and stir well while the butter is melting to create a creamy sauce then take off the heat. Season to taste.&nbsp;

Serve the creamy mushrooms on toast smeared with cream cheese (optional).

Creamy Garlic Mushrooms

Worcestershire sauce (vegetarian) ((great if you have it!))

Slice

Give the mushrooms a quick wash. Slice length-ways and add to a pan with olive oil on medium heat, frying for about five-six minutes.

Chop the onion and garlic and add to the pan. Fry for another five minutes or so, until soft.

Combine

Add the cream, salt and pepper, parsley, soy and Worcestershire sauce.

Simmer

Bring to the boil, then reduce heat and simmer for another five minutes. Voilà!

Chop the mushrooms into three of four slices.

Melt the butter in a frying pan and add the mushrooms and thyme.

Cook cook approximately 5 minutes until the mushrooms are soft and any water released has cooked away.

Add the creme fraiche and dijon mustard and stir well. Season to taste with salt and pepper.

Toast a slice of tiger or sourdough bread and add the mushrooms on top.

Made these for my husband at the weekend as we are both trying to eat a bit better and he said they were lovely. I'm not a fan of mushrooms but they were really easy to make for him!

Easy Creamy Mushrooms

tbsp canola or olive oil

lbs mushrooms (sliced)

onions (chopped)

tbsp all-purpose flour (or gluten-free flour*)

tbsp soy or tamari sauce

vegan white wine (or more broth)

vegetable broth

tsp yellow mustard (medium hot)

yeast flakes (optional)

salt (or

½ tsp ground black pepper (or to taste)

parsley (chopped)

Heat the oil in a pan and sauté the mushrooms for 3-4 minutes until they turn slightly golden brown. Then add onions and garlic and sauté for another 3 minutes.

Sprinkle with flour and thyme and sauté briefly. Deglaze the pan with soy sauce and white wine and simmer for 1-2 minutes.

Add vegetable broth, soy cooking cream, and mustard and season with nutritional yeast flakes, salt and pepper. Cover the pan with a lid and let the sauce simmer for 10 minutes on low heat (if the sauce gets too thick, just add some more water or cooking cream).

Finally, stir in the parsley, taste again and adjust seasonings if necessary.

Serve the creamy mushrooms over mashed potatoes with celery schnitzel and green beans or with any other side dishes you like.

Preheat oven to 375.

Slice mushrooms and shallots thinly.

Heat up a medium cooking pan and add oil. Season mushrooms and onions with some salt and pepper. Saute them over medium heat until just done. Drain off the mushroom juices.

Combine sour cream, heavy whipping cream, garlic powder, salt, and pepper in a bowl and mix well. (Salt to taste but remember you salted mushrooms as well.)

Add creamy mixture to the mushrooms, stir well and heat through.

Transfer mushroom mixture into a baking dish and spread shredded cheese over the top. Bake for 10-15 minutes.

Heat butter in a pan on medium heat. Once the butter has melted, add garlic and white part of green onions and sauté till garlic becomes light golden in color on medium flame.

Add paneer cubes in a single layer in the pan and cook till it develops color. Flip and cook on another side for a few more minutes. Sautéing is optional. Check my video on how to make garlic cream sauce

Now add cream, Italian seasoning, pepper flakes, garlic powder, pepper powder, salt to taste, and mix well.

Bring this to a boil and simmer for an additional minute or two.

Add cilantro and green part of spring onions, and toss to combine.

Paneer in Butter Garlic Cream Sauce is ready. Serve and enjoy.

Creamy Tuscan Marry Me Mushrooms

Tbsp unsalted butter (28 g)

½ tsp each salt, oregano, crushed red pepper flakes, smoked paprika

Flavor Base: Heat 2 Tbsp unsalted butter, ½ tsp each salt, oregano, crushed red pepper flakes, smoked paprika, and ¼ tsp ground black pepper in a large saute pan or pot over medium heat until butter is melted, about 1 minute.

Fillings

Fillings: Add 16 oz button mushrooms, 10 oz cherry tomatoes, 4 cloves garlic, and ½ cup sun-dried tomatoes. Cook uncovered, stirring often, until mushrooms sweat out their moisture and excess liquid has evaporated, turning the tomatoes into a thick sauce, about 15 minutes.

Broth

Broth: Stir in 1 cup vegetable broth and continue cooking until sauce thickens again, about 10 minutes.

Finish

Finish: Remove from heat. Stir in 1 cup heavy cream, ½ cup grated parmesan, and 2 Tbsp fresh chopped basil. Serve warm with rice, pasta, or crusty bread.

I'm a bit of a picky eater, but I love cooking and am currently challenging my pickiness by making new recipes and this was this weeks new recipe! It was easy to make (as illustrated by me cooking it whilst being pretty ill with a fever) and very easy to understand. As I live on my own I cooked it on 1x and ate it for 3 days (probably should've halved the recipe in hindsight) which gave me the opportunity to serve it in many different ways. I served it over rice, with risotto and with mashed potatoes and cauliflower which ended up being my favourite way! It was a bit too tomatoy for me, I think because of the sundried tomatoes, but thats just my pickiness coming through. With mashed potatoes though they muted the tomato taste a bit and made it absolutely perfect for me! Would make again!
