Potato Salad Recipe

This classic potato salad recipe is seriously the best. Wonderfully creamy and tangy, it&#039;s a wonderful addition to any meal. Make it ahead of time for easy entertaining.

Potato Salad

lbs Yukon Gold potatoes

eggs

celery (chopped)

onion

chives (for garnish (optional))

jar pickles (chopped)

Mayonnaise

Dijon mustard

apple cider vinegar

salt & black pepper (to taste)

paprika (optional)

Bring a large pot of water to a boil. Carefully, add the potatoes to the pot and boil until tender but not too much. Remove potatoes to a colander, cool with water, peel the skin, and cube the potatoes. Add to a large bowl.

In another bowl, mix the pickles, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.

Add the potato salad dressing to the cut potatoes and toss gently to coat.

Finally, add the hard-boiled eggs, celery, and chopped red onion to the bowl with potatoes. Toss to coat. Taste and adjust seasoning if necessary. Sprinkle some chives on top.

This potato salad is doused in a creamy dressing and loaded with bacon. What&#039;s not to love?!

Hard-Boiled Eggs, (diced (see notes))

Red Onion, (finely diced)

Mayo

Sour Cream

Dijon Mustard

Lemon, (juice only)

tsp EACH: Sugar, Salt, (or to taste)

tsp White Pepper, (or to taste)

Potatoes

Potatoes: Place potato slices in a pot of cold water with 1 tsp salt. Bring to boil and cook until fork tender. Just be vigilant and don&#039;t over cook them or they’ll turn mushy. Drain (don’t rinse) and leave to steam dry and completely cool. Now is a good time to prep the eggs &amp; bacon.

Dressing

Dressing: In a small mixing bowl combine mayo, sour cream, lemon juice, mustard, chives, parsley, sugar, salt and white pepper.

Potato Salad: In a larger mixing bowl combine the potatoes with egg, bacon, red onion and dressing. Gently toss until everything is evenly distributed.

Serve

Serve: Cover and pop in the fridge to allow the flavours to marry, or serve up right away!

Whether you're in need of a side dish for an everyday dinner or looking for a dish to share at a potluck or outdoor meal, you'll find this lively potato salad quite pleasing.

Colorful and Creamy Potato Salad

red bell pepper (finely diced)

green peas (steamed)

green pimiento olives (halved or chopped)

scallions (thinly sliced,optional)

Salt and pepper

If you plan on keeping the skins on the potatoes, scrub them well. Microwave or bake the potatoes in their skins until done but still firm. Or, you can cut them into approximately 3/4-inch chunks and steam them in a medium saucepan until cooked to your liking, about 15 minutes.

Whichever way you've cooked or baked the potatoes, let them cool to room temperature. If you've baked or microwaved, If you prefer to peel the potatoes, slip their skins off; otherwise leave them on and cut into approximately 3/4-inch chunks. Place the potato chunks in a serving container.

Add the remaining ingredients and mix gently but thoroughly. Serve at once or cover and refrigerate until needed.

Creamy Potato Salad

russet potatoes

mayo

heavy cream

Tablespoons mustard

pepper

celery (chopped small)

Tablespoons chives (minced)

parsley (minced)

Preheat oven to 350 degrees F and line a rimmed baking sheet with foil.

Wash the potatoes well and poke several times with a fork. Place on the baking sheet and bake for 50-60 minutes until the potatoes are slightly firm still but cooked.

Once the potatoes are out of the oven cut into wedges and then the wedges in half, leaving the skin on. Let them cool slightly as you mix the dressing.

In a large mixing bowl combine the mayo, heavy cream, mustard, salt, and pepper.  Add the celery, red onion, chives, and parsley and mix again.

Add the potatoes into the sauce mixture and gently toss to coat evenly.

Eat warm or cover and refrigerate until cold.

Garnish with more chives and parsley before serving.

Deviled Egg Potato Salad

lbs russet potatoes,

celery,

red onion, finely diced

green onions, diced

yellow mustard

Place eggs in a large pot and cover with water. Bring to a boil over medium-high heat.

Once boiling, cover the pot and remove from heat. Let the eggs sit in the hot water for 15 minutes, then transfer to a bowl of ice-cold water to cool.

Peel the cooled eggs and set aside.

In another large pot, cover the cubed potatoes with water. Bring to a boil over medium-high heat.

Boil for 15-20 minutes until tender, being careful not to overcook.

Drain the potatoes and rinse immediately with cold water. Set aside to cool.

Cut the hard-boiled eggs in half and remove the yolks, placing them in a medium bowl.

To the bowl with yolks, add mayonnaise, all three mustards, relish, salt, and pepper. Mash the yolks into the mixture until smooth and well combined.

Coarsely chop the egg whites and place them in a large mixing bowl.

Add the cooked potatoes, diced celery, red onion, and green onions to the bowl with egg whites.

Pour the yolk dressing over the potato mixture and gently toss until everything is evenly coated.

Sprinkle paprika over the top of the salad for garnish.

Cover and refrigerate until ready to serve.

Tablespoon yellow mustard

chicken broth

hard boiled eggs, roughly chopped

Peel and dice 2 pounds&#32;yukon gold potatoes into cubes. Place potatoes into a large pot of water.

Boil for about 20 minutes (or until fork tender.) Take care not to overcook your potatoes – you don’t want them overly mushy.

Mix together 1 ½ cups&#32;mayonnaise, 1 Tablespoon&#32;white vinegar, 1 Tablespoon&#32;yellow mustard, 3-4 Tablespoons&#32;chicken broth, 1 teaspoon&#32;salt and ¼ teaspoon&#32;pepper in a large bowl.

Add cooked potatoes, 2 stalks&#32;celery, finely chopped, 1/2 cup&#32;chopped onion and stir gently.

Stir in 4&#32;hard boiled eggs, roughly chopped.

Cover and refrigerate at least 4 hours to blend flavors and chill.

This was the best potato salad I have ever had. I know everyone has their favorite way to make it. I used to think I had to have it with relish but I have to say, I thought this was much much better and will be the only way I eat it from now on

This really is the best! We had a potato salad contest at work. Everyone brought their Mom or their Grandma's family recipes but I took this one. My entry got a unanimous vote as the best potato salad. I know everyone swears by how their Mom or Grandma made it (because you love what you grew up with, right?) but this one is the one that got the blue ribbon - ha!
