Today I&#039;m sharing a recipe for truly crispy chocolate chip cookies. Crunchy, snappy, and soo good, these are easy to make and use a surprising (but easy to find!) ingredient. No chilling, they can be ready in under 30 minutes! Recipe includes a how-to video!.

Truly Crispy Chocolate Chip Cookies

unsalted butter (softened (226 grams))

sweetened condensed milk ((237 milliliters))

sugar ((200 grams))

light brown sugar, firmly packed ((200 grams))

vanilla extract

all-purpose flour¹ ((280 grams))

baking soda

salt

semisweet chocolate chips ((170 grams))

mini chocolate chips ((110 grams))

Preheat oven to 325F (165C) and line a baking sheet with parchment paper.

In a large bowl using an electric mixer (or in a stand mixer fitted with a paddle attachment) beat butter until creamy. Add condensed milk, sugars, and vanilla extract and beat well until creamy and well-combined (about 30-60 seconds on medium speed). Pause to scrape the sides and bottom of the bowl to ensure all ingredients are well-combined.

In a separate bowl, whisk together flour, baking soda, and salt.

With mixer on low speed, gradually add flour mixture to the butter mixture until completely combined (scrape sides and bottom of bowl with spatula as needed).

Use a spatula to stir in chocolate chips.

Scoop cookie dough by Tablespoon-sized scoop and drop onto prepared baking sheet (for more uniform, round cookies, you can roll cookies into balls between your palms before placing on baking sheet, this will be a bit messy as the dough is very soft), spacing cookies at least 2” apart.

Transfer to 325F (165C) preheated oven and bake for 17-18 minutes or until cookies are golden brown all over (if your oven bakes unevenly, rotate baking sheet halfway through). Cookies will still be soft at their centers until they are cooled completely.

Crispy Chocolate Chip Cookies

Pure Vanilla Cookie Easy Recipe that&#39;s soft and gooey in the middle, and crispy on the outside. Easy to make, and a pure vanilla joy!

Pure Vanilla Cookie Easy Recipe

/ 2/3 cup of butter (soft at room temp)

/2/3 cup of light brown sugar

/ 3/4 cup + 2 tbsp of caster sugar

plain flour

bakin powder

tbsp vanilla extract

For The Icing: (optional)

powdered sugar

water

Beat the sugars and butter together until creamy.

Add the egg, vanilla, mix, then fold in the flour, bicarb, baking powder and salt.

Chill the cookie dough in the fridge for 30 minutes.

Preheat the oven to 360F/180C and line 2 baking sheets with parchment paper.

Shape the cookie dough to 2.30oz/65g balls. Should make about 10. And place 2-3 each per baking sheet with plenty of space between them. Do not flatten them, they will flatten naturally when they bake.

Bake in the oven for 13 minutes for gooey middle, or 15-16 minute for crispier cookies.

Let them cool on the sheet for 10 minutes before moving them and repeating the process with the rest of the cookies.

If you would like to go for the icing, mix the powdered sugar with vanila and touch of water to reach the right thick consistency. Then spread/pipe the icing on top of the cookies.

Beat the sugars and lard together until creamy.

Add the egg, mix, then fold in the flour, bicarb, baking powder. Mix gently to combine.

1 heaped tbsp cookies are scooped from the dough and placed onto the baking sheets. Place 5 each per baking sheet with plenty of space between them. Do not flatten them, they will flatten naturally when they bake.

Bake in the oven for 11 minutes.

Let them cool on the sheet for 5-10 minutes before moving them to a wire rack and repeating the process with the rest of the cookies.

These thin and crispy Lace Cookies are a quick and easy treat made with just 7 ingredients. They're sweet, buttery caramels in crispy cookie form!

Lace Cookies

tbsp (84 grams) unsalted butter

(150 grams) packed brown sugar

tbsp milk

tsp vanilla extract

(43 grams) all-purpose flour

almond flour

tsp salt

Preheat oven to 350°F and line a cookie sheet with parchment paper or silicone baking mats.

In a medium-sized saucepan, combine butter, brown sugar and milk. Cook over low heat, stirring regularly, until butter and sugar have melted.

Once butter and sugar are melted, turn heat up to medium and cook mixture just until it begins to boil.

Remove from heat and add vanilla extract, flours and salt, stirring until completely combined.

Allow to cool for about 5 minutes, then drop by 1 1/2 teaspoons (half a tablespoon) onto prepared cookie sheet. Space cookies about 2-3 inches apart. The cookies will spread quite a bit in the oven. The cookie dough mixture will thicken as it cools, but that won&#8217;t affect the outcome of the cookies.

Bake for 7-10 minutes, or until the cookies are golden in color. Keep an eye on them towards the end of baking because they can burn quickly.

Allow cookies to cool for 3-4 minutes or until they are firm enough to move, then transfer to a cooling rack to finish cooling.

Great recipe to have on hand when emergency cookie requests are made by grands! Are these also able to be rolled up and then cooled in order to make a cigar shape to dip?

So a few things... 
1. I LOVED the taste of this batter! 
2. I used Anthony's unblanched almond flour. Do not recommend doing this. Lol super hard to tell when they were golden brown, and it gave it a mealy texture (which I didn't mind! It got me thinking of russian tea cakes.....) but I don't think that texture was intended in this recipe. 
3. I also used coconut milk, instead of regular. Not sure if that could have contributed to the following issues I had. 🤔
4. I just greased the pan with spray grease, like Pam. First pan I think was in the oven a little too long, and not greased enough. They ended up being a little too crunchy, and stuck horribly! And I only let them cool about 3 minutes before trying to move. 
5. Second and third pan, I heavily greased, and didn't bake as long. They still stuck, but not as bad. When I tried to transfer them, they ended up looking kind of scrunched. Lol   I also may have greased them a little too much, as I could taste the Pam. 😂  

Sooo...I'm guessing the parchment paper or silicone mat recommended, is a necessity for this. Lol

Yes, because of the nature of these cookies, you'll need something nonstick, like parchment paper or a silicone mat.

Really taste and texture great. Mine just came out very buttery (greasy) on the bottoms, which is why I didn't end up coating them with chocolate, like I wanted to. Is this normal? Can I use less butter in the recipe?

Swedish Oatmeal Cookies (Havreflarn) are light and crispy with a delicate crunch.  They are the perfect accompaniment to an afternoon cup of tea or coffee!

Swedish Oatmeal Cookies (Havreflarn)

Preheat oven to 350 degrees and line two rimmed baking sheets with parchment paper.  Set aside.

Place butter in a medium skillet (preferably not nonstick or cast iron so that you can more easily see the color change) and heat over medium low heat, swirling the pan frequently.  Once the butter has melted, continue to cook, swirling the pan frequently, until the butter has a nutty aroma and is golden brown in color.  Don’t walk away from the stove! Brown butter can go from perfect to burnt in a matter of seconds. Immediately transfer brown butter to a bowl to cool.

Whisk oats, flour, baking powder and salt together in a medium bowl.  Set aside.

Combine egg, sugar and vanilla in a large bowl and whisk until sugar is dissoved and mixture is frothy.  Add brown butter and whisk until everything has just come together. Add dry mixture and stir to combine.  Let the dough rest at room temperature for 10 minutes prior to making the cookies.

Drop heaping teaspoonfuls of batter onto prepared cookie sheet, leaving at least 2 inches between each cookie (they will spread considerably).  Bake 10-12 minutes, or until the cookies are set and the edges are golden brown. Cool for a few minutes on the baking sheet and then transfer to a wire rack to cool completely.  Repeat with remaining batter.

A simple homemade recipe that creates a healthier alternative to store-bought cereal. It’s quick to make and easy to grab and eat, that you might end up eating it all as a snack! You can also bake the dough as larger rectangular or round cookies!

Sourdough Cereal Snack (GF/V)

GF sourdough starter (125 grams)*

GF flour combo (approx. 125 grams)**

coconut palm sugar (40 grams)

golden flaxseed meal

coconut oil***

GF baking powder

fine sea salt

cinnamon powder

pure vanilla extract (or 1/4 teaspoon pure vanilla powder)

plant milk (soy, coconut, hemp, almond, rice)****

Before you begin, watch the How-To Video YouTube. It will help you make this Sourdough Cereal Snack!

Step 1

 Preheat your oven to 350° F and get some unbleached parchment paper (2 sheets approx. 18 x 13 inches), rolling pin, large knife, pizza cutter or cookie cutter ready. Step 2In a medium bowl, combine and mix all the ingredients until the dough comes together without dry bits. TIP: Add the plant milk in increments until you get the right consistency. You want enough liquids to help you stick everything together without making everything mushy and wet.Step 3Place the dough in between two sheets of parchment paper. With a rolling pin, press down and roll out the dough until very thin, 1/8-in is great! The thinner you roll the dough the crispier the cereal will be. TIP: You can divide the dough into two smaller portions if it makes it easier for you to roll out. Carefully peel off the top sheet. Step 4With a large chef knife, pizza cutter or cookie cutter score your dough to your preferred cereal or crispy cookie shape. If making cereal just make sure that each piece is bite-size. See post pictures and or watch the video to help you with this step. Sprinkle your dough with more cinnamon, coconut palm sugar or maple sugar if you wish—it makes it extra yummy!Step 5Transfer the cut dough (with bottom parchment paper) to your baking sheet. Bake in preheated oven on the middle rack for 30-35 minutes until the cereal (or cookies) is baked throughout and the edges are crisp. Keep on eye on the cereal. Because there’s sugar it could burn if over-baked. Cool on a wire rack, break pieces apart and enjoy! 

Another great recipe! Super easy to make &amp; my 8 year old devoured them. 🤩 (I replaced applesauce for the oil.)
