Delicious homemade slow cooker baked beans even better than the ones you grew up on! This easy baked beans recipe uses three types of canned beans, is perfectly sweet with a kick of heat if you&#039;d like, and is easily made vegetarian. Add them to nachos or quesadillas, serve them as a dip and more!

Homemade Slow Cooker Baked Beans

bacon,

yellow onion, diced

garlic,

(15 ounce) can pinto beans, rinsed and drained

kidney beans, rinsed and drained

ketchup

molasses

spicy bbq sauce

dark brown sugar (or sub coconut sugar)

worcestershire sauce

yellow mustard (or sub dijon)

Cook your bacon: add diced bacon to a large skillet or pan and place over medium heat, cook bacon until crispy and golden brown. If the pan starts to smoke at any point, simply lower the heat. I always cook my bacon on medium low heat. Once bacon is done, blot with a paper towel to absorb excess grease. Allow bacon to cool.

Drain the bacon grease, leaving a little on the bottom of the pan and add in the diced onion, cooking for 5-8 minutes or until they are slightly golden. During the last minute of cooking, add in your garlic and cook for 1 min. Remove from heat and set aside.

Add the drained and rinsed pinto, kidney and northern beans to the slow cooker, then add in the bacon and onion/garlic. Next add in the ketchup, molasses, bbq sauce, brown sugar, worcestershire and yellow mustard. Stir with a wooden spoon until everything is well combined. Cook on high for 3-4 hours or low for 6-7 hours.

Preheat oven to 375 degrees.

Add bacon to a large pot. Turn heat to medium and cook, stirring often until crisp. Remove to a plate. Remove only some of the excess grease. Add onion to pan and sauté for 4 minutes. Add bell pepper and garlic and cook for 2 more minutes. Add remaining ingredients and bacon to stir to combine. Taste and add additional salt and pepper, if needed.

Pour mixture into a 9x13 baking pan and bake, covered with foil, for one hour (or up to 2 hours, if you want them thicker consistency). Uncover and bake for 10 more minutes. Allow to cool for at least 15 minutes before serving, for the sauce to thicken as it cools.

Store leftovers in the fridge for up to 1 week.
