Keto Crockpot Pizza Casserole

Single serving low carb crustless pizza bowl filled with classic supreme pizza toppings. Gluten free and ready in minutes!

Pizza Bowl For One

olive oil

Italian sausage

onions

green bell peppers

garlic (, minced)

marinara sauce (, divided)

Preheat the oven to 350°F (177°C).

Heat the oil in a 10-inch skillet over medium heat. Add the ground Italian sausage and break it apart with a spatula. Cook, stirring occasionally until the sausage has browned and has cooked through, about 5 minutes.

Add chopped onions, chopped green bell peppers, and minced garlic to the pan and cook for 2 minutes, stirring frequently until the onions have softened. Using a slotted spoon, scoop the sausage and vegetables onto a paper towel-lined plate to drain off the grease.

Coat the bottom of a 10-ounce ramekin with 1 tablespoon of marinara sauce.

Line the bottom of the dish with the pepperoni slices.

Add the sautéed sausage and vegetables to the dish, smoothing it out into an even layer.

Spoon the remaining marinara sauce on top of the sausage layer.

Top with shredded mozzarella cheese and place the ramekin on a rimmed baking sheet to catch any possible spills. Bake for 10 minutes.

Remove the pizza bowl from the oven and let it rest for 5 minutes before enjoying it.

Pizza Quesadilla

flour tortillas

pepperoni (sliced)

mozzarella cheese (grated)

butter

marinara sauce (for dipping)

olives

peppers

mushrooms

Heat a large skillet over medium heat. If you use higher heat the outside of the tortilla will be brown and the insides will still be cold. 

Add butter and let it melt.

Put a tortilla in the pan. You can use flour, gluten-free, low carb, corn, or whole wheat tortillas. 

Sprinkle a thin layer of grated mozzarella cheese over the tortilla.

Add a layer of pepperoni slices over cheese. You can also use other meats like chicken, steak, ham, etc. 

Add vegetables or pineapple (optional)

Sprinkle on another layer of cheese.

Place another tortilla on top.

Continue cooking until the bottom tortilla is golden brown, then flip the quesadilla.

Cook the other side until it’s golden brown. 

Move to a cutting board to cool for one minute. Cut into wedges.

oz baby bella mushrooms (optional)

Pizza Blend Cheese

Preheat your oven to 425 degrees

Heat a large skillet to medium-high heat. Brown the sausage meat, then set aside.

In the same pan that you browned the sausage meat, add the olive oil, vegetables, salt, and pepper. Saute the vegetables until translucent &amp; tender.

Layer the casserole in a 9x13 baking pan. I made two layers with 1/2 sausage meat, 1 cup tomato sauce, 1/2 the vegetables, 1/2 the cheese, and 1/2 the pepperoni.

Bake in the oven until the top is browned and the cheese is fully melted (~15-20 minutes).

We love this!  I add some black olives.  I think next time I may use 2 peppers too, I feel like a little bit more veggies would be even better.  We also use 4 cups of cheese in ours since it comes in a 4 c bag.
