Crustless Quiche with Spinach

frozen spinach*

Preheat oven to 375°F. Grease a 9” round pie dish.

Place the spinach in a colander and let warm water run over it until it is thawed, about 1 minute (some brands take a bit more effort to defrost: you can also use a microwave if necessary). Then use your hands to squeeze out as much excess liquid as you can.

In a large bowl, whisk the eggs. Then stir in the oregano, salt, garlic powder, cottage cheese, grated Parmesan cheese, spinach, and roasted red pepper. Add a few grinds of fresh ground black pepper if you like.

Pour the egg mixture into the prepared pie dish. Sprinkle the top with a few tablespoons of additional chopped roasted red pepper.

Bake the quiche for 25 to 30 minutes, until set in the center and golden around the edges. Allow to rest for at least 15 minutes before serving. (Storage info: This saves well! Store refrigerated for up to 5 days: you can eat it cold, room temp, or re-warm it. Try it in a sandwich!)

This was delicious and so easy to make. It was perfect for a weeknight dinner. I will definitely be making this again.

We did this for Christmas morning.  It worked great!  But I did have to bake it 38 minutes.

Easy Asparagus Keto Quiche

Pieces of Green Asparagus

Eggs

Yogurt

Parsley

Camembert Cheese

(2 Cups) Shredded Mozzarella

(1 Cup) Almond Meal or flour

Tablespoon (5 grams) Garlic Powder

Prepare fathead dough

Place a pot on the stove and switch on the medium heat

Add Mozzarella

Once the pot is heated, add shredded mozzarella and let it melt completely using spatula to mix from time to time

Add Almonds

When mozzarella has melted fully (check video), add almond meal and garlic powder and knead with spatula until both gets properly incorporated

Add Egg

After you are satisfied with the dough, switch the heat off completely and add egg.

Workout the dough

Knead the egg into the dough to incorporate it fully with spatula

Prepare filling

Mix Eggs, Yogurt and Parsley with a hand held mixer in a bowl.

Add asparagus pieces

Add 2 pre-cut asparagus pieces and mix again with spatula

Heat up oven

Oil your casserole ( I have used 10 inch Quiche casserole) a bit to prevent crust sticking while serving

Spread the dough

With oiled hand or base of a small Mason Jar (oiled as well) spread the Fathead dough throughout the casserole evenly. Do not forget sides as well

Make holes

Using fork, make small holes throughout the whole crust.

Add filling

Spread cheese

Cut all 8 remaining Green asparagus to half and place it on top of the filling. Once done, add the Camembert Cheese throughout the whole dish

Easy Crustless Quiche Recipe

Olive Oil (or preferred oil)

Garlic (minced)

Onion (diced (about 1 cup))

Bell Pepper (diced (about 1 cup))

Mushrooms (sliced (about 2 cups))

Kale (or Spinach) (chopped)

Milk (any variety)

Sea Salt

Black Pepper

fresh Thyme (or 1/4 tsp dried thyme)

Shredded Asiago Cheese (or preferred cheese)

Preheat oven to 350 degrees Fahrenheit. For air fryer ovens, use the same temperature and select the bake setting.

Coat a 12 x 10 baking dish with cooking spray or oil. Set aside.

In a large skillet, heat OLIVE OIL over medium-high heat.

Sauté GARLIC, GREEN ONION, and BELL PEPPERS until slightly tender.

Add MUSHROOMS and KALE. Sauté until tender.

Transfer cooked vegetables to the prepared baking dish and set aside.

In a mixing bowl, whisk together EGGS, MILK, SALT, PEPPER, and THYME.

Add egg mixture to the baking dish. Sprinkle CHEESE over the top.

Bake uncovered 35-45 minutes in a conventional oven, or until eggs are set. For air fryer ovens, bake 25 to 30 minutes

Carefully transfer quiche out of oven and rest for 5 minutes. Serve warm.

To store, allow quiche to cool completely and store in an airtight container up to 5 days.

Preheat oven to 350 degrees F and grease a quiche, pie, or casserole dish.

Add a pinch of salt to the grated zucchini and let sit for a few minutes. Then, squeeze as much water out of it as possible by wringing it in a clean kitchen towel or paper towel.

In a large bowl, whisk together the 4 eggs, milk (2 cups), flour (3/4 cup), and baking powder (1 teaspoon) until well combined.
