The ultimate companion to any curry, this cucumber raita is incredibly quick and cooling - a refreshingly perfect side dish.

Cucumber Raita

Greek yogurt ((other yog will work too))

cucumber ((grated))

mint, fresh

salt

lemon

Peel then grate the cucumber.

Place into a bowl and squeeze out excess water with your hands by pressing the grated cucumber towards the bowl rim. Pour away the unneeded water.

Now mix in the yoghurt. Chop the mint leaves and add along with the lemon zest and salt (only the zest, no lemon juice necessary).

Done!

Gather and Prepare ingredients

If using English, Persian or Pickling cucumbers, leave the seeds in. If using regular cucumbers, peel and slice in half. Using a teaspoon, scrape off the seeds from the core. Finely dice the cucumber using a vegetable chopper or by hand.

Place yogurt in a mixing bowl. Whisk it until smooth. Add salt, chaat masala and roasted ground cumin.

Add sugar, if yogurt is sour.

Add chopped cucumber.

Finally, add chopped herbs and mix well. Check taste and adjust seasoning to your liking.

Serve cold as a side accompaniment to Indian entrees or as a dip for vegetable sticks, papadums or pita chips.

Rinse cucumber and peel it. Chop to tiny bite size pieces (about ¼ to ½ inch). If you prefer you may even grate it. Grated cucumbers let out moisture so make sure you use only greek yogurt if you want to grate them. Otherwise cucumber raita becomes runny.

Also fine chop coriander and mint leaves (optional).

Deseed the green chilli and chop.  (optional)

Preparation

Whisk chilled yogurt in a large mixing bowl.

Add chopped cucumber, green chilies, coriander leaves, mint leaves and salt. Mix all of them.

Taste test and add more salt if needed. Drizzle cumin powder, ground black pepper &amp; chaat masala (optional).

Serve cucumber raita as a side in an Indian meal. It is usually eaten with Vegetable biryani or chicken biryani.

Cucumber raita is best served fresh but can be chilled for a few hours.

You can garnish it with some coriander leaves or mint leaves.

With Indian meals: Cucumber raita can be served as a side dish with some vegetable curry, lentils, with a side of roti or naan.

With paratha: You can serve it with stuffed parathas as well. Aloo paratha, gobi paratha, broccoli paratha, mooli paratha or any stuffed paratha tastes pairs nicely.

Rice: Serving it with biryani and pulao makes it so tastier. It also tastes great with khichdi, dal and steamed rice.

With Veggies: And yes, you can also serve cucumber raita as a dip with fresh, roasted or baked veggies.Storage

Leftovers can be stored only for a day in a refrigerator. It is best had fresh and the taste changes when you refrigerate it. So only make amounts of it that you can finish in one day.
