The Nanaimo bar is a tremendously sweet, no-bake layered bar cookie from Canada made almost exclusively of packaged ingredients. The buttercream layer gets its yellow hue from custard powder, a vital ingredient that makes this a true Nanaimo bar. Use an offset spatula to give the chocolate top a surface as smooth as freshly Zambonied ice. The novelist Margaret Atwood included this recipe, from the chef Susan Mendelson, in her “Canlit Foodbook,” a fund-raising book that featured food from literature, as well as author recipes. Ms. Atwood prefers walnuts in this recipe, but any combination of walnuts, almonds or pecans will do. We’ve added a smidge more cocoa and the optional addition of salt — but leave it out for the true Nanaimo bar experience.

Nanaimo Bars

unsalted butter (1 stick), cut into pieces

granulated sugar

cocoa powder

vanilla extract

graham cracker crumbs

unsweetened shredded coconut

50 grams finely chopped walnuts, almonds or pecans (or a mixture)

unsalted butter (1/2 stick), at room temperature

heavy cream

custard powder,

confectioners’ (icing) sugar

semisweet chocolate,

unsalted butter

Flaky sea salt, for sprinkling (optional)

Line an 8-by-8-inch (20-by-20-centimeter) metal baking pan with parchment, allowing parchment to overhang by about 2 inches (5 centimeters) on two sides.

Prepare the base: In a double boiler, or a heatproof bowl placed over a saucepan of boiling water, whisk butter with granulated sugar, egg, cocoa powder and vanilla until melted. Continue whisking until mixture thickens slightly, 1 to 2 minutes. Remove from heat.

Stir in crumbs, coconut and nuts until the mixture is well combined and resembles wet sand.

Transfer mixture to the parchment-lined pan and use your fingers to press it into an even layer. Transfer pan to the refrigerator to chill until firm, at least 15 minutes.

Meanwhile, prepare the buttercream: In a stand mixer fitted with a paddle attachment, cream butter on medium speed for about 1 minute. Add heavy cream and custard powder and mix until combined, scraping sides and bottom of the work bowl as needed. Add 1 cup confectioners’ sugar and mix on low until incorporated. Add remaining confectioners’ sugar and mix on low until combined, scraping the bottom of the bowl as needed, then mix on medium-high speed until smooth, light and fluffy, 2 to 3 minutes.

Remove pan from refrigerator. Dollop the buttercream on top of the base layer then gently spread it evenly on top using an offset spatula. Transfer pan to the refrigerator to chill until buttercream is set, about 30 minutes.

Prepare the topping: In a small, heavy saucepan or a double boiler, heat the chocolate and butter over low, stirring often, until melted and evenly combined, 2 to 3 minutes. Remove from heat. Take pan from refrigerator and pour chocolate on top of buttercream layer. Working quickly and carefully, spread the chocolate evenly over the buttercream using an offset spatula. Sprinkle with flaky sea salt, if using.

Return pan to refrigerator and chill until chocolate hardens, about 25 minutes.

To serve the bars: Lift excess parchment to remove Nanaimo square from the pan. Cut into 16 2-inch (5-centimeter) squares. Store bars in the refrigerator until ready to serve. Bring to room temperature before serving. Store remaining bars in the refrigerator for a few days, or wrap well and freeze.

Homemade Custard Powder Recipe

Add icing sugar, milk powder, cornstarch, vanilla powder, and yellow food color powder to a medium-size mixing bowl.

Mix well using a wire whisk or a spoon.

If the vanilla powder is not available, skip adding it. You can add some vanilla extract while making the custard instead.

Transfer the mixture to a clean and dry glass jar and store it in a cool and dry place.

Make Custard Powder

To make a warm and creamy custard, heat 250 ml of whole milk in a pan over medium-low heat.

Stir together 2 tablespoons of custard powder and ¼ cup of chilled milk to make a lump-free mixture. If there are lumps in the mixture, pass it through a fine-mesh strainer.

Add the vanilla extract and the yellow food color if you have not added these two while making the powder. If added, then skip this step.

Pour this mixture slowly into the pan with the milk and stir continuously until the custard thickens.

Remove the pan from heat and cover it using a cling wrap to avoid the formation of a cream layer on top.

Chill the custard and serve with fresh fruits and jelly.

It might seem silly to publish a how-to for a product that contains instructions on the packet. But I&#39;ve seen so many Bird&#39;s type custard disasters and explosions that it doesn&#39;t feel all that daft at all. So this how to make custard powder custard guide is my way of making this traditional British treat fool proof - quickly, easily and in the microwave.

How to Make Custard Powder Custard (Microwave)

tbsp Custard Powder

Milk

Measure 3 tbsp Custard Powder and 2 tbsp Sugar into a medium sized mixing bowl.

Pour in a little of 500ml Milk and mix until the powder and sugar makes a paste.

And a little more milk to make a looser liquid.

Pour the rest of the milk in and whisk until fully combined. Make sure to scrape the bottom and sides of the bowl to make sure there is no paste or powder left unmixed.

Note – You can do this using a large microwave proof measuring jug. Just fill the jug to just over 500ml when adding the milk.

Microwave on high for 3 minutes.

Take the bowl out the microwave and give the custard a whisk.

Microwave on high for a further 2 minutes. The custard should be at least partially thickened by now – whisk it all together again so it all one texture.

Keep microwaving on high in 30 second bursts and whisking again each time until your preferred thickness. If it is very nearly where you want it, reduce to 10 seconds per time.

Serve as desired.

Just bought my first can of Bird's custard powder. Didn't stir it enough after 3 minutes and it boiled over in the microwave at 5 minutes. Should have read your article first. But all was not lost - just a little. It is really, really good. I love custard and what an easy way to get my fix in. Do people eat this by itself? (I love plain custard.) If I use half the milk, will it set up like a regular milk pudding?

Take All purpose flour,semolina, milk powder, sugar,yeast in a bowl and whisk it well

Now add water in it and make a smooth paste.cover it with plastic wrap and let it sit for 30 minutes.

After 30 minutes it will rise remove plastic wrap and mix it well again.better to blend it in a blender.

Now take 1scoop of better and add in a non stick pan.when bubbles starts remove it from pan and cover with any towel or cloth.make 15 small qateyef with this better.

For filling.take 1cup milk,add custard powder,corn flour and mix it let this mixture to boil.then add sugar in it and cook it untill it becomes thick in consistency.as shown in picture.

Now add custard filling in white side of qatayef and brown side should be out. close it half with the help of fingers.as shown in picture.

You can also used whipped cream or hanged cheese along with thick cream.chopped walnuts and pistachios also use for filling...

Make sugar syrup. add 1/2 cup of sugar and 3/4 cup water in pan bring it to boil then add 2 lemon slice and 1tbsp of rose water in it.when it becomes thick in consistency.remove it from flame.

Add sugar syrup on the top while serving.... sprinkle chopped pistachios..
