Try this easy veggie salad for a great source of iron and enjoy as a light lunch or supper. It uses gluten-free quinoa for an extra dose of protein

Quinoa salad with grilled halloumi

olive oil

red onion

pepper peppers

quinoa

vegetable stock

flat-leaf parsley

lemon

sugar

pack halloumi cheese

Heat 1 tbsp of the oil in a medium saucepan. Cook the onion and pepper for a few mins, then add the quinoa and cook for a further 3 mins. Add the stock, cover and turn the heat down to a simmer. Cook for 15 mins or until soft, then stir through half the parsley. Heat the grill.

Meanwhile, mix the lemon zest and juice with the remaining parsley and oil, and a large pinch of sugar and salt. Grill the halloumi until both sides are golden and crisp. Serve the salad with the grilled halloumi and the dressing poured over everything.

(1 cup) burghul

can no-added salt lentils,

red onion, finely chopped

coriander leaves

250.00 ml chopped fresh continental parsley leaves

(1/3 cup) flaked almonds, toasted

(1/4 cup) currants

(1/2 cup) dried cranberries, coarsely chopped

(1/4 cup) drained capers, coarsely chopped

milliliters (1/4 cup) fresh lemon juice

Rustle up a quick salad for two with green beans, chickpeas and tomatoes, topped with decadent fried cheese

Warm halloumi, chickpea & lime salad

½ red chilli deseeded and finely sliced

½ red onion

ready-roasted peppers

cherry tomato halved

rocket

parsley

halloumi cheese sliced

Cook the beans in a pan of boiling water for 3 mins until just tender, adding the chickpeas for the final min of cooking. Meanwhile, make the dressing: in a large bowl, whisk the lime juice and zest with 3 tbsp of the oil and the chilli. Season. Drain the chickpeas and beans and, while warm, toss with the dressing.

Pour boiling water over the red onion, leave for 5 mins to soften, then drain and rinse. Add the peppers, tomatoes, rocket, parsley and softened onion to the bean bowl. Toss to coat everything in the dressing, then divide between 2 plates.

Heat the remaining oil in a frying pan, add the halloumi slices and fry for about 1 min on each side until golden. Place a few warm halloumi slices on top of each salad and serve.
