These absolutely delicious vegan lemon blueberry pancakes need just 8 ingredients! Perfect for summer brunch or year round. Can be gluten free and Top 8 allergy friendly!

Vegan Lemon Blueberry Pancakes

lemon

dairy free milk

flour (*see post

tbsp baking powder

tbsp sugar

salt

tbsp coconut oil, (melted)

blueberries

butter coconut oil,

vegan butter, (melted)

lemons

sugar

Zest lemon. Then, set aside. 

In a bowl or cup, juice lemon and add in dairy free milk. Let sit for 10 minutes.  *This makes a dairy free buttermilk.

In a large bowl, add lemon zest, flour, baking powder, sugar and salt. Whisk together. 

Add in melted coconut oil, and the buttermilk once ready. Whisk again, but careful not to over mix. 

Finally, fold in your blueberries. 

Once batter is mixed, allow it to sit for 5 minutes. 

Over medium low heat, add some dairy free butter or coconut oil to a skillet and mix around to coat the bottom.

Add in 1/4 to 1/2 cup of mixture and let cook for 2-3 minutes or until golden brown on the bottom. 

Flip and let cook for 1-2 more minutes. 

Repeat with remaining batter.  

Whisk together the fresh squeezed lemon juice and vegan butter.

Whisk in 1/2 cup of powdered sugar at a time until desired consistency.

This delicious vegan breakfast skillet recipe is the perfect option for a filling and delicious skillet potatoes recipe. Whether you are going to a brunch or wanting a quick breakfast skillet at your house, this will be a hit!

Vegan Breakfast Skillet

vegan butter ((can sub for coconut oil))

potatoes

red pepper

green pepper

yellow pepper

orange pepper

sweet onion

baby bella mushrooms, (optional)

tsp pepper

tsp salt

tsp Italian seasoning

garlic powder

lb Optional: Vegan Sausage

block extra firm tofu

tsp black pepper

turmeric

tsp kala namak (black salt)

spinach, (optional)

maple syrup

Vegan Cheese

Sides/Toppings: Cilantro, Salsa, Sliced or Mashed avocado, Ketchup

Cut potatoes to be an equal size of each other. Soak in water for 30 minutes.*

While soaking, cut up the peppers and onions. You can leave large or dice, but try to ensure they are the same same roughly.&nbsp;

Dice the mushrooms if adding. 

Once the potatoes have soaked for 30 minutes, drain throughly. Pat dry with a towel. 

Over medium high heat, melt coconut oil in a large skillet. 

Add the potatoes in a single layer. Depending on the size of skillet this may need done in batches. DO NOT overcrowd the potatoes or they will stick.

Cook for 2 minutes - DO NOT TOUCH FOR 2 MINUTES! Flip, cook another 2 minutes. Stir again, cook 2 more minutes. (Do this a total of 10 minutes)

Reduce heat to medium low. Add in peppers and onions. Stir together.

If adding sausage and want it crumbled, add it in at this point by breaking off small pieces and adding it in. Cook 4 minutes.

Add in all your seasonings (salt, pepper, Italian seasoning and garlic powder) and stir to combine

If you are adding egg product, do it here. Slide the mixture to one side of your skillet, add the crumbled tofu to the empty side along with your turmeric, kala namak and pepper on top of the tofu. 

Scramble together until all the tofu is yellow in color.  Let cook for 1 more minute. 

Combine both sides together. 

Add in the spinach and mushrooms and cook for 2 minutes.&nbsp;

Drizzle maple syrup and cook until spinach has wilted.

Top with vegan cheese if desired.

*If you want sausage patties instead of crumbled, you can remove the skillet potatoes recipe from the skillet and place on a serving dish. Add the sausage patties to the skillet and cook according to directions.

Serve with a side of sliced or mashed avocado. Top with cilantro or a side of salsa if desired. Or ketchup.

Gluten Free Dairy Free Breakfast Ideas (savory and sweet options) for individuals following a clean eating diet or those who are looking for new healthy breakfast ideas to try. These gluten free dairy free breakfast recipes are made with wholesome clean ingredients, and without refined sugar. They are easy and simple to make ahead - great for an elimination diet and even for kids!

Gluten Free Dairy Free Breakfast Ideas Healthier Than Store-bought

strawberries

walnut butter (raw)

Cup cashew yogurt

Tbsp raw organic honey

Eggs, (organic, pasture raised)

Tbsp Buckwheat groats (cooked)

Onion (chopped)

Cremini mushrooms (chopped)

Bell pepper (chopped)

Salt & pepper

Chives

big leaf collard greens (on the side)

brown rice flour

eggs (organic)

1/2-1 avocado (mashed)

onion

coriander powder (optional)

curry powder (optional)

lemon juice (optional)

beet root

med eggs (organic, pasture raised)

flour almond flour,

salt + pepper

avocado (sliced)

cucumber

pumpkin seed butter (or any nut butter)

med bananas (mashed)

sorghum flour

tsp vanilla extract

tsp baking soda

tsp apple cider vinegar

pumpkin

zucchini (shaved)

eggs (organic, pasture raised)

cherry tomatoes (sliced)

cauliflower florets (chopped)

chives

salt & pepper

Mix in a blender all ingredients.

Heat a large skillet over medium, spoon 2 to 3 tablespoons of batter. Cook 1-2 minutes on each side. Layer the pancakes with slices of avocado and cucumber, drizzle with seed butter and serve!

Beet Pancakes:

To make the gluten free and dairy free crepes see this recipe. Spread some walnut butter or a seed butter and some fresh cut berries, roll the crepes or fold into triangles.

Drizzle some unsweetened cashew yogurt or your preferred dairy free yogurt and a sweetener of your choice. I opted for raw honey.

Dairy Free Gluten Free Stuffed Crepes

To the eggs, add the onions (chopped), cooked buckwheat groats (or other gluten free cooked grains), salt and pepper to taste. 

Mix well and pour into a preheated skillet. Cover and cook for 4-5 minutes at very low heat until the eggs are no longer liquid and the bottom has browned.

In a separate skillet saute the chopped onions, mushrooms, bell peppers until tender. Season with salt and pepper to taste.

When the omelette is ready transfer to a plate, add the mushroom mixture on top, sprinkle some fresh cut chives and greens of your choice. Serve while warm.

French Omelette

Add the grated sweet potatoes to a bowl, then add the eggs, the mashed avocado, spices and the gluten free (rice) flour. Mix until well combined.

If the mixture is still too wet, add a little bit more flour. Heat 2 tbsp of olive oil or grape-seed oil in a skillet.&nbsp;

Scoop approximately 2 tbsp of sweet potato mixture, lightly pressing down with the back of the spatula.

Sear on each side until browned. You should be able to fit 4-5 latkes in the skillet.

Sweet Potato Latkes

In a bowl mix all ingredients, add the baking soda the last, when ready to cook.

Heat a large skillet over medium heat, spoon 2 to 3 tablespoons of batter.  Add some seeds or blueberries while cooking on first side. Flip and cook for another 1-2 minutes. Serve with plant yogurt, maple syrup and fresh fruits.

Banana Pancakes With Seeds and Blueberries

Prepare all ingredients, wash, chop and slice.In a large bowl gently mix together the eggs, the prepared veggies and seasoning. Pour in a baking dish. Bake for 30 -ish minutes or so, until all looks cooked through.

Gluten Free Dairy Free Breakfast Ideas

Hot, fresh,  sugary donuts in just 15 minutes using canned bicuit dough. These easy air fryer donuts will be your whole family&#039;s new favorite!

Easy Dairy Free Air Fryer Donuts

large biscuits (dairy free (suggestions above in the post))

butter

Preheat your air fryer to 375°F and grease or spray a donut pan. See notes above if you don&#39;t have one.

Open up your biscuit can and lay each biscuit out on a cutting board.

Use a small round cookie cutter or a donut cutter to cut a hole out of the middle of each biscuit. Place each donut-shaped biscuit into your pan. Use your fingers to shape the biscuits in the pan if needed. You can put your donut holes on your air fryer rack or a small greased cookie sheet that fits in your fryer.

Air fry your donuts for about 4 minutes. Watch them closely so the tops don&#39;t get too brown. Flip over each donut and fry them for about another 4 minutes, until they&#39;re lightly golden and cooked through. The donut holes take about 2-3 minutes per side, so be sure to pull those out sooner.

While your donuts are cooking, add your melted butter into a bowl large enough to fit one donut. In a separate bowl, mix together your cinnamon and sugar.

Remove the donuts from the fryer and immediately dip them in the melted butter then in to the cinnamon sugar.

Easy 4 Ingredient Air Fryer Donuts

This strawberry mango protein smoothie makes for a perfect quick and healthy drink that will boost your energy and keep your hunger at bay, until your next meal. Smoothies are so versatile and full of nutrients which makes them a great option for breakfast or snack. They&#39;re especially good as pre-or post-workout beverage. For an extra satisfying smoothie try it with my favorite toppings, healthy granola and coconut cream!

Blend all smoothie ingredients until smooth like a sorbet. If it’s too thick just add more of the non-dairy milk, one tablespoon at a time.

Dairy Free Tropical Yogurt Bowl

lime zest (for garnish)

Scoop your yogurt in to a bowl, and layer your fruit on top.

Sprinkle coconut over the top of it and garnish with lime zest.

These Banana Oat Bars are a delicious snack. They&#039;re so easy to make and are gluten free, dairy free, and nut free. Kids love them!

Easy Banana Oat Bars (Gluten Free, Dairy Free, Nut Free)

bananas (ripe

oats (rolled or quick) (gluten free if needed)

sunbutter (peanut butter

cinnamon

chocolate chips, melted (optional)

sunbutter, melted (optional, peanut butter can be used)

Preheat your oven to 350°F.

Line an 8x8 inch baking dish with parchment paper. I let enough paper go up the sides for easy removal later.

Mash the bananas in a large bowl.

Mix in your sunbutter and oats.

Spread the dough evenly throughout your baking dish.

Bake for about 20 minutes, or until a tester comes out clean.

Cool for 20 minutes, then lift the bars out of the pan using the sides of the parchment paper.

Drizzle your bars with melted chocolate and more sunbutter if you&#039;d like. I microwave my chocolate and peanut butter in separate bowls for about 30 seconds each to melt. Give it a good stir, and heat it for a few more seconds if it&#039;s not melted and thin enough to drizzle. Let the chocolate and peanut butter harden before cutting or storing.
