The best date bars recipe around! This was my Grandma&#x27;s recipe for making matrimonial squares, also known as date squares or bars!

Date Bars

butter (softened)

brown sugar

oats

flour

tsp baking soda

tsp salt

dates

sugar

water

Combine the ingredients for the filling into a small pot and start simmering over medium heat,, stirring often. You want to dissolve the dates and cook until it&#x27;s a smooth mixture with very few lumps. Once this is finished remove from the heat and set aside.

Start the base and topping. Combine the sugar and butter together until creamy and combined thoroughly.

Add in the oats, flour, salt and baking soda. Mix together completely.

Press  2/3 of the crust mix into the bottom of a 9x9 pan, saving some for the topping. 

Pour the filling on top of the bottom crust and spread it around evenly.

Crumble the remaining oatmeal mixture as a topping evenly across the filling.

Bake at 350 degrees until it's beautifully browned on top.

&nbsp;Cool it and then cut into pieces.

These easy raw chia date bars take as little as 10 minutes to make! They are chewy, soft, crunchy and make the perfect superfood energy pick-me-up after a workout or first thing in the morning!

Chia Date Bars

dates (pitted)

raw cashews

almonds

chia seeds

vanilla

cinnamon

unrefined coconut oil

Himalayan salt

pyramid salt (optional)

Prepare a square baking dish by putting wax paper or parchment paper over it.

In a food processor add the pitted dates, cashews, almonds, chia seeds, vanilla, cinnamon, coconut oil and a pinch of salt.

Process on high for 1-2 minutes or until the nuts are pretty small. You can make this with larger nuts by blending on less time or smaller creamier nuts and consistency by blending longer.

Pour the "dough" mixture in the prepared baking pan. Press down with your hands to spread the date nut mixture out evenly. The mixture will be thin, or use half the pan for thicker bars.

Chill to set before slicing. Optional to garnish with pyramid salt. Store in the refrigerator.

These Ultimate Date Bars start with a sweet buttery oatmeal crust and topping and they are stuffed with a delicious date filling.  An original Betty Crocker recipe from years ago, these are the ultimate date bars.  They are not only scrumptious but addicting too!

(8 ounces each) chopped pitted dates

In a medium bowl, whisk together the dry ingredients and set aside.

In a large bowl, mix together the butter and brown sugar with a wooden spoon until light and creamy.  Add the dry ingredients and mix well.  Set aside.

For the Crust and Crumb Topping

Add the dates, sugar, and water to a two-quart pan. Cook over low heat for 10 minutes, stirring constantly until mixture has thickened.

Using your hands or a spatula, press half of the crumb mixture into the bottom of a 9&#8243; x 13&#8243; pan. Spread the date filling over the crumb mixture. Crumble the remaining crumb topping over the filling and lightly pat the topping into the filling with your hand.

Bake for 25-30 minutes until the date bars are light golden brown. Cool for 15 minutes. Cut into bars while warm.

Store in an airtight container. Bars will stay fresh for up to 5 days.

Thank you for this wonderful recipe. I too baked,  Betty Crocker Date recipe and find it a SIN that they removed the product from their lineup. This recipe is the closest to it. My husband and kids just can't get enough. I do use Medjool dates as I really like them for baking. Thank you for the tips on the cutting. I struggle at this part LOL

In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.

Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.

In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.

Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.

3-Ingredient Chocolate Covered Date Nut Bars

Medjool

mixed nuts

Line a 9x5 loaf pan

with parchment paper, or use a silicone pan and place on baking sheet, set aside. You may also use an 8&#215;8 square pan, your base will just be thinner.

Make mixture

In a food processor add drained/pitted dates and nuts. Process until dates and nuts have broken down, and only small pieces of nuts can be seen. Mixture should be sticky. Transfer mixture to prepared pan, pressing evenly into all corners and press down flat. I like this roller.

Melt chocolate

Using stovetop and small saucepan over low heat, melt chocolate, stirring frequently until smooth. Pour over bars and spread evenly.

Chill

Place bars in freezer for 10 minutes to allow chocolate layer to set, or fridge for a about 30 minutes. Remove bars from pan and place on cutting mat for easier slicing. Using knife, gently slice into bars.

Love these bars! I'm not on Paleo so I just used regular semi and dark chocolate chips for top layer and sprinkled it with pumpkin seeds and pistachios. Looked and tasted great!

Preheat oven to 350°F. Line a 9 inch baking pan with parchment paper. Set aside.

In a medium saucepan add the water and the dates and cook over medium heat for about 10 minutes, until there's no water left. Add the vanilla extract to the dates and mix well. Let mixture cool.

Add the dates mixture to a food processor and pulse until it turns into a paste. Set aside.

In a food processor add the remaining dry ingredients and the butter cut into small pieces and pulse until the butter is well incorporated into the mixture and crumbles.

Spread ⅔ of the crumb mixture on the bottom of the prepared baking pan and spread it evenly. Add the date mixture and spread it with a spatula. Add the remaining crumb mixture as the last layer and pat it using a spatula, do not press down too hard.

Bake for 35 to 45 minutes until golden brown then let cool completely. Place in the fridge for a couple more hours then take it out and cut into squares.
