How to Dehydrate Fresh Cranberries

Before you can dehydrate the cranberries, prepare them by blanching them. Wash the cranberries and set aside. Fill a pot with 6 C. water and bring to a boil.

Once the water comes to a boil, add your cranberries. Boil for 1 - 1 1/2 minutes. They should &quot;pop&quot; (or split open). You may have a few duds that don&#039;t, but don&#039;t worry.

Drain the cranberries in a colander. Gently wrap them/dry them in a clean dish towel to rid them of excess water.

Lay your cranberries out on the dehydrator trays, evenly spaced. The cranberries that didn&#039;t pop will need to be pierced with a sharp knife.

Cranberries can take up to 14 hours to dry at 135 degrees F. After 8 hours, check on the cranberries to determine their dryness. They may need more time (up to 6 additional hours).

Cranberries need to cool before you can check to ensure they are completely dehydrated. Turn off the dehydrator and open the top to let them cool for 20-30 minutes.

After the cooling period, check the cranberries by cutting or tearing in half and checking for moisture. If there is no moisture, they are fully dehydrated.

Once dehydrated, store the cranberries in an air tight glass jar or BPA-free food storage container. Fill the jars only 1/2 - 2/3 full and shake them several times a day for one week to redistribute the berries and any moisture they may contain.

If (after a few days) you notice moisture on the jar(s), you may need to add the berries back to the dehydrator for a short time. Once dehydrated, store away from light or heat.

No need to buy expensive boxes of premade baked potato dishes.  Make Scalloped, AuGratin, or any other potato dish you choose .  You can make your own for just pennies.

Dehydrated Sliced Potatoes

Prep

Place a large kettle of water onto the stove and bring to a boil while you are slicing the potatoes

Slice

Slice potatoes to about 1/8&quot; thick and place into a bowl or sick filled with cold water

Rinse

Use fresh water and rinse the extra starch from your potato slices

Blanch

Transfer the rinsed potato slices (in one large batch if possible) to the kettle of boiling water and return to a boil.  Once the water begins to boil again you&#039;ll want to blanch the potatoes for about 4 to 6 minutes.  Your goal with potatoes is to bring them to the point of being fork-tender.  Fork tender is the point where you can push a fork through the slices but they&#039;re not so done that they break apart when you push the fork through.

Shock

Remove the potato slices from the boiling water and place the slices into a sink full of ice water to stop the cooking process

Arrange

Arrange slices onto your dehydrator racks

Dehydrate

Set dehydrator for about 125º - 150° and set for about 8 to 10 hours

Zucchini Chips Dehydrated

Teaspoon of garlic

Prepare ingredients and clean

Cut Zucchini into slices

Cut them into a thin slices either on a bread/meat cutting machine, or by hand at the thinnest. I have used bread machine on N1.

Oil and Season

Place all the zucchinis into a bowl, sprinkle with olive oil, freshly ground thyme, sesame seeds, salt and garlic.

Mix all together

Gently mix all together and place it onto the dehydrator plates.

Switch the dehydrator onto the highest ( in my case it is 70 C or 158 Fahrenheit)

Swap trays

Switch the plates every 2 hours to get the drying process evenly.

Enjoy and Store

Once done store it in the airtight container or enjoy it in 2 minutes as we did ( or one person in our family did)

How to Make Gochugaru (Korean Pepper Powder)

Korean Red Peppers

Wash and dry your chili peppers. Choose only fresh peppers. If they show any signs of rotting, throw them away.

Wearing gloves, remove the stems and slice the peppers in half. Leave them whole if you prefer, but they will take much longer to dehydrate. The gloves are important when working with peppers because the oils from the peppers can burn your skin, and the pain can linger.

Remove the seeds from the peppers.

Place the peppers on the trays of the dehydrator. Spread them out evenly so the heat can distribute properly.

Turn on the dehydrator at 125-135°F, or whatever setting your dehydrator recommends.

Once they are dried, remove. Then, using a food processor, spice grinder, or blender, grind them. You can grind the pepper finely (to make gochujang) or coarsely (for soups, stews, etc.).

Store the gochugaru in a dark place, like your pantry, for freshness. Or, you can place the gochugaru in the refrigerator to keep it fresh even longer.
