This bright carrot side requires just four ingredients — and one of them is optional.

Butter-Glazed Rainbow Carrots

(about

tbsp. butter, melted

lemon juice

Snipped chives,

Preheat oven to
425°F. Line rimmed
baking sheet with foil. Toss carrots with
butter, 1/4 teaspoon salt and 1/2 teaspoon pepper;
arrange in single layer
on prepared baking
sheet. Roast 20 to
25 minutes or until
tender and browned. Drizzle carrots with
lemon juice. To serve,
garnish with chives.

Sweet Potato Souffle

sweet potatoes

eggs

sugar

butter

vanilla

brown sugar

butter (softened)

flour

pecans

Wash and cut potatoes. Boil until fork tender and remove the skin.

Preheat oven to 350

Cream together potatoes with the remaining souffle ingredients and pour Into a casserole dish. I use and 8x8 but I’m sure other sizes would work.

Combine topping ingredients until well incorporated.

Top souffle with topping and bake for 30 minutes or until top begins to brown.

Super easy.  I cut the amount of sugar in the soufflé portion. I figured there’d be quite enough on top for me and my family I figured right. Definitely will be making this again.

green beans (frozen)

olive oil

garlic powder

salt

parmesan cheese

Preheat oven to 400

Into a casserole dish add the frozen green beans, olive oil, garlic powder, and salt

Toss to coat

Bake at 400 for 35 minutes

Add cheese and toss to coat

Serve hot

Add a heavy splash of Soy Sauce. Takes it over the top.

These are delicious!  I purchased a bag of “fine green beans,” too, and the time was just right!  I left off the Parmesan cheese as I needed a lactose-free recipe for my daughter-in-law, but I want to make them with again and use the Parmesan!

I absolutely love these green beans. Thank you so much for your recipe and tutorial. Maybe 🤔 I’m a snob but I want real grated Parmesan.  Please don’t hate, just my strong opinion. 🤣😘🥳

So good and so easy and a hit at our house. The only thing I did diffently was nuke the beans in the bag for a few minutes to shorten cooking time and because I am bougie, I used the pregrated parm in the smaller container from the dairy section as opposed to the one with the green top that we all grew up with.

Surprised you use pregrated parmesan cheese in a shaker can!  Easier, but really?
