Take the classic mac and cheese up a notch and have a shelf-stable cheesy chili mac ready for weeknight meals, emergency meals, or something you can gift to a new family or elderly person as an easy meal help.

Cheesy Chili Mac in a Jar Recipe

quick cook elbow macaroni

freeze dried protein ((beef crumbles, sausage

cheese powder

dry milk

taco seasoning mix

butter powder

salt

white pepper

vegetable powder ((optional))

water (Use only 2 cups if omitting vegetable powder)

water

Place pasta and protein into the bottom of a quart jar or mylar bag

Place dry ingredients into a zip top bag and place on top of pasta mix

Close the jar or bag as desired (vacuum seal, use an O2 absorber or simply close)

Store for 2 years easily, up to 5 years in most cases

Vacuum seal or use an O2 absorber for best results

Store

Heat 3 cups of water to rehydrate the pasta and protein.

Allow pasta to soak while preparing the sauce

Add 2.5 cups of water to dry ingredients

Mix thoroughly and allow to sit an rehydrate while pasta rehydrates

Mix with pasta and serve.

To Prepare

A savory vegetarian bouillon powder that a dead ringer for chicken bouillon, except it&#39;s made entirely of herbs and spices. This is a variation of the Vegetable Broth Powder in my book, The DIY Pantry.

Homemade Bouillon Powder (Chicken Bouillon Substitute)

nutritional yeast

sea salt

onion powder

garlic powder

dill

parsley

turmeric

basil

thyme

celery seed

Whisk all ingredients together in a small bowl.

For a powder, place all ingredients in a spice grinder or a small blender and pulse until a powder has formed. Let the dust settle before opening the grinder.

Store in an airtight container for up to 12 months.

Use 1 scant teaspoon of bouillon powder for every cup of water.

DIY Bread Crumbs

Bread (Any kind of bread that you have)

Slice bread into 1/4" (6mm) slices or cubes

Place onto dehydrator sheets

Dry at 150°F/65°C until dry and crumbly. Usually from 1-3 hours.

Pulse in a food processor or blender to preferred consistency

lace bread into the fridge overnight or use stale bread

Pulse in food processor to break bread into crumbs

Place on dehydrator trays with liners

Dry at 150°F/65°C for 1-3 hours until they crumble easily and stay separated.

Crumbs

Cube bread to your desired size

Place in bowl and drizzle with a little melted butter, melted coconut oil or good spray oil

Sprinkle in your favorite seasoning and mix well.

Dry at 150°F/65°C until hard and crumbly
