Vietnamese Pickled Daikon and Carrots for Banh M&#236; (Do Chua) Recipe

Combine carrots, radish, sugar, and salt in a large bowl. Using fingertips, massage salt and sugar into vegetables until dissolved. Add water and rice vinegar. Pack vegetables into a quart-sized mason jar. Pickles can be used immediately, or for best results, seal jar and refrigerate at least overnight and up to 1 week.

Ready to eat in 30 minutes, these quick pickled grated carrots (do chua) are a tangy sweet topping for Vietnamese banh mi sandwiches, tacos, salad, pita pockets and grain bowls.

Vietnamese pickled daikon and carrots, or Do Chua, commonly appear in Banh Mi and other popular Vietnamese dishes. Follow my recipe for some homemade Do Chua to add some color, tang and textures to your dishes!

Do Chua (Vietnamese Pickled Daikon & Carrots) Recipe

Sprinkle and toss precut daikon and carrots with 1 tbsp salt. Allow to sit for 10 minutes.

After 10 minutes, run the daikon and carrots under cold water and rinse very thoroughly. Drain water with a colander or strainer and squeeze excess water out with paper towel.

In a separate bowl, combine sugar with boiling water and mix until sugar is completely dissolved. Add vinegar and mix thoroughly.

Place daikon and carrots into a large sterile jar. Pour in the pickling solution, then add 1 cup of room temperature water (or slightly more) until the vegetables are completely submerged.

Allow to pickle for 3-5 days, then enjoy!

🥕 Do Chua Recipe & OXO Julienne Peeler Review | Vietnamese Banh Mi Pickled Daikon & Carrots

A Vietnamese sandwich (Banh Mi) is incomplete. This easy recipe adds a sweet, tangy crunch perfect for sandwiches, Vietnamese salads, and grilled meats.

Vietnamese Pickled Daikon and Carrots for Bánh Mì (Đồ Chua)

1½ lbs thinly sliced daikon (1 large daikon)

½ lb thinly sliced carrot (1 medium carrot)

fine ground sea salt

white sugar

white vinegar

Prepare the daikon and carrot

Peel the daikon and carrot and cut into matchsticks.

Salt and jar the daikon and carrot

In a large bowl, toss together daikon, carrot and salt. Let it sit for 1 hour to pull out the water. Discard water. Squeeze out remaining moisture with your hands then transfer to at least a 24 oz jar.

Make the brine

In a medium size heat proof bowl/cup, dissolve sugar with hot water. Mix in vinegar. Allow the mixture to cool down to room temperature, if needed. Pour liquid into the jar of daikon and carrot and screw on the lid. Leave it at room temperature and it&#8217;s ready to eat in one hour. You can also store in the fridge for up to 2 weeks.
