Instant Pot Chickpeas

(225 grams) dried chickpeas (garbanzo beans)

Optional Step - Soak Chickpeas Overnight: Place 1 cup (225g) dried chickpeas and 1 tbsp (17g) fine table salt in a large container. Pour 4 cups (1L) cold water in the large container, then give it a few stirs. Allow chickpeas to soak overnight for at least 8 - 16 hours. *Pro Tip: If your house is very warm, place the large container in the fridge to avoid fermentation.

Rinse Chickpeas: Rinse chickpeas under cold water, then pick out any stones or debris. Drain chickpeas well.

Pressure Cook Chickpeas: Add 1 cup (225g) unsoaked chickpeas or all of the soaked chickpeas, 2 bay leaves, 1 whole head (40g) garlic, and 1 halved (212g) onion to the Instant Pot. Adding Salt:-For Unsoaked Chickpeas - add in 1 ½ tsp (9g) fine salt.-For Soaked Chickpeas - add in 1 tsp (6g) fine salt.Pour in 4 cups (1L) cold water or unsalted chicken stock, then give it a quick mix. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position.Pressure Cooking Method:-For Unsoaked Chickpeas - High Pressure 42 minutes (tender with a bit of chew) or 60 minutes (tender soft) + Natural Release 20 minutes-For Soaked Chickpeas - High Pressure 5 minutes (tender &amp; creamy) + Natural Release 20 minutesAfter 20 minutes, release remaining pressure, then open the lid.

Serve Instant Pot Chickpeas: Remove &amp; discard onions and bay leaves. Taste the chickpeas to ensure they are fully cooked. Add more seasoning if necessary. Drain the chickpeas. Then, serve the chickpeas as a tasty side dish. Enjoy!~ :)

How To Make Chickpea Flour

Directly blend the dried chickpeas in a high-speed food processor/blender or grind them in a spice grinder.

Sieve the flour to remove any lumps. Then try grinding the larger particles again.Store in an airtight container for up to 2 months.

Option 1

First, soak the chickpeas overnight (minimum of 8 hours, and you can go up to 24 hours). Make sure to cover them with enough water as they will expand 2-3 times their size.

Drain the water (you can use this to water plants) and rinse well the soaked beans. Then, pat them dry as much as you can.

Dry the chickpeas in a sunny warm spot or alternatively, dry them in the dehydrator or oven at 50ºC for 12 hours.Lay them out in single layers across baking sheets (or the dehydrator trays), for the quickest dry time.

When the chickpeas are completely dry, grind them. If they&#039;re not completely dry then you&#039;ll end up with a &#039;paste&#039; rather than flour- so be patient. You can blend them in a high-speed food processor/blender or grind them to a fine flour in a spice grinder.

Sieve the flour to remove any lumps. Then, you can try grinding the larger particles again. This may take a few passes to all become fully ground.

Store in an airtight container for up to 2 months.

Chickpea flour is an excellent gluten-free flour option for a wide variety of baking. This video shows the simple method for making homemade chickpea flour (garbanzo bean flour).

Fatteh is a popular Middle Eastern dish made with stale bread and accompanied by a host of hearty ingredients. Serve it for brunch, with eggs, or as a vegetarian main course with cooked seasonal vegetables — simply be sure to plan ahead and soak the chickpeas the night before. You can cook the chickpeas and prepare all the toppings in advance, but you'll want to assemble the herb paste and toss everything together just before serving to ensure that it all stays green and vibrant, and that the fatteh is the right consistency.

Chickpea and Herb Fatteh

baking soda (bicarbonate of soda)

Kosher salt and black pepper

olive oil

za’atar

cumin seeds, toasted, then roughly crushed

Place the dried chickpeas and 1 1/2 teaspoons baking soda in a large bowl. Top with enough cold water to cover by about 1 inch/3 centimeters, and let soak at room temperature for at least 8 hours or up to overnight.

Heat the oven to 375 degrees Fahrenheit/190 degrees Celsius.

Drain the chickpeas well and add them to a large saucepan along with the remaining 1 teaspoon baking soda. Add 6 cups/1 1/2 liters water. Bring to a simmer over medium-high heat, then lower the heat to medium and let cook until chickpeas are soft but retain a slight bite, 30 to 35 minutes. (The cook time can vary greatly depending on your chickpeas, so check them at the 20-minute mark to determine how long you need.)

Add 1 1/4 teaspoons salt and continue cooking until the chickpeas are supertender, 5 to 10 minutes more. Use a slotted spoon to set aside 2/3 cup/100 grams strained cooked chickpeas. Keep the rest warm on a low heat until ready to serve.

While the chickpeas are cooking, prepare the toppings: Toss the pita with 2 tablespoons oil, the za’atar, 1/4 teaspoon salt and a good grind of pepper, and spread out on a parchment-lined baking sheet. Bake until golden and crisp, tossing halfway through, about 12 minutes. Set aside to cool.

Make the tahini sauce: In a medium bowl, whisk the tahini, lemon juice and garlic with 1/3 cup/70 milliliters water and 1/4 teaspoon salt until smooth and pourable. The tahini sauce will thicken as it sits.

Make the chile oil: Add the oil and red-pepper flakes to a small frying pan. Heat over medium until gently bubbling and fragrant, about 4 minutes, then add the paprika and remove from heat. Set aside.

When ready to serve, add the reserved 2/3 cup/100 grams chickpeas to a food processor along with the fresh herbs, 2 1/2 tablespoons lemon juice, the garlic, cumin, 1/4 teaspoon salt, a good grind of pepper and the remaining 3 tablespoons oil. Blitz until smooth, then transfer to a large mixing bowl.

Drain the warm chickpeas using a sieve set over a bowl. Add the chickpeas and 3/4 cup/170 milliliters of their liquid to the herb mixture, mixing well to combine. You want the chickpeas to be well coated and the whole mixture to be saucy (but not overly wet), so add a couple more tablespoons of chickpea liquid if you wish (discard the remaining).

Transfer to a large platter with a lip. Drizzle lightly with some of the tahini sauce, then all of the chile oil. Sprinkle with half of the pita and serve warm, with the extra tahini and toasted pita alongside.

This recipe, adapted from Deborah Madison's "Vegetarian Cooking for Everyone," takes dried chickpeas, soaked overnight, and pairs them with a sauce built on the robust, aromatic flavors of grated ginger, ground coriander, cumin and cardamom. It's an easy, Middle Eastern-tinged weeknight meal. As the chickpeas cook, prepare the sauce, and top with diced tomato, onion, jalapeño for added bite.

Spicy Chickpeas With Ginger

Drain the chickpeas. Put them in a saucepan, cover with 3 quarts fresh water, and boil for 10 minutes. Skim off any foam that collects on the surface, then lower the heat. Add the garlic, parsley, onion and oil. Simmer, partly covered, until the peas are almost tender, about 45 minutes. Add the salt, and continue cooking until the peas are completely tender but not mushy, about 30 minutes more. Strain, reserving the broth. This should yield about 3 cups chickpeas.

For the sauce, warm the oil in a large skillet over medium heat. Add the onion, and cook, stirring frequently, until well browned, 12 to 15 minutes. Lower the heat, and add the bay leaf, garlic, ginger, spices, salt, pepper and two-thirds of the diced tomatoes. Cook for 5 minutes.

Add the reserved chickpea broth and the chickpeas. Simmer until the liquid is reduced to a saucelike consistency. Adjust the seasonings, and add lemon juice to taste. Serve accompanied by the remaining diced tomato, diced onion, minced jalapeno and chopped cilantro or scatter them over the chickpeas.

A baked lamb and rice dish I tasted in Istanbul, etli pilav, inspired this one-pot meal, topped with walnuts and fresh mint and pomegranate seeds. Similar pilaf-style rice dishes are made all across the Middle East and into Asia. Kabuli pulao in Afghanistan is acclaimed; the Persian baghali polov ba gusht is justly famous, as is the Lebanese Hashwet al-ruz; and there are myriad fabled biryanis made with lamb (or goat) in India and Pakistan. Pomegranate molasses is available in Middle Eastern groceries or online. It provides a sweet-sour, fruity undertone, but you may omit it and still get good results. Try a squeeze of lime instead.

Spiced Lamb and Rice with Walnuts, Mint and Pomegranate

If using dried chickpeas: Put soaked chickpeas in a saucepan and cover with water by 1 inch. Bring to a boil, then reduce heat to a simmer. Cook, uncovered, for 45 minutes to an hour, until tender. Top up with water as necessary to keep chickpeas covered. (If using pre-cooked or canned chickpeas, skip this step.)

Season lamb pieces generously with salt and pepper. In a large heavy skillet or Dutch oven with a lid, heat oil over medium-high heat. Working in batches over high heat, brown the lamb pieces on both sides, removing them to a plate as they are cooked. (Don’t crowd the pan or they won’t brown nicely.)

When all the lamb is browned and the pot is empty, reduce heat to medium high. Add onions, season with salt and pepper and cook, stirring occasionally, until softened and lightly browned, 6 to 8 minutes. Add raisins, pomegranate molasses (if using), cumin, coriander, allspice, mace, and cinnamon and stir to coat. Return lamb to the pot, along with any juices.

If using canned chickpeas, drain well. If using cooked chickpeas, drain and reserve the cooking liquid. Add drained chickpeas and rice to onion mixture and stir together. Turn heat to high and add 2 cups chickpea cooking liquid (or 2 cups water or broth, if using canned chickpeas). Bring to a boil, then reduce to a simmer. Cover tightly. Bake about 1 hour, until lamb is tender when probed with a fork and rice is cooked through. Let rest for at least 10 minutes before serving, or up to 30 minutes.

Meanwhile, in a small skillet, melt butter over medium heat until it foams. Add walnuts and cook, stirring, until lightly browned, about 2 minutes. Salt lightly and set aside. Fluff the lamb and rice gently, lifting up from the bottom. Serve directly from pot or transfer to a serving platter. Sprinkle with walnuts, pomegranate seeds, mint and crushed red pepper. Pass a bowl of yogurt at the table.

Serve this comforting salad as a main dish or as a side. The chick peas contribute a considerable amount of protein, manganese and folate to the dish.

Warm Chickpea and Broccoli Salad

Salt, preferably kosher, to taste

broccoli crowns,

red onion, sliced (optional)

Place the chick peas and their soaking liquid in a large saucepan and add enough water to cover by 2 inches. Add the bay leaf and bring to a boil. Reduce the heat, cover and simmer 1 hour. Add salt to taste and continue to simmer until the chick peas are tender, 30 minutes to an hour. Remove the bay leaf.

Meanwhile, place the red onions in a bowl and cover with cold water. Soak 5 minutes, then drain and rinse. Dry on paper towels.

Make the dressing. Mix together the lemon juice, vinegar, mustard, garlic, salt, and pepper. Whisk in the olive oil (or the oil and buttermilk or yogurt). Set aside.

When the beans are tender, add the broccoli. Turn up the heat, cover and simmer or steam (depending on how much water is left in the pan) 5 minutes, until the broccoli is tender but still bright. Drain the beans and broccoli and toss with the dressing. Add the herbs and the Parmesan, toss again, and serve warm.

Baked Garbanzo Beans

onions,

garlic cloves,

chili,

coriander seeds

garbanzo beans (chickpeas), soaked 24 hours at room temperature

vegetable broth

saffron threads

kosher salt

white pepper

Preheat the oven to 450 degrees. In a large casserole, warm the olive oil over medium-high heat. Add the onions, garlic, chili, coriander and bay leaves; saute for 5 minutes.

Drain the garbanzo beans, and add them to the pan, along with the broth, saffron, salt and pepper. Cover, and bring to a boil. Transfer to the oven.

Bake until the beans are soft and cooked through, 45 to 50 minutes. Season to taste with salt and pepper, and serve.

A simple guide on how to prep, cook and freeze dried chickpeas- dried chickpeas are cheaper and tastier than canned versions and a great store cupboard staple to have on-hand!

How To Prep, Cook And Freeze Dried Chickpeas

Rinse the chickpeas and place in a large bowl.

Cover the chickpeas with cold water and let them soak for at least 8 hours (overnight). The chickpeas will expand 2-3 times their size, so make sure to add enough water. *

Drain and rinse the soaked chickpeas well. **/ ***

To Soak The Chickpeas:

Place in a large saucepan and cover with water, leaving a couple extra inches.

Bring to a boil and cook for about 30-40 minutes until soft.****

During the cooking process, a foam can appear on the top of the water. Scoop this out and discard it. Alternatively, add a spoonful of oil to the pan and this should reduce the foaming.

Once cooked, drain the chickpeas*****.  Let them cool down completely before storing them.******

To Cook The Chickpeas:

Store in the fridge in an airtight container for 3-5 days.

If freezing, separate in convenient portions and store in freezer-safe containers. Keep in the freezer for up to 3 months. 1 kg dried chickpeas will yield about 12 cups cooked chickpeas. You can freeze them in portions of 1.5 cups (250 g) which is also the &quot;drained weight&quot; of 1 can of chickpeas.

To Store them:

The last step is to use your frozen chickpeas and really it couldn&#039;t be any simpler. Remove from the freezer and allow to that then add them to meals while cooking, or reheat by themselves in a pot or in the microwave.

Flavor-packed crispy and healthy Falafel loaded with mixed vegetables and cooked in an air fryer (or baked). A great appetizer served with a Cilantro-Yogurt Sauce! This homemade recipe is super easy to execute, and sure to satisfy your cravings.

Healthy Mixed Vegetable Falafel (Air-Fryer or Baked)

Broccoli Florets (90 grams)

Carrots (Chopped, 64 grams)

⅓ medium White Onion (Chopped, 35 grams)

Cilantro

Tbsp Tahini

Tbsp Minced Garlic (about 3-4 cloves)

1½ tsp Cumin Powder

½ tsp Cardamom Powder

Salt

¼ tsp Black Pepper

¼ tsp Cayenne Pepper (more

Greek Yogurt (about 100 grams)

½ Tbsp Tahini

tsp Minced Garlic

Put chickpeas in a bowl and fill with water, about 3” over the top surface of the chickpeas. Soak for 24 hours.

Preheat oven to 375°F and lightly grease a baking sheet, or use an air fryer.

Place all ingredients - soaked chickpeas, broccoli, carrots, onion, cilantro, minced garlic, tahini, cumin, cardamom, salt, pepper and cayenne pepper - in a food processor and pulse until finely minced. Do not over-pulse - the mixture should be coarse/paste-y.

Use your hands or a cookie scoop to shape falafel mixture into small balls or patties and place in air fryer basket or prepared baking sheet.

Air fry at 350°F for about 15 minutes, or Bake for 25 minutes, flipping half way, until golden brown and crisp. See notes for frying.

Combine all ingredients for sauce in a bowl.

Serve falafel with the cool sauce and a warm pita!

I made this recipe today and it was amazing.
I actually had some veggie pulp leftovers from juicing (beetroots, celeriac, carrots and apples).
I first blended the soaked chickpeas, tahini, garlic, onion and spices, then just stirred in the veggie pulp. I adjusted the spices, added a bit more cumin, cayenne pepper and cardamom powder.
I shaped the mixture into balls and baked them for 30 minutes flipping halfway. They looked golden brown, but were not crispy. I didn’t mind though. 
In the yoghurt sauce I added just a touch of salt and pepper and a bit more garlic.
This combination was indeed BOMB! I couldn’t stop eating!
