Try roast duck as an easy alternative to the usual turkey dinner on Christmas Day. A sticky Seville orange and marmalade glaze makes it even more festive

Marmalade Glazed Roast Duck

oven-ready duck, about 2 kg

Expose and cut out the wishbone. This makes the duck easier to carve once cooked. A butcher can do this for you.

Heat oven to 240C/220C fan/gas 9. Lightly score the skin on the duck all over, and make a deep cut from inside the body into each leg.

Season the duck well. Heat an ovenproof frying pan over a low heat. Place the duck on its side with the thigh touching the pan for 15&nbsp;mins. Turn and cook on the other side for 15&nbsp;mins more.

Turn the duck breast-side down, then transfer the pan to the oven and cook for 5 mins. Drain the fat from the pan, turn the duck onto its back and continue to cook for 15&nbsp;minutes.

Meanwhile, cut both oranges in half, then cut 4 wedges from half an orange. Heat a small frying pan over a medium heat, then cook the orange wedges in the dry pan for 1 min on each side to lightly caramelise.

Remove the orange wedges from the pan and set aside. Squeeze the juice from the remaining orange halves into the hot pan and reduce by half. Add the marmalade, take off the heat, add 1 tbsp water and stir together.

After 15&nbsp;mins of roasting, brush the marmalade glaze over and continue to roast for a final 10 mins. Rest for 20 mins.

Carve by cutting the leg and thigh away, then separating the leg from the thigh. Carve slices of breast and serve with the orange wedges to squeeze over.

Duck in Orange Sauce

duck breasts

½ tsp fine table salt

½ tsp ground black pepper

duck fat

oranges (juice only)

garlic

rosemary

honey

sea salt flakes (optional)

Bring out the duck breasts and pat them dry. Turn them skin-side up and carefully cut a criss-cross pattern in the skin. Take care not to cut into the duck meat, but still cut as deep into the skin as you can. Season with salt and black pepper on both sides.

Place the duck breasts skin-side down in a cold pan without any oil or butter, then place the pan over medium heat. Allow the fat to render off until skin is crisp and golden and the fat has stopped seeping out of the duck skin. This takes 10-15 minutes. Pour off excess fat regularly while cooking and save for later.

Raise the heat to medium-high, flip the breasts over and sear skin-side up for 1 minute. Then sear quickly on the other sides of the duck breast and transfer them to an oven safe dish.

Prep &amp; stovetop cooking (20 minutes)

Place the pan back over the heat and pour in some of the duck fat you rendered off. Add the orange juice, honey, sprigs of rosemary and garlic cloves. Bring to a simmer and let simmer until a bit sticky and reduced by half, this takes 5-10 minutes. Stir occasionally.

Turn off the heat and remove the garlic cloves and sprigs of rosemary, then set aside for now.

Orange Sauce (10 minutes)

Glaze the duck breasts with the orange sauce on both sides, then place skin-side up and stick in a meat thermometer. Place uncovered in the middle of the oven and cook for 5-10 minutes until inner temperature is 137°F (58°C) (for a pink center, see notes below for other temperatures).

Wrap the cooked duck breasts in aluminum foil and let rest for at least 5 minutes. Meanwhile, heat up the orange sauce.

Slice the duck breasts and serve topped with orange sauce and sea salt flakes.

Duck with Orange Sauce

This orange sauce for duck recipe is quick and easy to prepare. Serve it with pan fried duck breast to turn it into duck à l'orange.

Orange Sauce for Duck

oranges

(1 tbsp) butter

½ onion, peeled and sliced thinly

orange liqueur

milliliters (5 tbsp) white wine

milliliters (⅖ cup) vegetable stock

orange marmalade

Juice the oranges with the K-Mojo Digimaster. Set the juice aside.

Melt the butter in a frying pan and cook the onions until softened and translucent, which will take about 3-5 minutes.

Add the orange liqueur and white wine to deglaze the pan. Let it bubble for 30 seconds.

Add orange juice and stock, and simmer together for 5 minutes.

Sieve the mixture into a bowl, essentially removing the onions, and return the smooth sauce to the frying pan.

Bring the sauce back to a simmer, then stir in the marmalade.

Simmer until desired thickness is achieved. This can take up to 10 minutes.

Serve immediately with pan fried duck breast or oven roasted duck, and green vegetables plus potato mash.

With hasselback potatoes and seasonal veg.

I would serve it with rice I think.  Delicious.

This Orange Marmalade Chicken recipe is the perfect sheet pan dinner recipe! It&#39;s so easy, and it&#39;s bursting with great citrus flavor!

Orange Marmalade Chicken

shallots (peeled and halved lengthwise (quartered if large))

extra virgin olive oil (divided)

salt and freshly cracked black pepper (to taste)

leg quarters

white wine vinegar

rosemary (chopped)

Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper or aluminum foil.

Toss the shallots onto the prepared baking sheet with a tablespoon of the oil and season with salt and fresh cracked black pepper, to taste.

In a large bowl, whisk together the marmalade, vinegar, rosemary, remaining tablespoon oil, and salt and pepper, to taste.

If necessary, cut up the chicken into individual legs and thighs. Then place the chicken into the bowl of rosemary orange glaze and toss to coat.Remove the chicken from the bowl and place onto the baking sheet nestling the pieces among the shallots.

Place the chicken into the oven and bake the chicken for about 20 minutes. Remove the chicken from the oven. Turn the pieces over and baste the rosemary-orange glaze onto the chicken with a basting brush.

Return the chicken to the oven and continue to bake, until chicken has browned and cooked through (165 degrees F on an instant-read thermometer) and the shallots are tender; for another 20 to 30 minutes.

Remove the baking sheet from the oven. Allow the chicken to cool slightly. Serve warm with your favorite sides!
