Preheat

Prepare

Prepare an 18 cup muffin tin by spraying with non-stick cooking spray, or lining with muffin cups.

Sift-together

In a large mixing bowl, using a sifter, sift together 2½ cups of the all-purpose flour, 2 cups of sugar, pumpkin pie spice, baking soda, and salt. Set aside for later.

In another mixing bowl, add pumpkin puree, eggs, and vegetable oil. Stir to mix well.

Combine

Stir the pumpkin mix into the flour mix until just moistened.

Fold

Fill

In the prepared muffin cups, using a spoon, fill 18 cups with batter.

In a small mixing bowl, add ¼ cup of sugar, 2 tablespoons of flour, and ½ teaspoon cinnamon. Stir to mix well.

Cut-in

Sprinkle the streusel on top of each filled muffin cup.

Bake

In preheated oven, bake 35 to 40 minutes or until a toothpick inserted in the center of the muffin comes out clean.

Refrigerate until fully set, then peel the muffin cups off of the chocolate

When the milk is ready, add a small amount of the sugar mixture and stir in until dissolved, Continue add a small amount at a time until all of the sugar mixture is added and dissolved.

Cook

Keep stirring and cooking until the pudding will cling to, and coat the back of a metal spoon. Do not allow the pudding to boil.

Remove

Immediately add in butter and vanilla. Stir to mix well.

Refrigerate

Transfer the pudding to pudding cups, cover, and place in the refrigerator a minimum of 40 minutes to chill and set.

Trim the ends off the squash, then cut in half. Scoop out the seeds, then slice into ½-inch (1 ¼ cm) cubes.

Spread the squash on a baking sheet, then add the olive oil, salt, pepper, nutmeg, and thyme and toss to coat.

Roast for 20 minutes, until tender and lightly browned. Remove from the oven and let cool completely.

Meanwhile, prepare the rest of the salad: Cut the head of radicchio in half, remove the core, then thinly slice.

Cut the pear in half, scoop out the core, then thinly slice.

Make the dressing: In a small bowl, whisk together the maple syrup, apple cider vinegar, and mustard. While whisking, slowly drizzle in the olive oil and continue whisking until emulsified. Whisk in the salt and pepper, then set aside.

In a large bowl, combine the radicchio, spinach, pear, dried cranberries, and cooled roasted squash. Drizzle some of the dressing over the salad and toss well to coat.

Divide the salad between serving plates, then top with the chopped toasted pecans and crumbled blue cheese. Serve immediately with the remaining dressing alongside.

Vegetables and Toppings

When your chicken is fully cooked, we add all the fresh veggies. First goes all of the colorful peppers which we mix. Followed comes broccoli. Combine stir fry together and let veggies soften slightly.  As last, add chopped green onions and sesame seeds.
