This was so easy, healthy, and delish! I garnished with parsley instead of chives.

Recipe is a great start. To for optimal results, start with a LARGE sweet potato. Since you’re cutting it into 1” slices, let it soften in the oven for about 5-10 more minutes than claimed above. Lastly, if you want a runny center, after cracking the egg, only cook it for 5-7 minutes. Cooking for 10 minutes at 400 cooks the yolk all the way through.

This healthier french toast recipe not only tastes amazing but is also lower in sugar and higher in both protein and fiber than regular french toast! It's ideal for using up old, stale bread and can easily be made dairy-free as well. Enjoy topped with your favorite fruit and yogurt.

Healthy French Toast

bread

milk

cinnamon

stevia

vanilla extract

maple syrup (optional)

In a large/wide bowl, whisk to combine egg, milk, cinnamon, stevia and vanilla extract.

Slice bread into halves (so it's in the shape of a triangle).

Heat up oil in a non-stick skillet over low heat.

Dip one piece of bread into egg mixture for 1-2 seconds on each side, and transfer to skillet immediately. Cook for 1.5-2 minutes on each side or until golden.

Repeat steps for remaining slices of bread.

Plate up your French toasts and top them off with yogurt, fruits and maple syrup (if using). Enjoy!

Prep the vegetables

 Thinly slice the red onion. Large dice the bell pepper.

Prep the eggs or tofu

 In a medium bowl, crack the eggs and whisk them together until well-beaten. Stir in the shredded cheese, fresh herbs, kosher salt, and plenty of fresh ground pepper. Or, complete Step 1 of the Tofu Scramble.

Cook the vegetables

 Heat the olive oil over medium high heat. When hot, add the onion and peppers. Cook 3 to 4 minutes until tender and just starting to brown, stirring occasionally. Reduce heat to low. Add a pinch of salt and the baby greens. Cook for 30 seconds until wilted. Remove and set aside.

Cook the eggs or tofu

 Keep heat on low. Pour in the eggs. Cook for 20 to 30 seconds. When the eggs just start to set, use a flat spatula to scrape sections of eggs, gently stirring constantly until cooked but still soft, about 1 minute. Or, complete Step 2 of the Tofu Scramble.

Add the vegetables and serve

 Add the veggies back to the pan with the eggs or tofu. Stir for a few seconds until combined and warmed. Serve immediately.

Preheat oven to 375° and grease a baking sheet with cooking spray. In a large bowl, whisk together eggs and milk.

In a large nonstick pan over medium heat, melt 1 tablespoon butter. When butter is foamy, reduce heat to low and add egg mixture. Cook, stirring often with a spatula, until eggs are just set. Season with salt and pepper and remove from heat.

Unroll one can of crescents onto greased baking sheet and pinch seams together so it's a solid layer of pastry without gaps. Add a layer of ham then top with scrambled eggs, chives, and cheese. Unroll second crescent dough and place on top of cheese. Pinch together crescent sheets to seal.

Melt remaining butter in microwave. Brush melted butter on top of crescent dough then sprinkle with poppy seeds, sesame seeds, minced onion, and dried garlic. Season with&nbsp;flaky sea salt.

Bake until crescent dough is golden and cooked through, about 25 to 30 minutes. (If the crescent dough is browning too quickly, cover with foil.)

Let cool for at least 15 minutes before slicing into squares.

I made a couple batches of this Christmas morning, in 9x13 pans.  The entire family loved it. Everybody in my family are good cooks. I mean seriously they went nuts over it.  Everyone wanted the recipe.  I used the packaged Black Forest ham and because it seemed a bit wet, I patted each piece with a paper towel.  I also misread the instructions and put the ham down then the cheese and then the eggs on top sprinkle with chives.  It didn't seem to matter with how it all went together.  I also only used 8 eggs per batch based on what I had read in previous reviews.  It was plenty.   The bottom crust was not soggy at all.

This dish was very good my family liked it. I used turkey and rotisserie chicken sandwich meat instead of ham. Nice recipe!

This is a great recipe! I halved it for only my husband and I but I recommend to only cook for half the time mentioned above because of the smaller size. I would also recommend to watch how much dried garlic you put on because it could come out fast and have a strong taste once cooked.

I did it!  Easter Breakfast for the family.  Did not have some of the spices so I substituted with Italian seasoning, parsley flakes and to bring it up a notch I added crush peppers and garlic.

Made this but left out chives. It came out perfect but I cut back on eggs by 4.get the big roll of crescents it covered small baking sheet with a few left over.was able to make 8 nice size portions.try it.make it ur own.dont let other opinions hinder u.

Serves 6 maximum,  8 is a stretch. And dont expect dough to fit entire baking sheet. more like a 9x13 size actually.

This Bacon and Cheese Egg Bake recipe is one of my favorite brunch dishes ever! Made from bacon, veggies, and of course eggs and cheese, this easy breakfast idea is filled with protein and flavor!

Easy Bacon Egg and Cheese Bake

Grate the squash and onion with your cheese grater (or dice them nice and small).

Spray a 9x9-inch baking dish with cooking spray and preheat the oven to 375 degrees F.

In a medium skillet, cook the bacon until tender crisp. Remove the bacon from the pan and lay it on paper towels to help absorb extra grease. Pour out the extra bacon grease from pan and return the pan to the stove (it will still have a layer of grease on the bottom since you haven't cleaned it).

Add the grated squash and onion to the pan, and cook over medium-high heat until the vegetables are tender and any cooking liquid that they have released has cooked off.

While the veggies are cooking, break your eggs into a bowl, add the milk and salt and pepper, and beat with a fork to combine well.

Place the cooked vegetables in the bottom of the prepared baking dish. Add the spinach. Add the cheese. Crumble the cooked bacon over the top of the cheese. Pour the egg mixture over everything in the dish. Bake for 25 to 30 minutes, until the center of the dish is set and no longer jiggles. Let the dish cool for 3 to 5 minutes before serving hot.

I LOVE recipes that are basically a blueprint and can be customized to fit individual tastes.  I make this almost every week and it is never the same dish twice.  we cal it clean out the frig eggs and it always comes out delicious.

So yummy!  I added a few extra pieces of bacon....because "why not"?!?!?  I did cook down my spinach for a less leafy bite, as suggested, and it worked well.  I think next time I am going to add a small can of mushrooms.  Thank you!

Made this last Sunday and it was the best egg and bacon casserole I've ever tasted!  The yellow squash really does a good job for a potato feel.  Thanks so much!
