Easy Egg Salad Recipe

Start with hard boiled eggs that have cooled.

Peel and chop the eggs small.

Whisk together all the other ingredients in a large bowl until combined. Gently fold in the chopped eggs. Dust with some paprika, if desired.

Featuring a rich and creamy egg salad tucked between soft slices of milk bread, this Tamago Sando is quick &amp; easy to make, yet makes for an incredibly satisfying breakfast or snack to instantly brighten your day. This Japanese egg sandwich is truly melt-in-your-mouth delicious and comes together with just a few ingredients.

Tamago Sando (Japanese Egg Sandwich)

eggs (plus 2 more for soft-boiled egg, if preferred)

onion

tbsp Kewpie mayonnaise

tsp sugar

salt (or

black pepper

shokupan (milk bread) or brioche (crusts removed or intact)

butter (for the bread)

Add vinegar and salt to a pot of boiling water, reduce the heat, and gently place the eggs into the water (if you plan to add the extra jammy egg in the middle, I recommend marking the shell with a permanent marker).

Prepare a large bowl of ice water. After 10 minutes (6 minutes for the extra jammy egg), immediately transfer the eggs to the ice water bath. Allow the eggs to cool completely, for at least 5 minutes.

Separate the egg yolks and whites. Mash the yolks in a bowl and dice the egg whites (you can also mash them together, but this will result in a fluffier sandwich).

Add the diced egg whites and onion to the bowl, and mix to combine. Add kewpie mayo, sugar, salt, and pepper. Mix together with a spoon until well combined.

Spread the bread slice with butter, and add a generous amount of egg salad (with the jammy egg in the middle, if preferred) and cover with the other slice of bread. Cut the sandwich in half and enjoy!

Place eggs into a medium saucepan and cover with water by an inch. Bring to a boil over high heat and remove from heat. Cover the saucepan with the lid and set aside for 10 minutes. Then drain the water and fill with cold water to cool down the eggs. Once eggs are cool, peel and finely chop them or grate them with a grater.

Transfer chopped eggs a medium bowl and add mayonnaise, dijon mustard, chives, paprika, salt and pepper. Stir with a spoon to mix well. If salad seems dry, add more mayonnaise to reach desired consistency. 

Spread the egg salad on half the sandwich slices and top with the other half. You should get 3-4 sandwiches depending on how full you spread the egg salad on them. You can also serve this with crackers or pita chips. 

We normally make ours with celery but I added green onions diced and the paprika to your recipe and it was a nice touch!

Place your eggs in the bottom of a large pot (make sure you use a pot with a lid!), and fill with water. Bring the water to a boil over medium-high heat.As soon as it comes to a hard boil, turn off the heat and cover with a lid. then turn off the heat and cover with a lid. Allow to sit, covered, off the heat for 11 minutes.

While the eggs are sitting and cooking, prepare a large bowl with ice water.

Place cooked eggs immediately in ice water to cool. Once cooled, crack and peel the eggs. Refrigerate for at least 3 hours until cold.

When the eggs are cold, finely chop them with a knife or egg slicer and place in a large mixing bowl.

Add onion, celery, mayo, mustard, relish, and salt and pepper. Stir gently to combine.

Cover and chill for at least an hour or until ready to serve.

I know you have to limit your protein too as well as your carbs, so that the fat you eat is used to burn fat , and the protein won't be used to burn fat instead, but how can you limit your protein when so many foods have it in them, like eggs, cheese, meat, yogurt, ect.?

This recipe is good however there’s no way you can get (3) 1/2 cup servings out of it. I made it for my husband and I and after scooping (2) 1/2 cup servings there was probably only a 1/4 cup left. 

I bought your book Keto for Life and I have actually found the serving size has been incorrect on the recipes I’ve made from it so far. This is really disappointing when planning meals and needing to have leftovers for lunch.

I had the same experience as you.  I measured out two half cup servings and only had about a half cup left.  Next time I will know to divide into three and not measure.  I have seen the same thing with a few other recipes.  And when I put the ingredients into My Fitness Pal, the calories match for a serving.

Know what makes this recipe even better (and it is really good the way it is)? Stir in Palmetto Pimento cheese (the jalapeno is my favorite). I am guessing that I add a generous Tablespoon per egg. Yum!

This is a very tasty way to eat eggs! I DO, however add about a1/2 t. of DILL WEED to it. After reading up on dill, which I LOVE, it makes great sense to add it anywhere we can. I just did the egg fast this week, lost 6.8 pounds. Yeah!! And some dill flavor in egg salad is perfect.

Place eggs in a saucepan in a single layer.

Fill with cold water until it covers the egg by at least 1”.

Bring water to a boil, then boil for 1 minute.

After one minute, turn off the heat and let the eggs sit covered on the warm burner for 10 minutes.

Strain eggs and let cool (I usually transfer them to a bowl of ice-cold water so they cool faster).

Store the boiled eggs in the refrigerator until completely chilled (I prefer overnight).

Hard-Boil Eggs

Remove the shells from the hardboiled eggs.

Separate the egg whites from the egg yolks.

Put the yolks in a medium bowl.

Add the mayonnaise, mustard, sea salt, pepper, lemon juice, and paprika to the yolks and stir to combine, mashing the yolks as you stir.

Chop the egg whites.

Add the egg whites and minced onion to the yolk mixture and stir to combine.

Make the Egg Salad

Chill for at least 1 hour. Serve over lettuce, as egg salad sandwiches, wraps, etc.

Egg Salad

plain Greek yogurt

pickle juice

fresh dill (chopped (or ½ teaspoon dried dill))

garlic powder

Preheat oven to 350

Grease a loaf pan with oil

Crack eggs into the loaf pan

Set the loaf pan in a larger dish

Add water in the bigger dish up to the level of eggs
