A fantastic granola that is high in protein and healthy fats, and low in carbs.

Keto Granola

almonds (lightly toasted*)

pecans

sunflower seeds (lightly toasted*)

pumpkin seeds (lightly toasted*)

chia seeds

flax seeds

sesame seeds

Stevia (powdered)

cinnamon

pink Himalayan salt

Preheat oven to 250°F

Line a baking tray with parchment paper or use a silicone liner.

Lightly toast almonds, pecans, sunflower seeds, and pumpkin seeds in a large skillet over medium heat 4-6 minutes. Then transfer to a large bowl and set aside

Lightly toast sesame seeds over medium/low heat for 4 to 6 minutes, until just lightly golden.

Add sesame seeds, stevia, and cinnamon to a food processor and pulse a couple times until powdered and mixed thoroughly.

Add sesame sugar to bowl with nut mix and stir to combine. Set aside

In a separate bowl, beat egg whites with an electric mixer until soft peaks form. Fold gently into granola mix until fully combined.

Spread mixture onto prepared baking tray in a single layer and sprinkle with pink Himalayan salt.

Bake for 45-50 minutes, stir every 15 minutes or so.

Allow to cool completely

Break up in chunks and store in an airtight container for up to a week, in the fridge for 2, or in the freezer for up to 2 months.

These homemade granola bars are so much better than what you can buy at the store, especially since you can substitute for your favorite dried fruit or nuts. While these are very simple to make, there is a 2-hour wait for the bars to firm up enough to cut. Feel free to add your favorite dried fruit, nuts or chocolate to these &#8211; it’s completely up to you. Since we use a 1/3 cup of honey, we like to splurge on higher quality honey.

(80 grams) whole almonds, coarsely chopped

(113 grams) honey

(56 grams) unsalted butter,

(50 grams) packed light brown sugar

vanilla extract

salt

(60 grams) dried cranberries, coarsely chopped

Delicious vegan no-bake recipe for chewy homemade granola bars.

Homemade Chewy Granola Bars

oats (rolled

tbsp ground flax

peanut butter (or nut butter of choice)

maple syrup

mini chocolate chips (dark, plant-based)

strawberries (chopped)

salt (to taste)

To a bowl, add the oats and flaxmeal, and stir until combined. Next, add the peanut butter and maple syrup. Stir until a thick &quot;batter&quot; is formed. 

Gently stir in the chocolate chips and freeze dried strawberries. 

Line a baking sheet with parchment paper, and transfer the batter to it. Using the bottom of a mug or another pan, pat the batter down until completely firm and evenly dispersed in the pan.

Refrigerate for one hour to set. Once set, remove from the pan with the parchment paper, and slice into 24 pieces. Store the bars in a sealed container in the fridge for up to 5 days or longer.
