Are you a big fan of simple, one pan meals? If so, you’ll love this Cheesy Ranch Chicken Hash Brown Casserole. It takes your favorite side dish and turns it into an easy chicken dinner!

Cheesy Ranch Chicken Hash Brown Casserole

(10 3/4 chicken soup

sour cream

(8 oz) block cream cheese, room temperature

milk

thyme

tsp black pepper

(1 oz) pkg Ranch seasoning

(15 oz) can whole kernel corn, drained

cheddar, divided

(cooked) chicken

(28-32 ounces) pkg diced potatoes (like hash browns), thawed

In a large bowl combine soup, sour cream, milk, cream cheese, thyme, pepper and Ranch seasoning. Stir until smooth. Mix in corn and 1 cup grated cheese.

Spread entire mixture into an ungreased 9&#215;13 pan.

Sprinkle remaining cup of cheese on top and finally the crushed croutons or crackers.

Bake for 30 minutes until mixture is hot and bubbly.

Hashbrown Casserole Recipe

cheddar cheese (grated)

cream of chicken soup (or 1 (10-ounce) can, storebought)

butter (melted)

onions

Stone House Seasoning

Ritz crackers

butter

Prep. Preheat the oven to 400º F. Lightly butter a 9x13 baking dish or spray with nonstick cooking spray.

Mix. Stir together the thawed diced or shredded potatoes, half of the cheddar cheese, cream of chicken soup, sour cream, melted butter, onion, and Stone House Seasoning in a large mixing bowl. Spread into the prepared baking dish.

Bake. Bake until the potatoes are fork tender, about 30 minutes and then top the hashbrown casserole with the remaining cheddar cheese. Return the hashbrown casserole to the oven until the cheese has melted.

Serve warm.

Stir together the the Corn Flakes, Ritz Cracker, or Panko with the melted butter until well coated. Spread on top of the casserole and bake as directed.

For the Optional Topping:

It was great, much better (moist) than Cracker Barrell's.  Will be making again, just needed to add baking time.  I went with the ritz cracker and butter topping and it was perfect!

Luv this. My family likes chopped hash browns instead of shredded hash browns in this dish

I have frozen them a few times and I did NOT like the outcome. The taste was okay, but the consistency was off. I think it was the sour cream. 
I am a retired FACS (Home Ec) and have made huge batches of this recipe for school events. Easy to make ahead of time.
