This recipe is one of the easiest keto desserts, with only 4 ingredients. The almond flour dough is easy to mix and form by hand, no special equipment needed. Softened butter binds everything together without the use of eggs. The end result is a delicious cookie with a shortbread-like texture, great for a variety of occasions.

Butter Cookies

almond flour ((Note 1))

salted butter, softened to room temperature

vanilla extract

Prepare: Preheat oven to 350 F. Prepare baking sheet lined with parchment paper or nonstick baking mat.

Make Dough: Combine all ingredients using hands or sturdy spoon in medium mixing bowl until dough forms. The mixture will initially be crumbly, but will eventually become cohesive (Note 3). For flavor add-ins, see Note 4.

Form Cookies: Use dough to make ten 1-inch balls, placing them on lined baking sheet about 2 inches apart from each other. Flatten each ball using fork, then rotate 90 degrees and flatten again, forming criss-cross pattern (Note 5).

Bake &amp; Serve: Bake at 350 F until cookies are golden around edges, about 10 minutes (Note 6). They will be very soft coming out of oven; cool completely before removing from baking sheet. Then serve (Note 7) or store leftovers (Note 8).

With a fudge-like texture, and a dark chocolate flavor, these homemade keto/low carb brownies live up to the title. They truly are the best we&#39;ve ever tasted! Hard to believe they&#39;re only 6 net carbs per brownie.

Best Keto Fudgy Brownies

tbsp unsalted butter (1 stick)

oz 85% cocoa dark chocolate (Lindt Excellence)

granulated sugar replacement (truvia Sweet Complete; Swerve)

eggs (room temperature)

cocoa (Dutch process)

tsp pure vanilla extract

salt

almond flour (blanched)

Preheat the oven to 350°F. Lightly butter (or use cooking spray) bottom and sides of an 8-inch square pan. Next, line with parchment paper, leaving a 2&quot; overhang on sides for lifting cooked brownies from pan. Using a double boiler or a heatproof bowl placed on top of a pot of simmering water, melt butter and chocolate pieces and stir until smooth. Remove from heat.

Stream in sugar substitute while whisking until combined. Add in eggs, one at a time, whisking well after each addition until completely incorporated. The texture should now appear smooth. Whisk in cocoa, vanilla and salt. Gently fold in almond flour until combined. At this point you may add in ½ cup chopped pecans for 0.22 additional net carbs per brownie.

Spread batter evenly into prepared pan. Bake 35 to 40 minutes on middle rack. 35 minutes was a perfect bake in our oven, but since individual ovens vary, you may want to test a few minutes earlier for doneness by inserting a toothpick into the center of the brownies. If the toothpick is wet, return to oven. A perfect bake is when the toothpick retains a few moist crumbs. Do not over-bake as the brownies will continue to cook while they are cooling.

Cool completely in pan on wire rack. Then place pan in refrigerator until chilled throughout (about 1 hour). Remove parchment before slicing into 9 squares. This cooling is necessary to produce clean edges when slicing keto baked goods.

Keto Lemon Poppyseed Mug Cake In 1 Minute

Large Egg

½ Tbsps (22 grams) Unsweetened Vanilla Almond Milk

Lemon

½ Tbsp. (7 grams) Unsalted Butter

¼ Tsp. Pure Vanilla Extract

Just less than ½ a Cup (50 grams) Blanched Almond Flour

Heaping tbsps (20 grams) Confectioners Swerve

½ Tsp. Baking Powder

Salt

¼ Tsp. Poppy Seeds

Optional Drizzle:

Tsps. (7 grams) Confectioners Swerve

½ Tsp. Unsweetened Vanilla Almond Milk

In a large measuring cup add all of the liquid ingredients, and whisk them until combined.

Now add the dry ingredients, and mix until they’re well incorporated with the wet ingredients.

Next, coat an 8oz (240mL) ramekin with baking spray, and add the batter to the ramekin.

Cook for 30 seconds, check on it, cook for another 30 seconds, check on it again, and cook it for 15 more seconds if needed.

While the mug cake is cooling, make the optional glaze.

In a small dish add all of the ingredients, and mix until combined.

Add the glaze to the mug cake once the cake has cooled, and serve.

I used oat flour and a little isopure unflavored protein powder and I doubled everything and did it in a bowl. I won’t be able to finish it but it was delish.
