Crock-Pot Garlicky Mashed Potatoes Will Save Thanksgiving

These vegan almond milk mashed potatoes require just 15 minutes of hands on time and are completely fool proof! All you&#039;ll need is 7 ingredients and you&#039;ll have the creamiest potatoes. Make them in the Instant Pot or on the stovetop!

Almond Milk Mashed Potatoes

gold potatoes

vegan butter (room temperature)

cashew sour cream (room temperature)

unsweetened plant-based milk (room temperature)

tsp sea salt

garlic powder

Remove the cashew sour cream, almond milk and vegan butter from refrigerator so it can come to room temperature while potatoes cook.

Rinse the gold potatoes well and peel, if desired.

Place the trivet in the bottom of the Instant Pot and add in 1 cup of water (for steaming).

Place all of the gold potatoes on top of the trivet in the Instant Pot.

Twist on the lid and set the valve on the lid to SEAL. Cook on manual high pressure for 12 minutes.

After the instant pot has naturally released pressure for 10 minutes (the screen should read L10), manually release the rest of the pressure and remove lid. 

Carefully drain the remaining water out of the bottom of the Instant Pot and remove the trivet.

Add in the vegan butter, almond milk, cashew sour cream, salt and garlic powder and mash with a large fork, potato masher or potato ricer until just mashed. Do not over mash the potatoes or they will become gluey and sticky.

Add additional salt to taste. Serve immediately.

Storage: Allow to cool completely, then store in an airtight container in the refriferator for up to 3-5 days.

Chop the potatoes into quarters.

Add potatoes to a large pot and cover completely with cold water.

Cover the pot with the lid and bring the potatoes to a boil over medium heat. Cook the potatoes until they are easily pierced with a fork without resistance, about 12-15 minutes.

Once soft, drain the excess water out of the pot and mash the potatoes directly in the pot with the vegan butter, almond milk, cashew sour cream, salt and garlic powder with a large fork, potato masher or potato ricer until just mashed. Do not over mash the potatoes or they will become gluey and sticky.

Easy Mashed Potatoes Recipe

heavy cream (or whole milk)

Combine

Combine the cream, water, potatoes, 1 tablespoon of kosher salt, and 1 teaspoon of black pepper in a large saucepan set over medium heat.

Boil

Bring just to a boil, reduce heat to low, and simmer for 15-25 minutes, or until the potatoes are fork-tender.

Drain

Drain the potatoes in a colander set over a medium-sized heatproof bowl (reserve the potato milk/water).

Heat

Return the potatoes to the pan and set the heat to medium-low. Stir gently until the excess moisture evaporates from the potatoes, about 1 minute.

Mash

Add the butter, 1½ teaspoons kosher salt, and ½ teaspoon black pepper. Mash the potatoes until smooth and creamy (or fluff adding some of the reserved potato milk-water, when/if necessary. (Note: If not serving the potatoes immediately, save about 1 cup of the milk-water to add before serving. Be sure to add the milk-water in ¼-cup increments to ensure the potatoes stay fluffy. No one likes watery mashed potatoes.)

Serve

Transfer potatoes to a serving bowl, dot with 3-4 tabs of butter (or drizzle with melted butteand garnish with parsley or cheese, if desired.

Cook Potatoes: Cut potatoes in half and place in a large pot with about 4 inches of water (they don&#39;t need to be completely covered). Cover pot with a lid, and cook, covered, until fork tender, about 15-20 minutes. You don&#39;t want them &quot;mushy&quot; or falling apart.

Drain and steam: Drain water completely from pot and leave potatoes in the pot, covered with a lid, for about 10 minutes. This gives them time to dry out, which helps them to be extra fluffy.

Season: Remove lid and add butter, chicken bouillon, evaporated milk, sour cream and salt and pepper.

Mash with a potato masher. Taste and add more salt and pepper, if needed, or more milk, until they are creamy, fluffy and smooth. I use an electric mixer to beat them on medium speed for a few seconds, until light and fluffy. But, be careful not to over-mix them or they will get starchy and gummy.
