Ham and Cheese Roll Ups are an easy appetizer or lunch box snack. Easily customized and made in just a few minutes.

Ham and Cheese Roll Ups

flour tortillas

oz cream cheese (softened)

dry ranch seasoning

cheddar cheese

deli style ham

Add the cream cheese and ranch seasoning to a bowl, and stir until combined.

Add the cheddar cheese and stir together.

Lay out the tortillas, and add ¼ of the mixture to each, then gently spread it to the edges.

Cut the ham into small pisces, and layer ¼ of it on each tortilla.

Starting at one end, roll each tortilla until you get the the other end.

Refrigerate for 1 hour.

Cut the ends off of each tortilla roll, then cut into 1 inch pieces. Arrange flat on a plate or tray for serving.

Cranberry Brie Bites

frozen mini phyllo shells ((15 ounce package))

brie cheese

cranberries ((fresh

water

sugar

rosemary ((optional))

Preheat the oven to 400 degrees.

On an ungreased cookie sheet evenly place the fillo shells right side up, about one inch apart. Set aside.

In a small saucepan, combine the cranberries, water and sugar, then stir. Top with a  one inch piece of rosemary.

Bring the sauce to a boil over medium heat, then reduce to low. Stirring until the cranberries pop, then immediately remove from the heat and discard the rosemary. Set aside.

Slice the brie into 15 pieces and distribute into the fillo shells.

Bake in preheated oven for about 5 minutes or until the brie is smooth and melted.

Remove from oven and place 3-5 cranberries in each fillo shell.

Garnish with small sprig of rosemary, if desired and serve immediately.
