Bring a large pot of lightly salted water to a boil. Cook pasta according to package instructions. When draining, reserve about 1/2 cup of pasta water.

While pasta is cooking, add olive oil to a large skillet over medium heat. When hot, add shallot or onion and cook until it begins to soften, about 5 minutes. Add garlic and cook until fragrant, about one minute.

Add tomato paste and stir. Let cook for 3-4 minutes until it&#39;s starting to brown/caramelize a bit.

Stir vodka into sauce and let cook for about 1 minute.

Add heavy cream, red pepper flakes, salt, and pepper and stir to combine. Remove from heat.

Add cooked pasta, reserved pasta water, and butter to skillet and toss to coat pasta in sauce. Stir in parmesan cheese.

Serve pasta topped with additional parmesan and chopped basil.

Preheat oven to 350°F.

Cook pasta according to package directions.

Before you start cooking, peel and finely dice the carrot. Dice the celery stalk, finely chop the onion and mince the garlic cloves.

B﻿ring a large pot with generously salted water to a boil.

Heat oil and butter over medium in a large heavy bottomed pot. Add onion, garlic, carrot and celery stalk. Cook for 5 minutes until soft and fragrant. Reduce heat if needed. Add pancetta and cook for 3 minutes.

Add ground meat mixture, break up into pieces with a wooden spoon and cook until it starts to brown. Season with salt, pepper and sugar. Add &#x27;Nduja and continue to cook while stirring until the &#x27;Nduja is completely dissolved.

Pour in red wine and simmer for 3 minutes. Next stir in tomato paste, add puréed tomatoes and bay leaves. Stir and simmer for at least 15 minutes.

In the meantime, add spaghetti to the pot with boiling water and cook according to package instructions. Scoop up ½ cup of the cooking water right before draining the pasta.

When ready, add milk and Parmesan to the sauce. Stir until combined. Toss with spaghetti and add a splash of cooking water, if needed. Enjoy!

tbsp plain flour

chicken stock

double cream

flat-leaf parsley roughly chopped

Begin by cooking the pasta following pack instructions. Meanwhile, melt the butter in your largest frying pan. Once foaming, add the garlic and 25 twists of a black pepper mill. Cook for 4-5 mins, until the garlic is light golden and fragrant.

Stir in the flour to form a paste. Stir for 1-2 mins, then slowly whisk in the chicken stock until you have a smooth sauce. Pour in the double cream and sprinkle in most of the parmesan. Stir until everything is melted and combined, then season to taste.

Transfer the pasta straight into the sauce, alongside a good splash of the cooking water. Mix thoroughly, adding a little more pasta water if necessary, until you have a thick and glossy sauce.

Divide between four bowls and serve topped with the chopped parsley and remaining parmesan.
