Angel Hair Pasta Primavera

Do you prefer to buy your veggies pre-chopped?

Preheat oven to 400°. In a large pot of salted boiling water, cook pasta until al dente. Drain, reserving 1 cup pasta water, and return to pot.

On a large baking sheet, toss broccoli, tomatoes, mushrooms, and artichoke hearts with oil and season with garlic powder, salt, and pepper. Roast until tender and caramelized, stirring once, 15 to 20 minutes.

Add vegetables to pot along with Parmesan and 1/2 pasta water and, over low heat, stir vigorously to create a sauce.  (Add more pasta water until you reach your desired consistency.)

Garnish with&nbsp;Parmesan and basil before serving.

Must adjust vegetables to the amount of pasta you need.  I used onions, mushrooms, leeks, and thinnly sliced squash then added lemon zest which really brightened the dish.

This was disappointing.  I added an onion and thank goodness I did - it would be even more bland without it.  The tomatoes essentially disintegrated once stirred in, too much pasta compared to veggies.  It was easy, but lacks flavor.

This is amazing! I took out the broccoli and added asparagus and some boneless skinless chicken breast. Super tasty!

This recipe did not work for me. I couldn’t make the sauce as described. The cheese clumped  around the vegetables. It was inedible. I tried twice to make the sauce but the cheese just didn’t create a sauce with just the pasta water.

Didn't work for me. There was way too much pasta in comparison to veggies, so no flavor, just tasted like plain pasta with an occasional veggie. And it didn't really make a sauce. Next time if I try again I will just add veggies on top and not mix them together in the pot.

Love, love, love this recipe! Next time, I will add more veggies and maybe shredded Parmesan instead of grated.

I messed up on the sauce, my parm clumped up and it didn’t turn into a sauce. :( Veggies are yum!

Turned out pretty well- and very easy. For those with clumpy sauce, I found it easiest to add the water and pasta before stirring in the cheese and veggies gradually. I ended up eventually adding nearly all of the retained pasta water, but started with half and worked up from there

added a little heavy whipping cream to the sauce and it was delicious!

Healthy Pasta Primavera

lb pasta

zucchini, chopped

yellow squash, chopped

grape tomatoes, halved

orange bell pepper, slices

crown broccoli, chopped

garlic cloves,

red onion, chopped

olive oil

Italian seasoning

lemon, juiced

tbsp butter, salted

pasta water

cheese,

salt

pepper

Start by preparing all your vegetables.  Chop, slice, or mince according to the ingredient list.

Then cook your pasta according to the package instructions.  Make sure to save the pasta water!

Next add 2 tbsp of the olive oil, the minced garlic, and the chopped onion to a large pan on the stove over medium heat.  Sauté for about 5 minutes until soft and fragrant.

Add all of the veggies into the pan &#8211; zucchini, squash, broccoli, tomatoes, and bell pepper.  Add the Italian  seasoning, remaining 1 tbsp of olive oil, and lots of salt &amp; pepper to taste.  Sauté for about 10 minutes until all the vegetables are just cooked.  You don&#8217;t want them to be too mushy, they should still have a bit of crunch!

Next turn the heat to low.  Add the cooked pasta to the vegetables with the pasta water, butter, lemon juice, parmesan cheese, and more salt &amp; pepper.  Combine everything evenly.

Top with extra parmesan cheese and enjoy!

Pasta Primavera

penne pasta ((or other pasta))

garlic (, minced)

butter

chicken broth

heavy whipping cream ((or half and half))

parmesan cheese (,or more, to taste)

salt and black pepper (,to taste)

basil leaves (, chopped (for garnish, if desired))

Bring a large pot of water to a boil. Cook pasta according to package instructions. Set aside.

Add olive oil to a large skillet over medium high heat. Add garlic and stir for 30 seconds. Add veggies, season them with a little salt and pepper, and sauté for about 2-4 minutes, just until slightly tender. You don&#039;t want to cook them too long. Remove to a plate.

Add butter to pan. Add chicken broth and cream and bring to a simmer. Stir in cheese. Season with salt and pepper, to taste. If the sauce seems too thick, add more chicken broth, cream or water, to your liking. 

Add cooked pasta and veggies to the pan and toss to combine. Top with fresh basil, if desired.
